lemon juice - 30 ml.

Preparation
Peel the apples, cut into 4 parts, remove the core and cut into thin slices. Sprinkle apples with lemon juice, add 4-5 tablespoons of sugar, stir. Apples should give about 100 ml of juice.

Separate the whites from the yolks. Place the whites in the refrigerator, and grind the yolks with 2-3 tbsp. sugar, add cottage cheese and melted butter. The oil should not be hot.
Pour in the separated apple juice, stir and add semolina mixed with baking powder. The semolina will swell and you will get a rather thick dough. If the mixture is too thick and difficult to turn with a spoon, then perhaps the apples were too dry and did not give enough juice. In this case, I add a couple of spoons of sour cream or a little more melted butter.

Beat the chilled whites with a pinch of salt.

Continue beating the whites, gradually adding the remaining sugar.

Place the whites on the dough.

Gently move the spoon from top to bottom, fold the whites into the dough.

Prepare the mold - grease with butter, sprinkle with breadcrumbs or line with baking paper. Place half of the dough into the mold. Carefully smooth out without pressing.

Lay out the apples. Pour in the remaining dough and smooth it out carefully.

Bake in an oven preheated to 180 degrees for about an hour. Do not open the oven for the first 40 minutes. Readiness to check with a wooden stick.

    Melt the butter. Make sure that it remains just warm, but in no case hot.


    We also add butter to our future dough. Stir. By this time, the apples should have released their juice. Pour it here too.
    Measure out 1 cup of semolina and mix it with baking powder.
