You can take any nuts, for example, your favorite ones, or those that you already have at home - for us it will be raw almonds. Coconut oil can be replaced with olive oil, and cocoa with carob (carob powder). Take large dates, because you will still need to remove the seeds from them - if you take smaller ones, then increase the number to 20 pcs. Well, let's start preparing our sugar-free sweets:

  1. We take out the bones from the dates, cutting them with a knife.
  2. If required, we clean the nuts from the husk / shell, depending on their type. Finely chop some nuts and set aside.
  3. Place the rest of the nuts, dates, cocoa in a food processor, chop and mix for about one minute. In the absence of a combine, you can use a meat grinder.
  4. Then add oil and water to the resulting mixture (you may need a little more than indicated in the recipe - watch the consistency), mix again to get a homogeneous, fairly thick mass. Cool it in the refrigerator for ten minutes.
  5. From the chilled "dough" we form balls with our hands. We roll them in nut crumbs, cocoa and coconut flakes to get three types of sweets.

Healthy desserts without sugar and flour are ready! Put the sweets in the refrigerator for 15-20 minutes before use.

Banana Strawberry Cake

Why desserts without flour and sugar are good - they can be eaten without a twinge of conscience! After all, these healthy sugar-free sweets are made mainly from fruits and nuts, so they won’t hit your figure even if you eat a big piece of cake. And they taste just as good as junk food. And since this is not just a cake, but an ice cream cake, it will be a great treat for a summer party! Especially in June, when the season of strawberries and mint is in the yard.

To prepare such desserts, we need to make two types of filling, as you can see in the photo: pink and cream. The pink filling is banana and strawberry, the cream filling is everything else. So, we take the following ingredients:

  • strawberries - 500 g;
  • banana - 3 pcs.;
  • orange - 1 pc.;
  • dates - 350 g;
  • nuts - 400 g;
  • melted coconut oil - 2 tbsp;
  • water;
  • mint and berries for decoration.

If coconut oil is not available, you can use olive oil that has been soaked with coconut flakes for 12 hours. Nuts are better to take cashews or almonds. And you have every right to replace strawberries with other berries.

To make the same cake as in the photo, you need to take two round shapes: one large, the other smaller. We also pre-peel the strawberries from the tails, and the banana from the peel, and cut it into large pieces. We put fruits and berries in a vacuum bag and freeze in the freezer.

Before serving, decorate the cake with mint leaves around the edge, and put fresh berries on top so that it does not look flat and empty. You can experiment with the ingredients, changing the types of nuts and berries, and each time you will get different and delicious desserts without sugar and flour!

Fruit and berry ice cream

Without a doubt, the most favorite delicacy in the hot summer season is ice cream. If you want to make sugar-free and flour-free desserts that are sweet yet healthy and refreshing, then this recipe is for you. We will need:

  • bananas - 3 pcs.;
  • peeled pineapple - 1/4 of the fruit;
  • strawberries - 15 pcs.;
  • cherry - 10 pcs.;
  • milk - 60 ml.

This amount of ingredients is enough for 10 servings of ice cream. Of course, these healthy sweets will be much more convenient to make using special molds for homemade ice cream, but you can simply take, for example, disposable cups and wooden sticks, or make vertical bridges in a plastic container. Getting Started:

  1. Put the bananas in a blender, pour in the milk and beat until smooth. Transfer to a separate bowl.

  5. At the end, fill the form with pineapple juice. The density of the juice is higher than the density of the strawberry-banana mass, so it will not remain only at the top, but will flow down the molds, creating small beautiful swirls from the bright berry puree.
  6. Cover the molds with foil and, after piercing it, insert wooden popsicle sticks.
  7. Put in the freezer for at least 12 hours so that everything thickens and adheres well.

We prepare the form for kozinaki in advance. Lay the parchment on a flat plate and lightly moisten it with cold water. We put the “baking” mode on the slow cooker and send honey there. While stirring the mass, we wait until it melts completely and the “caramelization” process begins. Immerse the seeds in a bowl, stir the mass periodically for 15 minutes. Pour the hot mixture onto a plate and spread evenly. Until the mixture has completely hardened, it is necessary to make cuts so that later it will be easier to break the gozinaki. Let it freeze for half an hour.

Advice: Kozinaki will turn out much tastier if the seeds are pre-dried in a dry multicooker bowl or in a frying pan until golden brown.

Almond apple roll

Ingredients:

  • 1 kg apples
  • 15 g gelatin
  • 3 egg whites
  • 5 eggs
  • 225 ml water
  • 110 g honey for the dough, 75 g for the filling
  • 140 g peeled almonds

How we cook:

Peel the apples from the peel, cut into small pieces, bake in the microwave for 5 minutes. Pour gelatin with cold water and bring to a boil, set aside to cool to room temperature. Beat baked apples in a blender, then add gelatin, honey and 3 proteins in turn and bring to the formation of an air mass.

To thicken the filling, put it in the refrigerator for at least an hour. Using a coffee grinder, grind the peeled almonds into flour. Separate the yolks from 5 eggs, beat them with honey, add almond flour to the mass. Beat egg whites separately with a pinch of salt.

Separate the yolks from the proteins and mix thoroughly with the rest of the ingredients. If the sweetener is in tablets, then crush them between 2 tbsp. l. until a powder is formed. Whisk the whites separately with a pinch of salt until a very thick mass is formed (so that the spoon stands).

Gently introduce proteins to the main mass, making sure that they do not fall off. Pour into a mold and send to the oven preheated to 180 degrees for 30 minutes. We check the readiness of the cake with a wooden stick. Cut the cooled cake lengthwise. Beat all the ingredients for the cream, grease the middle of the cake with cream. Mix all the ingredients for the glaze, grease the top with glaze. We send the cake to the refrigerator for impregnation.

Advice: In this recipe, instead of honey and sugar, a sweetener is proposed. Be careful when choosing this ingredient! It is better to opt for natural.
