Potatoes with stewed meat in a pan

To prepare this dish, it is better to take potatoes of those varieties that boil well. Then the potatoes will cook quickly and will be soft. Any stew is suitable, from pork, beef or combined. So, let's get ready!

Ingredients:

  • potatoes - 800 gr
  • can of stew
  • onion - 1 onion
  • carrots - 1 pc.
  • vegetable oil for frying
  • spices (bay leaf and black peppercorns)

Peel the potatoes and cut into small pieces. Place them in a saucepan and fill 2/3 with water. Put it on the stove to cook.

Meanwhile, peel the onion and chop finely. Peel the carrots and grate on a coarse grater. Heat a frying pan with vegetable oil.

Fry the onion a little and add carrots to the pan. When the vegetables are ready, add the stew to them in the pan. If there are large pieces of meat in the stew, gently mash them with a fork.

Simmer the stew with vegetables in a frying pan for a couple of minutes. You can optionally add a little tomato paste to the vegetables. We didn't add it.

The potatoes should be completely cooked. When it's ready, add the vegetables and stew to the pan. Mix carefully.

Taste and add salt if desired. Add spices, bay leaves and peppercorns to the potatoes. Cover with a lid and leave to simmer for 2 minutes over low heat.

Place the finished potatoes and stew cooked in a saucepan on plates in portions. Sprinkle with finely chopped herbs. Dill, green onions or parsley will do.

  • potatoes – 6-7 pieces;
  • stew - 1 can (350 grams);
  • onions – 1-2 pieces;
  • garlic – 1-2 cloves;
  • large tomato - 1 piece;
  • carrots – 1 piece;
  • butter – 1 tablespoon;
  • vegetable oil -2-3 tablespoons for frying;
  • tomato paste (sauce) – 2 tablespoons;
  • greens - to taste;
  • salt and pepper - to taste.

How to cook potatoes with stew

1. Cut the onion into thin half rings, the garlic into small slices. Grate the carrots on a coarse grater or chop into thin circles. Chop the tomato as finely as possible.

2. Place the stew on a plate. Remove all white fat, otherwise it will congeal on the finished dish. Mash the cleaned meat with a fork. Cut large pieces into several small ones across the grain.

3. Peel the potatoes, cut into slices or medium-sized cubes (3-6 cm).

4. Place the pieces in a saucepan, pour water above the potato layer a couple of centimeters.

5. Place the pan on the fire, bring to a boil, then reduce the heat to a minimum. Simmer covered, stirring occasionally so that the potatoes do not stick to the walls.

6. Heat a frying pan with vegetable oil. Add the onion and fry for 5-7 minutes over medium heat, stirring until golden brown.

7. Add carrots, fry for another 3-5 minutes until the pieces become soft.

8. Place the tomato in the pan and fry for another 2-3 minutes.

9. Add tomato paste (sauce), stir, wait until the vegetable mixture boils.

10. Place the stew into the frying pan. Increase heat slightly, stirring and frying for 3-4 minutes.

11. Add the contents of the frying pan to the pan with the potatoes (drain off any excess broth first, if there is any left). Simmer over low heat, covered, for 5-7 minutes.

12. Chop the greens.

13. Add herbs, garlic and butter to the pan. Stir, cover and remove from heat. Let it brew for 3-5 minutes.


14. Divide the hot potatoes and stew into plates and serve.

Cooking time – 40-50 minutes.

How to cook potatoes with stew:

First, peel and rinse all the vegetables. Grind the carrots using a fine-mesh grater (you can also cut them into thin strips), chop the onion randomly (this is a matter of taste).


Cut the potatoes into not very large cubes (or cubes) and put them in a deep bowl and immediately fill them with cold water. So the vegetable, firstly, will not have time to darken; secondly, water will wash away the starch from it (this substance contained in potatoes spoils the dish, since the broth from it becomes cloudy and thick).


Now let's proceed directly to preparing the dish. First fry the onion in oil until translucent.

Then throw the carrots into the pan along with the seasonings, mix and sauté for 3-4 minutes.

Add the potatoes, drained in a colander and washed under the tap.

Pour a glass and a half of hot (or warm) water, stir and close the pan with a lid. If desired, you can pour even more liquid or, conversely, less.


Let's simmer over moderate heat for about 5 minutes. Now is the time to throw in the stew that has been disassembled into small pieces, add salt to the dish, mix well and continue to simmer until the potatoes are ready.
