I recently bought a tailoring magazine "Burda", and there are recipes on the last pages. And among others, I liked this recipe for puff envelopes with meat, which are made from ready-made purchased sheet yeast puff pastry. I liked the recipe so much for its simplicity of preparation that I decided to cook them for Friday dinner with fubol with beer.

I bought more dough than I needed, a whole kilogram, and the minced meat turned out to be a bit too much - 600 grams, although 300 grams would be enough for half a kilo of dough. The rest of the minced meat subsequently went to pasta, and from the second half of the dough she made sweet buns stuffed with dried apricots. But I will return to puff envelopes with meat and tell you how I cooked.

1. First, let's deal with the filling. Defrost minced meat, peel one carrot, a couple of onions, a couple of cloves of garlic. Chop the vegetables, chop the parsley.

2. Pour a couple of tablespoons of vegetable oil into the pan, spread the minced meat, chopped onions, carrots, garlic and herbs.

3. Stew the minced meat, mixing with vegetables, for about 20 minutes. At the end of the preparation of the filling, salt and add spices to taste. Just do not oversalt the filling, it is better to salt with a pinch, tasting, in several stages.

4. Ready stuffing Let's cool while we're testing.

5. Defrost the puff pastry and unfold it into a layer on a table crushed with flour.

6. Sprinkling the surface of the dough with flour, roll it into a thin layer (about 0.5 cm, thinner is not necessary so as not to tear).

7. Cut the dough into squares with a side of about 10-12 cm.

8. On one side of the square diagonally lay out the minced meat filling.

9. Moisten the second half of the square along the edge with wet fingers, fold the envelope in half, sealing the edges, you can press it on top with a fork.

10. We cover the baking sheet parchment paper(There is no need to grease, I did not grease, the envelopes do not burn and are perfectly removed). We lay out our envelopes with meat on parchment.

11. Lubricate the surface of the envelopes with meat with a beaten egg.

12. We send a baking sheet with envelopes to an oven preheated to 180 ° C. Bake exactly 25 minutes. We get ready puff envelopes with meat from the oven, put on a dish and serve with beer (or tea with lemon). Very delicious treat! There is also an idea for the future to prepare a filling of boiled meat with fried onions(maybe even with chicken and mushrooms, and it will be similar to the fornetti that are sold all over the city).

How to cook envelopes with minced puff pastry

First, let's start preparing the meat filling. Peel the onion along with the garlic. Cut the onion into small cubes, chop the garlic cloves with a press. Add these ingredients to the mince.

Enter spices (salt and pepper) to your own taste. You can add your favorite dried herbs if you like.

Mix all the filling ingredients well.

Unleavened puff pastry will need to be defrosted first, and then rolled out and cut into squares. The width of the sides can be 8-10 cm. Puffs from such blanks can be very neat.

Place a small amount of meat filling in the middle of each square.

Now proceed to the formation of puffs. The shape of the products can be different, according to your desire. Envelopes look very original.

To simplify the modeling process, it is enough to make classic triangles. The main thing is to properly fix the edges of the dough so that the juices from the filling do not flow out during the baking process.

Put the formed products on a pre-prepared baking sheet (sprinkled with flour or covered with parchment). Brush the tops of the puffs with a beaten egg or a little vegetable oil. Triangles cut on top, thanks to this, steam will come out. Remember, the incisions should not be too large.

  • If desired, before baking, you can decorate the puffs with sesame seeds or seeds.
  • The meat filling will turn out much juicier if you add to it pre-fried on vegetable oil onion.
  • If for cooking minced meat is used chicken breast, add a little fat, the filling will become tastier and juicier.
  • If the products start to burn during baking, cover them with foil and lower the baking temperature.

  • Break the egg into a bowl and season with salt. Add 1 tsp. sour cream. Whip the mixture with a fork. On hot pan pour out egg mixture. Fry the pancake on both sides. Turn it over very carefully so as not to tear it.
  • While the first pancake is frying, prepare the egg mixture from the second egg. So in turn cook 7 pancakes. Finely chop the onion and set aside minced pork. Salt minced meat, add pepper to taste and mix.
  • Put a piece of minced meat in the form of a rectangular sausage on each pancake. Wrap the pancakes in an envelope. Put 7 egg envelopes in a baking dish. Heat the broth, add sour cream and salt.
  • Stir the sauce and fill the egg envelopes with it a little more than half. Heat the oven to 200 degrees and put the baking dish for 25 minutes, previously covered with foil.
