At the same time, the statement of the famous French physician of the 19th century, Professor Vernier, is very revealing: "If wine were harmful, then this would not have needed to be argued for many centuries." And the great thinker of antiquity, Plato, who called wine “the milk of old people,” taught in his “Laws”: “After all, Dionysus gave people wine as a cure for gloomy old age, and we are getting younger again and forget our bad mood, our cruel temper is softened, like iron, put into the fire, and therefore becomes more flexible.

In ancient Greece, wine healing reached a special flowering. It was the Greeks who first introduced the term "medical wines". But enotherapy developed in other countries as well. The legendary Persian philosopher and physician Ibn Sina (Avicenna) in his "Canon of Medical Science" developed the idea that became a popular aphorism for Russians: "It is better to overdrink than overeat." As for wine, white and light, which does not cause a headache, Ibn Sina believed, is more suitable for people with a hot nature. Unperturbed and cold-blooded, he advised the use of old strong wines; sweet and thick wine recommended to those who want to get better and get stronger. For centuries, wine has been used for medicinal purposes and Tibetan medicine. According to many residents of this mountainous country, wine enhances vital warmth, quenches thirst, improves sleep and makes a person resourceful.

Nowadays, enotherapy is also relevant and is becoming more and more widespread in the world. Its meaning is to restore health and rejuvenate the body with the help of wine and products related to its production.

From time immemorial, wine has been considered primarily as a drink with high nutritional properties and taste, rich in substances that are beneficial to health and good spirits. "Drink wine! In it is a source of immortality and light, in it is the flowering of spring and past summers ..." - this is how Omar Khayyam glorified this drink. Therefore, it is not at all surprising that almost initially wine was used as a medicine. Subsequently, it turned out: the intuitive recognition by our ancestors of the various healing properties of this drink is quite justified. Wine contains potassium, magnesium, calcium, phosphorus, iron, vitamins, about 20 amino acids, etc. All of them are involved in metabolism, give antiseptic, bactericidal, antitoxic and bioenergetic effects - hence the comprehensive beneficial effect on the body.

The purpose of this work is to systematize and present in an accessible form the information currently available on the healing properties of wines, give specific recommendations for use and pay special attention to the practice of enotherapy in the Crimea on the Black Sea coast of the Caucasus and abroad.

Alcoholic drinks have long been considered healing, red wine is the undisputed leader in this regard. Hundreds of years ago, sorcerers and healers advised their patients to use it for a variety of diseases. And in our time, such well-known scientists as A. I. Oparin, N. M. Sisakyan, N. N. Prostoserdov, M. A. Gerasimov, S. R. Tatevosov and others have discovered many previously unknown healing properties of this noble drink. They found that the composition of red wine includes the so-called polyphenols - substances with pronounced biological activity. Once in the human body, they block the receptors for endothelin, a protein that constricts blood vessels and accelerates the development of hypertension and atherosclerosis. In addition, the tannin contained in red wine is effective tool the fight against herpes viruses and even polio - it destroys special proteins with which viruses enter cells.

Red wine contains more than 600 chemical elements and compounds, many of them, such as glucose, fructose, vitamins P and C, fluorine, iodine, titanium, cobalt, are vital for our body. Thus, a couple of glasses of red wine a day is an excellent prevention of a host of diseases - from heart attack to cancer.

In previous centuries, healers in the treatment of their patients were often limited only to wine, now wine is considered as an additional, auxiliary medicine. However, first of all, wine acts as a means of prevention, disease prevention. Until very recently, the use of wine for medicinal purposes, the choice of drink for each specific disease and specific patient was empirical and based on the experience of many years of medical observations and the intuition of the attending physician. Meanwhile, scientific medicine has made a giant leap, giving rise to hundreds of new potent drugs, and creating new, amazingly effective medical technologies. Experience and intuition have lost their former meaning. The ability to decipher the results came first. laboratory tests and complex instrumental studies, on the basis of which a diagnosis is made and one or another ready-made treatment regimen is prescribed.

Russia has accumulated extensive experience in research in the field of enotherapy. To date, this issue is being studied in detail by the National Association of Restorative Medicine Specialists (ASVOMED) and, in particular, its Center for Natural Technologies "Healing Elixirs" under the guidance of Doctor of Biological Sciences Arseniy Trukhanov.

Great practical experience in the use of natural grape wines was accumulated in the health resorts of the Crimea, Anapa, Gelendzhik, and the greatest contribution to the development of enotherapy was made by the employees of the Marfinsky Central Military Clinical Sanatorium, where for more than 20 years a program for enotherapy has been developed and effectively applied in practice. The result of this work was the publication in 2007 in the series "Library of Restorative Medicine" of Professor L.D. Shalygin's monograph "Wine in Restorative Medicine and Medical Rehabilitation". Combining the efforts of the employees of the sanatorium and the leading specialists of ASVOMED in the field of enotherapy allowed us to open up fundamentally new opportunities for the formation of enotherapy courses within the framework of health programs. The basis of the new approach was the development of principles for quantifying the content in natural grape wines of biologically active ingredients, which play a special role in the prevention of disorders of redox processes in the human body. On the basis of the biochemical studies of wine samples, a collection of medical wines is formed, which can be used in the practice of health institutions for the prevention and treatment of a number of diseases.

From the standpoint of the modern approach to enotherapy, anti-aging programs that use data on the antioxidant activity of wine are of particular interest. Pathological changes in the human body, leading to premature aging and the development of more than 100 diseases (as well as the most dangerous and socially significant, such as cardiovascular, oncological diseases, diabetes mellitus, etc.), are associated with the accumulation of active forms of oxygen - free radicals. Their persistent increase in the content in cells creates conditions for oxidative stress, in which free radicals oxidize the walls of blood vessels, protein molecules, DNA, and lipids. As a result, the properties of cell membranes change, bonds in the DNA molecule are broken, the genetic apparatus of cells that regulates their growth is damaged, which leads to oncological diseases. After oxidation, low-density lipoproteins are deposited in the walls of blood vessels, which leads to atherosclerosis and cardiovascular diseases.

The collection of natural dry grape wines for enotherapy is formed taking into account the content of biologically active substances and antioxidant activity in them, which is most effectively determined by the amperometric method and is expressed in mg/100 ml of wine in terms of quercetin. For enotherapy, only those wines are selected that contain certain biologically active substances in 100 ml of wine in quantities that provide adequate levels of their daily intake in accordance with the requirements of the Methodological Recommendations developed by the specialists of the State Research Institute of Nutrition of the Russian Academy of Medical Sciences.

Oenotherapy in restorative medicine and medical rehabilitation is based on the use of certain varieties of natural grape wine for the prevention and treatment of a number of diseases, taking into account information about the biochemical composition of wine.

ASVOMED scientific research indicates that the chemical composition of wine is very complex and represents groups of many compounds. Naturally fermented wine contains water, alcohols, carbohydrates, organic and mineral acids, minerals, trace elements, nitrogenous substances, tannins, colorants, aromatics, esters, aldehydes and acetals, extractives, vitamins and enzymes, dietary fiber. . If we evaluate wine from the point of view of the content of nutrients in it, then it should be noted that their content is low in order to talk about the satisfaction of a person's daily need when drinking wine. In this case, their presence in wine is important in combination with biologically active substances that have a corrective effect on the functional state of the internal organs and systems of a healthy and sick person.

Natural dry grape wine used for enotherapy ("healing elixir") is characterized by a high content of biologically active substances (phenolic acids, flavonols, polyphenols, anthocyanins, stilbenes) and antioxidant activity. The content in the "healing elixir" of biologically active substances should provide the recommended values ​​of their daily intake for an adult in the composition of 125-250 ml of wine.

Determination of the content of biologically active substances in wine is carried out in specialized, certified biochemical laboratories. For biologically active substances contained in wine, normative documents adequate and upper acceptable levels their consumption: phenolic acids - 100mg-300mg; flavonols - 30-100 mg; polyphenols - 200-600 mg; anthocyanins - 50-150 mg; stilbenes - 10-40 mg.

Each liter of natural dry grape wine contains up to 80 g of alcohol. With one glass of wine (125 ml) we drink about 10 g of alcohol, respectively, with two glasses of wine (250 ml) we drink no more than 20 grams of alcohol. It is important to comply with non-toxic alcohol consumption standards (no more than 20 grams for an adult in terms of pure alcohol). In special wooden barrels of small capacity, wine of sweet grape varieties is aged for decades. When children appear in the family, the barrel is opened, red-hot knives and pieces of stainless steel are lowered into the wine. The wine heats up, the alcohol evaporates from it. The resulting drink is given to children. Such a drink retains its taste qualities about 3 days. Dry wines can also be used for these purposes.

A drink obtained by dealcoholization of wine can have a beneficial healing effect on many diseases: metabolism, gastrointestinal tract, anemia, colitis, asthenia. A drink obtained by dealcoholization of white wines can help in the treatment of hypertension, with sluggish liver, as a diuretic and laxative. Crimean resorts, unlike most foreign ones, initially developed precisely as medical and health resorts, and not just as places for recreation and entertainment. Regardless of the ambiguous and sometimes dubious attitude of the public and some medical professionals to enotherapy, treatment with natural grape wine and wine products today, not only in Europe, but throughout the world, has become a real and most important element of modern life of people, their civilized attitude to their own health, prevention of various diseases, slowing down the processes of accelerated aging and prolonging active longevity.

And numerous scientific studies of recent years provide a lot of evidence that all the virtues of wine, in which the ancients believed, turned out to be justified. These studies confirmed previous knowledge and made new discoveries, sometimes exceeding all expectations. Therefore, no matter how unpleasant the official medical authorities were, the information that wine, in moderation, is good for health, has become public.
