What is dessert

Dessert(from the French desservir - “to clear the table”) - the final dish of the table, to obtain a pleasant taste sensation at the end of lunch or dinner, usually sweet delicacies. As a rule, the dessert is sweet (for example, cake or ice cream), but there are also savory desserts made from fruits, nuts, cheeses, and unsweetened confectionery.

Desserts are mostly sweet and are a source of so-called “fast” carbohydrates - glucose and fructose, which “nourish” the brain, stimulate the production of endorphins (pleasure hormones) and lift the baby’s mood. Even “little kids” and “capricious people” are unlikely to refuse to try a tasty and beautifully decorated delicacy.

The fruits included in the dessert are a source of carbohydrates - glucose, fructose or maltose, as well as vitamins and minerals, food organic acids. In addition, desserts are rich in essential oils, tannins, fiber (dietary fiber), and pectin.

Sweets and baked goods are less useful, primarily because they add a lot of sugar. Before 1 year of age, sugar is not recommended for use in a child’s diet; after this age, no more than 30 g of sugar per day can be added for children 1–1.5 years old and 40–45 g for children from 1.5 to 3 years old. Until the age of 3, a child should not be offered chocolate and desserts based on it, fatty cakes with cream and margarine, with dyes and flavors. It is acceptable to use preserves, jams, marmalade, marshmallows, and honey in desserts (from 2 years old, if there are no allergies).

Desserts are given after the main meal - for lunch or dinner, in small quantities and depending on the age of the child. Up to 1 year, fruits are suitable as a dessert; after 1 year, it can be fruits with dairy products, and after 2 years, baked goods are added. You should not give desserts between meals; they are sweet and can kill your baby’s appetite for a long time.

First year of life

For children of the first year of life, the choice of desserts is limited - usually these are various fruit purees or mixtures with dairy products. The baby's first fruits should be local (grow in the area where you live), dim in color, and foods that cause fermentation in the intestines (for example, grapes, pears, apples, plums, peaches) should be avoided.

After 1 year, the number of dessert options expands - babies usually already have a sufficient number of teeth and can eat desserts cut into pieces. The range of products from which desserts can be prepared is also expanding - berries and exotic fruits (if the child does not have allergies), cream, honey, and baked goods appear.

However, when choosing desserts, you need to take into account the baby’s health status - if he is allergic, then citrus fruits, strawberries, raspberries, honey and bright fruits should be postponed until after 3 years. If a child is overweight, cream, bananas, and pastries should be excluded from his desserts, as they are sources of large amounts of carbohydrates and calories. Fruits rich in fiber are useful for constipation - kiwi, plums, peaches and vegetables with peel. For unstable stools, desserts with cereals (rice, semolina), tender vegetables that have little fiber (for example, zucchini, cauliflower) and pears are useful.

Dessert “Baby” (from 9 months)

You will need:

  • 150 g pumpkin;
  • 150 g pear, peeled;
  • 1 peach;
  • 1?/?2 bananas;
  • 2 tbsp. spoons of milk;
  • 2 tbsp. spoons of water.

Cooking method:

Peel the pumpkin, cut into small cubes or grate on a plastic grater. Cut the pear into small slices, the peach into cubes. Place all the fruits in a saucepan, add water and milk, simmer over low heat for 10 minutes. Add grated banana to the hot mixture and turn off the heat. After cooling, grind the mixture in a blender.

Apple mousse (from 9 months)

You will need:

  • 150 g apples;
  • 10 g rice;
  • 100 ml water.

Cooking method:

Peel the apples, cut into small slices, boil the thoroughly washed rice for 10 minutes, add the apple pieces and cook over low heat for another 10 minutes. Beat the resulting mass with a blender until smooth and fluffy and cool.

Apple marmalade (from 1 year)

You will need:

  • 2 apples;
  • 25 g sugar;
  • 1 tbsp. spoon of potato starch;
  • 10 g gelatin.

Cooking method:

Pour gelatin into 50 ml of water and leave to swell. Peel the apples, cut out the core, grate them on a plastic coarse grater, put them in a saucepan, add sugar to them, and set to heat. As soon as they boil, turn the heat to low and simmer the apples for 20 minutes. Dilute the starch in a small amount of cold water, add to the apples and mix thoroughly, let it boil and immediately turn off. Beat the resulting mass with a blender. Heat the gelatin until completely dissolved, pour into the applesauce and stir. Line a baking tray with foil or cling film, pour the prepared mixture onto it, make an even and thin layer, and place in the refrigerator. Then cut the finished dessert into pieces and place on a dish. Sprinkle a little powdered sugar on top.

Cherry mousse (from 1 year)

You will need:

  • 100 g cherries (fresh or frozen);
  • 50 g rice flour;
  • 1 banana (for decoration);
  • 40 g sugar.

Cooking method:

Separate the cherries from the seeds, mash them in a bowl, and strain the juice. Pour 150 ml of water over the cherries, bring to a boil, strain and squeeze out the juice. Cool the broth and add rice flour to it, stir and cook over low heat until boiling, add sugar and previously decanted cherry juice, cook for about 15–20 minutes. After cooling, beat the mixture with a mixer, place in bowls and decorate with banana slices.

Currant jam (from 1.5 years)

You will need:

  • 200 g currants – black, white or red (you can use a mixture);
  • 80 g sugar.

Cooking method:

Wash the berries, remove the stems and leaves, dry on a napkin, pour into a saucepan, mash slightly, sprinkle with sugar and leave until the berries release juice. After the currants give juice, put the pan on the fire and cook twice for 20 minutes, interrupting the process for 15 minutes.

Pear souffle (from 1.5 years)

You will need:

  • 2 juicy pears;
  • 2 eggs;
  • 2 teaspoons sugar;
  • 1?/?2 tbsp. spoons of starch;
  • 1 teaspoon butter for greasing the mold.

Cooking method:

Peel the pears, remove the core, and puree them with a blender. In a separate bowl, beat the egg yolks with sugar until foam appears, add starch and pear puree, mix thoroughly. Separate the whites and beat them with sugar. Very carefully add the whites into the mixture, stirring in one direction. Place the soufflé in a greased form. Bake in the oven at 180°C for about 30 minutes.

Pumpkin cream mousse with fruit (from 1 year)

You will need:

  • 150 g pumpkin;
  • 100 g pear;
  • 1 peach;
  • 1 teaspoon butter;
  • 1 teaspoon sugar;
  • 2 tbsp. spoons of fruit juice or water.

Cooking method:

Put butter, grated pumpkin into a saucepan and add juice (or water). Place over low heat and simmer until half cooked for 10-15 minutes, then add diced fruit and cook until tender - another 15 minutes. Then grind to a puree and place in a transparent bowl, sprinkle with powdered sugar on top.

Summer casserole (from 1 year)

You will need:

  • 150 g cauliflower;
  • 2 tbsp. spoons of boiled rice;
  • 1 egg;
  • 50 ml milk;
  • 10 g butter;
  • 50 g raisins;
  • 1?/?2 tbsp. spoons of sugar;
  • a pinch of salt.

Cooking method:

Boil the cauliflower, chop it finely, mix the cabbage with rice, add butter and salt. Then add the egg, sugar, raisins and milk, mix everything thoroughly and place in a mold greased with butter. Place in the oven at 180°C for 30 minutes.


Carrot muffins (from 1.5 years)

You will need:

  • 150 g carrots;
  • 1 egg;
  • 1?/?4 cups sugar;
  • 3?/?4 cups flour;
  • 50 g butter;
  • 40 g sour cream.

Cooking method:

Wash the carrots with a brush, peel, grate on a fine grater, squeeze out the juice (you won’t need it). Beat the egg into a thick foam, add sugar and continue beating for another 3 minutes. Add sour cream and butter to the dough, mix. Sift the flour, mix it with the egg mixture, add carrots to the dough, mix again. Divide the dough into the molds and bake for 25–30 minutes in the oven at 200°C.

Cottage cheese casserole with pumpkin and orange (from 2 years old)

You will need:

  • 100 g pumpkin;
  • orange zest;
  • 250 g cottage cheese;
  • 100 g sour cream;
  • 1?/?4 cups semolina;
  • 1?/?6 cups of sugar;
  • 1 egg;
  • salt on the tip of a knife;
  • vegetable oil for greasing the baking dish.

Cooking method:

Grate the pumpkin on a fine grater, add finely chopped orange zest. Beat the cottage cheese into a homogeneous mass, separate the yolks from the whites. Beat the whites separately until foamy. Add yolks, semolina, sour cream and sugar to the cottage cheese. Mix with pumpkin and zest, stir and carefully fold in the protein mixture with a spoon. Grease a baking dish with butter and sprinkle with semolina. Pour the mixture into a mold and place in the oven for 30 minutes at 180°C.

Curd muffins with berry sauce (from 2 years old)

You will need:

  • 250 g cottage cheese;
  • 3 tbsp. spoons of sour cream;
  • 2 eggs;
  • 3 tbsp. heaped spoons of flour;
  • 4 tbsp. spoons of sugar;
  • 1 tbsp. a spoonful of butter for greasing the baking pans.
  • For the sauce – 1?/?2 cups of berries: raspberries, strawberries, cherries, currants.

Cooking method:

Mix cottage cheese with sour cream and beat with a blender into a homogeneous mass, add eggs, beat until fluffy foam, without ceasing to beat, add sugar. Gently fold the flour into the dough with a spoon. Grease the molds with oil, place the dough 3?/?4 deep. Bake at 180°C for approximately 30 minutes. While the cupcakes are baking, prepare the sauce - beat the berries in a blender with a pinch of sugar. Pour the sauce over the slightly cooled cupcakes.

Curd and pear dessert (from 1.5 years old)

You will need:

  • 2 pears;
  • 250 g low-fat cottage cheese;
  • 1?/?2 glasses of pear juice;
  • 1?/?2 cups sour cream;
  • 1?/?2 teaspoons vanilla sugar.

Cooking method:

Beat the cottage cheese with pear juice and sour cream into a homogeneous mass, cut the pear into small pieces and mix with the curd mass, sprinkle with vanilla sugar and mix. Place the finished dessert in plates and decorate with berries.

You will need:

  • 1 banana;
  • 1 apple;
  • 50 g cottage cheese;
  • 50 g sour cream 10?% fat;

You will need:

  • 1?/?3 cups semolina;
  • 1 cup cranberries;
  • 3 glasses of water;
  • 1?/?2 cups sugar.

Cooking method:

Grind the cranberries with a pestle and dilute with 1?/?2 cups of hot water, strain. Pour the squeezed berries with the remaining water and put on fire, boil for a few minutes and strain again. Cooking method:

Soak the bun in water mixed with milk, mash it with a fork, add melted butter, sugar and eggs, which are first beaten until foam forms. Grease the mold with butter and sprinkle with powdered sugar, lay out the prepared mixture and bake in the oven at 180°C for 30 minutes.

Oatmeal cookies (from 1.5 years)

You will need:

  • 250 g oatmeal;
  • 120 g butter;
  • 100 g sugar;
  • 2 eggs;
  • lemon zest.

Cooking method:

Grind the oatmeal with the butter, whipped with sugar, grate the lemon zest into the mixture and mix with the egg. Knead the mixture thoroughly until smooth, place parchment paper on a baking sheet, place pieces of dough on it with a teaspoon and flatten them, bake in the oven at 180°C until light brown.
