Over high heat, the pancakes will quickly begin to burn. By the time you put out the entire portion, the first ones will already burn on the bottom. Leave some space between the dough pieces so that the butter will brown them on all sides evenly. Bake until large holes appear. Turn it over.

Fry the other side for 1-1.5 minutes, just to brown the pancakes inside. Add oil to the pan and add the next portion.

Ingredients:

  • Warm kefir 1% - 2 cups;
  • flour – 2.5 cups;
  • sweet and sour apples – 2 pcs;
  • fine salt – 1 pinch;
  • sugar – 3 tbsp. l;
  • soda – 1 tsp + 1.5 tbsp. l. vinegar or 1 tsp. lemon juice;
  • refined vegetable oil - as much as needed for frying;
  • ground cinnamon – 1/3 tsp (optional).

Cooking step by step

Add cinnamon (if adding), salt and sugar to the sifted flour.

Pour kefir into a bowl and heat for 1-2 minutes over low heat. Stir constantly, otherwise it will curdle.

Pour warm kefir into the flour mixture in small portions, whisking the dough. Or use a mixer. Knead thoroughly so that there are no small lumps or dry flour. The dough will be thick, but after adding apples and soda it will become less viscous.

Grate the apples on a coarse grater or chop them into thin slices. Pour into the dough, stir.

We extinguish the soda with vinegar or squeeze the juice from a slice of lemon onto it. As soon as it stops foaming, pour it into the dough. Immediately begin stirring so that the soda disperses throughout the entire volume. In a few minutes the dough will become fluffy and bubbly and you can start baking pancakes.

Pour oil into a hot frying pan. Scoop up the dough with a tablespoon and place one on each pancake.

Fry for 2-3 minutes on each side in a sufficient amount of oil, otherwise they will burn and not bake through. The fire is no stronger than average.

Place the prepared apple pancakes on a plate and serve with sour cream, jam, and honey.

Pancakes with kefir and yeast without eggs

The taste of yeast pancakes made with kefir is more reminiscent of buns. They are just as soft and airy. It will take longer to prepare than regular recipes without yeast. The dough needs to sit, grow, become voluminous and fluffy.

Ingredients:

  • Low-fat or low-fat kefir – 0.5 liters;
  • dry yeast – 1.5 tsp;
  • sugar – 2-3 tbsp. l;
  • salt - on the tip of a teaspoon;
  • flour – 400 g;
  • refined vegetable oil – 6-7 tbsp. l.

Cooking method

Pour dry yeast with kefir, warming it up to room temperature. Add a couple of pinches of sugar, add two tablespoons of flour, stir. Cover the dough and let it sit for 10-15 minutes, activating the yeast.

Sift the flour twice. Pour in parts into the kefir-yeast mixture. Add sugar and salt along with flour. Knead the dough, very thick and viscous.

Cover, place the bowl with the dough in a warm place, and leave to swell for an hour and a half. The volume after proofing should increase at least three times, the mass will become as thick as sour cream.

Heat the oil in a frying pan. Don't stir the dough! We take a spoonful near the walls, a full spoon for one pancake. Tilt it over the frying pan so that the dough slides out into a rounded lump.

Fry over low heat. For the first portion, lay out two or three pancakes and use them as a guide: if they are baked and risen well, bake the next portion. If they are moderately browned, but damp, increase the heat a little. If they burn, turn down the flame.

Serve the pancakes hot. You don’t even have to wait until everything is baked, but immediately put it on the table along with honey, jam, and sour cream.

Kefir pancakes without eggs and soda

Kefir pancakes without adding soda and eggs are usually prepared for children or when pancakes are liked thin, like small pancakes. They won't turn out very fluffy, but they will still be delicious. You can grate an apple into the dough or add steamed raisins and pieces of fruit.

Ingredients:

  • Warm kefir – 1 glass;
  • flour - half a glass (130-150 g);
  • sugar – 1-2 tbsp. l;
  • fine salt - a pinch;
  • raisins or other additives - at your discretion;
  • refined vegetable oil – 3-4 tbsp. l.

Preparation

We prepare the dough as for regular pancakes, mixing the ingredients in the same sequence. Just don’t add eggs and soda. First, sift the flour and mix it with sugar and salt. If you don’t have anything against spices, add a pinch of cinnamon, cardamom or ginger (it’s better to cook without additives for children).

Let's heat the kefir. In order not to overheat, we try it with our finger - you feel a pleasant warmth - it’s time to remove it, otherwise you may not notice it and the kefir will begin to curdle.

Pour warm kefir into the flour mixture. The gluten of the flour will begin to swell, the dough will quickly thicken, but it does not need to be made as thick as for fluffy pancakes. The consistency is like thin sour cream.

After combining all the ingredients, leave the dough to rest for 15 minutes.

Place a spoon into well-heated oil, brown the bottom, and turn over. The pancakes bake quickly, but don’t expect them to rise, pry them with a spatula and check how brown they are. Turn over the golden-brown ones, and fry the pale ones.

Remove the finished pancakes with a spatula onto a plate lined with a paper towel. After a minute or two, when the oil is absorbed, transfer to a plate and serve the pancakes with sour cream or jam.
