In the piggy bank of carrot cake recipes, I also have a recipe for lean cake. It's no secret that even without eggs, cakes or biscuits suitable for cakes are obtained, butter is easily replaced with vegetable oil, and jam or fruit puree is suitable as an affordable and budgetary cream for spreading.

This cake is suitable for holidays during the fasting period (birthdays, New Year) or for a vegetarian menu.

For a quick and tasty lean carrot cake, prepare the ingredients according to the list.

Grate peeled raw carrots and measure out a full glass. Don't tamp.

Combine and mix carrots with sugar, salt and vegetable oil.

If the carrots are dry, then add water to it.

On top of the carrot mass, add flour with cinnamon and baking powder. Lightly mix dry ingredients together.

For splendor of the dough during kneading, add baking soda slaked with vinegar.

Knead the dough with a spoon or spatula. It will turn out thick, heavy, but lush.

Spread the carrot batter evenly on a greased or lined baking sheet. Try not to crush, but to keep its splendor. The size of this form is 20x30 cm.

Bake the cake at 170-180 degrees until cooked. The time depends on the properties of the oven, but focus on 20-25 minutes and start checking. It is advisable not to overdry!

Divide the cake into two blanks and spread one on top with apple jam with cinnamon and cognac. Here - jam, cooked according to the recipe indicated in the introduction, or you can just mix any apple jam with cinnamon and add cognac if desired.

If the pieces of apples in your jam are large, then crush them with a fork or even puree all or part of the jam in a blender. Sprinkle the applesauce with a mixture of whole and crushed nuts.

If you want a moister, juicier cake, then soak it with sweet syrup (from jam with water or boiled from sugar with water). But I want to offer another option. Apple jam is quite juicy. Let the cake rest on one side first, then turn over and let the other side soak. Place the cake itself at this time in a bag, in a container or in baking paper on which it was baked so that it does not dry out.

The cake prepared in this way can then be decorated somehow. For lean options, the choice of design is limited and the easiest way is to sprinkle the surface with powdered sugar.

  1. Put the oven to heat up to 175 gr. Combine flour, salt, baking powder, soda, ginger and zest (the dough is heavy, so you need both baking powder and soda).
  2. In another bowl, dissolve sugar in warm water and add oil.
  3. Slowly pour this mixture into the dry ingredients. Add carrots, zest, vinegar. Mix everything with a hand or planetary mixer. The dough should be quite liquid.
  4. Pour the batter into a springform pan, cover with foil. Put in the oven and bake for 30 minutes. Then remove the foil and bake for another 15-20 minutes.
  5. Making cream is easy. Pour orange juice into a saucepan. Add sugar, almond flour and semolina. Stir and cook until thickened (15-20 minutes).
  6. When the almond-semolina cream has cooled, it needs to be beaten well.
  7. Cut the cooled cake into 2 layers and brush inside and out. If you want more cream, make a double batch. Garnish with caramelized carrots or carrot chips, if desired.

Ingredients:
carrots - 200 g;
flour - 150 g;
vegetable oil - 8 tbsp. l.;
sugar - 1 tbsp.;
juice with pulp - 1 tbsp.;
walnuts - 100 g;
baking powder - 1 tsp;
salt - 1 pinch;
apricot jam - 200 g;
vanillin - to taste;
powdered sugar - for sprinkling.

Cooking:

Roast the chopped walnuts in the oven.

Mix the sugar with melted butter well, pour in the juice.

Grate the vegetable. To do this, you can use a Korean carrot grater. Connect with oily liquid.

Set aside a few nuts to decorate the dish, grind the rest in a blender. Do not overdo it, it is better that large pieces are felt in baking. Transfer them to the liquid composition.
Mix flour, vanilla, baking powder, also add to the mixture. Mix thoroughly.

Grease the form with oil, pour in the dough. Put only in an oven preheated to 200 degrees. Cook for 30-40 minutes depending on your oven.

The lean recipe for carrot cake with cream is quite simple. Baking is light, dietary, healthy. For cooking, simple products are used, which, with the right combination, allow you to get a delicious treat.

Ingredients:
large carrots - 2 pcs.;
flour - 200 g;
sugar - 150 g;
orange peel - 50 g;
soda - 1 tsp;
vinegar - 1 tsp;
orange juice - 0.5 l;
semolina - 5 tbsp. l.;
water - 0.5 tbsp.;
salt - to taste;
powdered sugar - for decoration.

Cooking:

Grate the carrot on a coarse grater, add flour, sugar (100 g), soda quenched with vinegar, citrus zest. Stir. Pour water. Knead the dough, salt a little.

Put the base of the cake in a mold, bake at 180 degrees until cooked. Next, cool, cut. From this set of products you will get about 2-4 cakes.

Prepare the cream: dissolve the remaining sugar in the juice, heat over low heat. Add semolina here, cook in the usual way. Unplug, wait until it cools down completely.

carrots - 2 pcs.;
apple - 2 pcs.;
oat flakes - 200 g;
honey - 50 g;
sugar - optional;

water - 1 tbsp.

Cooking:

Grind the flakes with a blender. In a container, mix them with butter, honey, and, if necessary, sugar.

Grate carrots, apple, add to mixture. Pour the juice squeezed from the lemon here, mix thoroughly.

Put in the oven for half an hour.

Pour water into powdered sugar, set on fire, stir until fudge is obtained. Lubricate the dessert with it.

with bananas

Ingredients:
banana - 3 pcs.;
carrots - 2 pcs.;
sugar - 2/3 st.;

carrot juice - 0.5 tbsp.;
baking powder - 1 tsp;
flour - 1 tbsp.;
vanillin - to taste;
honey - 1 tbsp. l.;
candied fruits - 100 g;
salt - a pinch.

Cream:
walnuts - 150-200 g;
honey - 300 g.

Cooking:

Grate carrots on a fine grater. Melt margarine, add to vegetable.

Pour in sugar, adjusting its amount according to your preferences, salt, baking powder, flour, candied fruits. Stir.

Lubricate the capacity of the device with plenty of vegetable fat, lay out the dough. Set the "Baking" mode for 60 minutes. Immediately after turning off the multicooker, allow 10 minutes for the cake to stand under the closed lid.

Prepare cream. Grind the nuts in a blender, add honey, mix thoroughly.

Cut the resulting cake into 2 cakes, coat the inside with cream, and sprinkle the top and sides with crushed nuts.

Add chopped lemon to the chilled cream and mix thoroughly. You should not add the whole lemon at once, it is better to focus on your taste so that the cream does not turn out to be too sour.


Preheat the oven to 170 degrees. Prepare a baking dish. You can bake one cake, and then cut it into three parts. It is convenient to bake each cake separately, in which case the cakes are even and equal in width. Place parchment paper on the bottom of the mold.
First you need to prepare the carrots - wash, peel with a vegetable peeler, grate on a fine grater. You can use a blender, then this process will take a few minutes.


In a deep bowl, mix orange juice, odorless vegetable oil, sugar, lemon zest. Mix everything thoroughly, you should get a homogeneous mass. Stir in the almond pulp and finely grated carrots into this mixture.


In a separate container, mix all the dry ingredients: flour, semolina, spices, salt.
Combine both mixtures, mix thoroughly, extinguish the soda with lemon juice, mix everything again.
The dough should have a consistency like thick sour cream, add a little flour if necessary, and if the dough is too thick, add a little orange juice.

Carefully place the finished dough into the mold, smoothing the surface. If you bake each cake separately, then pre-weigh the dough, divide the weight into three parts, pour each part into a mold. Bake until done (time depends on which baking dish you have chosen and on the characteristics of the oven). Readiness to check with a toothpick.
Let the cakes cool completely. If baked in the form of one cake, then cut it into three parts.


It is convenient to fold the cake in a detachable form. Put part of the cream on the cake, spread it evenly, then cover with the next cake, put the cream again, cover with the last cake. It is also smeared with cream. Do not use the cream completely, after removing the cake from the mold, you need to grease the sides with the remaining cream.
Sprinkle the cake with ground almonds and puffed rice.

  • 320 g of premium wheat flour;
  • 50 g of flaxseed flour or ground flaxseed;
  • 5 large carrots;
  • ½ tsp salt;
  • ½ cinnamon stick;
  • ¾ cup vegetable oil;
  • 1.5 glasses of water;
  • baking powder dough 2.5 tsp;
  • soda 1 tsp;
  • 1 st. l. apple cider vinegar;
  • 2 oranges;
  • a handful of walnuts.

Let's prepare a lean cream for the cake from this:

  • almond flour 4 tbsp. l;
  • semolina 4 tbsp. l;
  • brown sugar 4 tbsp;
  • carrot or orange juice 4-5 glasses.

How to bake Lean Carrot Cake with Cream

So, first we will prepare the dough for our cake. As Elena Chekalova says, the dough turns out to be quite heavy, so we will add soda and baking powder to it. As a result, the cake rises perfectly! Sift wheat flour into a deep bowl, add salt, soda, baking powder, ground flax and cinnamon. Cinnamon can be ground in a coffee grinder along with flaxseed.

Remember that in vegan recipes, flax replaces eggs for us. Apple cider vinegar will also hold our dough together.

Separately, in a cup, dissolve cane sugar in one and a half glasses of warm water, combine with vegetable oil. Grate the peel of washed dry oranges on a fine grater to get the zest. Wash, peel and chop carrots. I first grated the carrots on a coarse grater, and then chopped them in a blender. The result is the same as if you rub carrots on a fine grater. We should get 2 cups of finely grated carrots. Rinse the walnuts, dry and chop with a knife.


Combine the sugar-oil solution with the dry flour mixture, add orange zest, grated carrots, nuts and apple cider vinegar. Mix well. For this, it is better to use a mixer. The dough turns out like thick sour cream, and bright orange in color. We leave it to stand for 10 minutes so that it "fits". In the meantime, you need to preheat the oven to 180 degrees, if it takes a long time for you to heat up, then you need to turn it on in advance.


Pour our dough into a detachable cake mold, level the surface and cover with foil on top, put in a preheated oven. You need to bake the cake at a temperature of 180 degrees! First, bake for half an hour under the foil, then remove the foil and bake for another 20 minutes.

Remember that during the first 30 minutes you can not open the oven, otherwise the cake may “fall” and not rise!


Lean Cream Cake Recipe

In the meantime, you can start preparing the cream. For this we need almond flour. I made it myself from raw almonds. Rinse the nuts beforehand and dry well. Transfer to a coffee grinder and grind, the flour is ready! We also need juice. The first time I made a cream of carrot juice. The cream had a pleasant sweet aftertaste. The second time I decided to make a cream of orange juice, as Elena Chekalova advises. But the orange, for my taste, gave extra acid. Therefore, I recommend making carrot juice cream.


In a saucepan combine carrot juice with almond flour, sugar and semolina. Cook over medium heat until mixture thickens, stirring occasionally. It took me about 40 minutes to do this, just while the cake was baking. The finished cake must be removed from the mold and cooled. The same with the cream, while it is hot, you cannot work with it.


Carefully cut the cooled cake into 2 parts. Beat the cooled cream with a mixer and coat the cakes with cream. The cake itself is very tender and slightly moist in taste, so it does not require additional impregnation. Before serving, carrot cake can be decorated with chopped or ground nuts, carrot chips. In this photo you can see both cakes that I baked. The first, more orange, is with carrot cream, the second cake with yellow layers is with orange cream.
