You can take plain or instant gelatin. The difference between them is that simple gelatin, after pouring water or juice, must be left for 30-40 minutes to swell, which will double the process of preparing the jelly.

Take instant gelatin.

The proportion should be as follows: for 1 spoon of gelatin you need to add 2 glasses of liquid with a capacity of 200 milliliters.

Pour 2 tablespoons of instant gelatin into the pan. Pour 2 cups of boiling water.

Place the pan on the fire and, stirring with a spoon, ensure that the gelatin is completely dissolved, making sure that the liquid does not boil.

Pour 2 cups of diluted cherry juice into the pan. Thus, 2 tablespoons of gelatin equals 4 cups of liquid. Whole cherry juice It is advisable to dilute it with water, since it is very dark and the jelly will not be very beautiful and opaque. Instead of juice, you can use berry compote.

Add 2 tablespoons of sugar. I stir. Sugar is added if desired and to taste.

1. Sort the berries and rinse well. To make the jelly, I used cherries, red and black currants.

3. Make a berry-sugar decoction from the remaining berries. To do this, boil water and put prepared berries in boiling water, cook for 5-10 minutes, and finally add sugar to taste. The more sour berries, the more sugar you need. Cover with a lid and let stand for 20-40 minutes to cool and the taste of the broth becomes more intense. The more berries, the richer the berry broth will be.

4. Meanwhile, soak gelatin in half a glass warm water for 10-15 minutes, stirring occasionally to dissolve it.

5. Strain the slightly cooled berry broth through cheesecloth or a small colander so that there are no pieces of berries left in it and pour in the dissolved gelatin, stirring.

6. Place berries in bowls or cups and pour berry broth with gelatin. I previously removed the pits from the cherries. Cool to room temperature and place in the refrigerator for 4-5 hours until completely set.

7. Turn the molds upside down and place the jelly on a plate.

Secrets of making jelly from frozen berries and marmalade:

- can be used instead of water berry juice- this will add additional taste and aroma.

- if you use fresh berries, be sure to dry them with a towel before putting them in the molds. If water drains from the berries, it will remain inside the mold and that is where the jelly will not harden.

- if you use gelatin, add sugar to it, otherwise the jelly will be absolutely tasteless.

- instant jelly hardens when room temperature in a matter of minutes - this saves time if you want to eat dessert right now.

I make a sweet syrup (as my family likes), add diluted gelatin and pour the mixture into molds. After a few hours, the jelly hardens and can be served as a dessert.

- granulated sugar – 3-4 tbsp.,
- water – 2.5 tbsp.,
- gelatin – 15 g.

How to cook with photos step by step





First of all, pour cold gelatin, be sure to boiled water. Stir and leave for 30-40 minutes for it to swell.





Next, pour water into the pan, add granulated sugar and bring it to a boil. Then add the frozen berries and bring the syrup to a boil.




Cool it a little and strain through a sieve.






Heat the gelatin in a water bath until it completely dissolves.




And then mix the syrup with gelatin and let it cool slightly.




Pour the berry mixture into small molds. As soon as the jelly has cooled, immediately put it in a cold place for at least a couple of hours so that it completely hardens.






And then we serve this dish as dessert to the table.
