We take the meat and cut all the onions into it. Minced chicken is much more watery than any other, so we finely chop the onion into it, rather than passing it through a meat grinder. Otherwise, additional juice will be released from it and this will interfere with the sculpting of the dish. Finely chop the garlic and add it to the minced meat. Sprinkle with salt and pepper and add flour to make the minced meat more elastic. Then the mass must be placed in a plastic bag and beaten thoroughly on the table for five minutes. Next, we take skewers, previously soaked in water, and form sausages on them, tapering towards the edges. Place everything on a grill tray and place in a very hot oven for 15-20 minutes. As soon as a uniform golden crust appears, the dish is ready. Place it on fresh lettuce leaves and serve. Chicken lula kebab in the oven turns out very tender.

Simple lula kebab

And so that our minced meat is elastic, we beat it on a plate, take it in our hand, and beat it again so that the meat fibers separate. Cook it this way for 10 minutes. While we’re doing this, let the wooden sticks soak in water so that they don’t get burned later when baking. If time permits, put the minced meat in the refrigerator for two hours - it will then settle and will be easier to shape. Next, we form sausages on sticks and place them on a baking sheet. Cook lula kebab in the oven for 10 minutes. The surface of the minced meat should immediately set and harden - then the kebab will turn out juicy, no worse than on the grill.

Chicken lula kebab - in the oven

Chicken meat, adored in our house (there are different versions - stewed with vegetables, poultry goulash, ...) always finds use in a wide variety of dishes - in lula kebab, for example. I don’t claim the laurels of gurus who know absolutely everything about the classic of this meat recipe. I break the rules by not beating the minced meat for the classic lula-kebab the way professionals do, beating it on a board or kitchen surface. I haven’t fried it yet, using coals or a grill.

However, it is not uncommon in my house. And I want to add some special note to it every time. I cook it from any meat, with pomegranate sauce and basil. I always add a lot of greens. I also love hops-suneli. This time I chose a new recipe for chicken lula kebab, it is simpler than the ones I tried before. And based on it we got a kebab - juicy and tasty, similar to that prepared on the basis of brighter options.

Poultry dish ingredients:

Per kilogram of chicken meat

  • One onion (medium or two small),
  • one sweet pepper,
  • a small bunch of cilantro (parsley if desired),
  • a teaspoon of potato (or corn) starch,
  • ginger, oil, pepper and salt to taste.

I wash the meat and peeled onions. I cut them into pieces that are convenient for processing in a meat grinder.

I have frozen cilantro and bell peppers. That’s why I take them out of the refrigerator in advance. I first get rid of the ice and then the remaining water. I chop the pepper pieces finely.

I twist the chicken with onions.

I add cilantro with pepper, starch and spices to the minced meat.

Before stirring it, pour cold water over wooden skewers.

I put a bowl next to me - also with cold water - for forming kebabs only with wet hands.

But for now I’ll take a closer look at the basis for it. I knead the minced meat not with a spoon, but with my hands, because thanks to them the mass becomes perfectly plastic and will have good viscosity, and the kebab will turn out to be the most tender.

While the oven preheats to 190 degrees, line a baking sheet with parchment. I'll lubricate it with a little oil.

I roll the minced chicken into oval shapes. I pierce each one with a skewer.

I place the kebab on a baking sheet.

It only takes half an hour to bake the dish in the oven. However, I will have to interrupt this process after 15 minutes to turn the kebab over to the other side. This will take a few minutes. I won’t forget about them, I’ll add them to the remaining cooking time.
