By the way, I thought that my husband would not appreciate liver cutlets according to the new recipe; he was overfed with oatmeal since childhood and now he does not eat it. I have always made them with beef liver in the past and my husband really likes them. Now I decided to experiment... My husband was pleasantly surprised by the taste and could not understand what had changed in the cutlets and why they became tastier???

To prepare liver cutlets we need
  • turkey liver - about 1 kg
  • onions - 2 heads
  • rolled oats - 1 glass
  • chicken egg - 1 piece
  • flour - 1.5−2 tablespoons
  • salt, ground pepper mixture
  • favorite spices - a couple of pinches (I use Italian herbs)
  • vegetable oil for frying

Liver cutlets

  1. Wash the turkey liver thoroughly under running water, removing any clotted blood.
  2. Turkey liver is very tender, so you don’t have to remove the film, just cut off the veins.
  3. We clean the onion and chop it coarsely, but so that it fits into the neck of the meat grinder.
  4. Grind the turkey liver and onion in a blender or through a meat grinder.
  5. Beat the egg into the minced meat, add spices and salt. Mix everything thoroughly.
  6. Pour in a glass of rolled oats, mix again and let stand for 20 minutes so that the flakes swell a little. I have simple rolled oats that cook for about 15 minutes. If you have instant cereal, you can reduce the time. The interesting thing is that you couldn’t feel the flakes at all in the finished cutlets.
  7. Add a couple of tablespoons of flour, mix everything thoroughly again so that there are no lumps. The minced meat is ready!
  8. Spoon the minced meat into a frying pan with preheated vegetable oil and fry for 1.5-2 minutes on each side until an appetizing crust forms.

Turkey liver is ready! Bon appetit!

Liver cutlets are a wonderful idea for lunch or dinner. They are quite simple to prepare, so even a novice in the kitchen can easily repeat this recipe. In addition to these ingredients, you can always add vegetables to taste (carrots, for example), as well as spices or breadcrumbs. These cutlets are perfect for any side dish or on a sandwich.

Ingredients:

  • Turkey liver – 350 grams
  • Lard - 100 grams (optional)
  • Onion – 1 piece
  • Egg – 1 piece
  • Salt - To taste
  • Pepper - To taste
  • Flour - 3 tbsp. spoons (approximately)
  • Vegetable oil - To taste (for frying)

How to cook Turkey Liver Cutlets


1. Wash the liver and dry it well with a paper towel.


2. To prevent the cutlets from being dry, I advise you to add a little lard. I use salty.


3. Liver, peeled onions and lard pass through a meat grinder or grind in a blender bowl.


4. Beat in the egg and mix everything. Add salt, pepper and (if desired) other spices to taste.


5. Add sifted flour little by little, stirring. The mass should be homogeneous (without lumps) and not too liquid, otherwise the cutlets will spread throughout the pan.

Very tasty and very easy to prepare, liver cutlets should please everyone. I propose to cook today from turkey liver, be sure to add several types of cheese, onions and some potatoes, replace the flour with oatmeal - it will turn out very tasty. These cutlets are best cooked in the oven, and besides, this will greatly simplify the process for you. You can serve liver cutlets with mashed potatoes, with porridge or pickles, baked vegetables, or simply eat the cutlets as a snack with a fresh slice of bread.

To prepare turkey liver cutlets, prepare all the ingredients according to the list.

Select small size potatoes, peel and wash, dry and cut into pieces. Peel and rinse the onion, cut into 4-6 pieces. Prepare processed cheese and some Adyghe cheese. Rinse and dry the turkey liver, trim off the fatty layers and fibers.

Pass all prepared ingredients through a meat grinder; use a large wire rack.

Add a good pinch of salt and ground black pepper to all ingredients. Beat in one large chicken egg.

Grind oatmeal in a blender bowl.

Place the oatmeal in a bowl with the main ingredients. You can also add some of your favorite spices here. Mix all ingredients thoroughly.
