It's no secret that all types of fruiting bodies are 90% water, so their volume is significantly reduced during cooking. Thus, if they are put in a dish raw, then in finished form it will be almost half as much. Therefore, it is advisable to pre-fry the mushrooms in a pan until the liquid evaporates.

Clean the mushrooms from dirt, cut large specimens into pieces. Rinse all the mushrooms, put in boiling salted water and boil (15 minutes).


Meanwhile, peel the potatoes and cut them into cubes or slices. Put in water and leave for 20 to remove excess starch.


Transfer the boiled mushrooms to a colander to glass the liquid, and put in a pan with vegetable oil. Fry over medium heat until tender and transfer to a deep plate.


Add chopped onion, crushed garlic, spices to taste to mushrooms and mix everything together.

Take a baking dish and grease it with a thick layer of sour cream. Put ½ potatoes, and then ½ mushrooms with onions. Lubricate with sour cream and repeat the procedure with the remaining potatoes and mushrooms.

Sprinkle with finely chopped herbs and bake.

  • fresh mushrooms - 150 gr.
  • 2-3 medium potatoes
  • onion - 1 head
  • sour cream - 3 tbsp
  • prepared spice mix for pork

Cooking process

Sort, wash and clean the mushrooms - remove the films, cut off the legs (the lower part for young ones, the entire leg for old ones). Cut into large strips, pour water and put on fire. After boiling, remove the foam, salt and continue to cook over low heat for 40 - 50 minutes. Ready mushrooms to throw in a colander.

Wash the pork and cut in the usual way. Peel the onion and cut into half rings. Fry the meat for 10 minutes over high heat, then add the onion and eat for another 10 minutes.

Add boiled mushrooms, sour cream, a mixture of spices for pork and salt to taste in a pan with meat. Mix everything and simmer on low heat for 5-7 minutes.

Preheat the oven to a temperature of 220 C. Peel the potatoes and cut into cubes. Boil the pre-soaked beans in salted water and drain in a colander. Wash greens and separate.

Arrange the chopped potatoes in a large ceramic dish or several pots. Place beans on top. Add the next layer of meat with mushrooms and sour cream. Cover with a lid, put in the oven. Bake for 30 minutes at 200 C.

Serve to the table in pots, or put on plates. Decorate with greenery.

Before frying mushrooms with potatoes, they need to be boiled for 10 minutes. After this procedure, the water is drained, fresh water is poured into the container, the mushrooms are brought to a boil, salted and boiled for another 15 minutes.

Throwing the boiled mushrooms into a colander, allow excess liquid to drain.

While the mushrooms are being cooked, it is necessary to peel, wash and cut the potatoes into strips.

While the potatoes are soaking, chop the onion.

Onions are spread in vegetable oil well heated in a frying pan and fried until they acquire a ruddy color.

Mushrooms are added to the onion fried to the desired degree. The ingredients are fried together for 10 minutes.

Dry potatoes. To do this, use a paper towel.

In a larger frying pan, heat the oil and put dry potatoes in it. Fry it over high heat so that it browns.

Onions and mushrooms are added to the fried potatoes. The ingredients are brought to full readiness over medium heat, stirring occasionally. At the end of cooking, the dish is salted to taste.

The finished dish is sprinkled with chopped green onions, and piping hot fried potatoes with mushrooms are served on the table.
