  1. Making homemade noodles is quick and easy - we need a sieve to prepare it. After beating the eggs in a deep bowl and adding salt, use a sieve to sift the flour into the cup, then add water and begin kneading the dough with a fork.
  2. When the dough becomes thick, knead it with your hands, adding sifted flour periodically. It is necessary to knead until the dough becomes elastic and stops sticking to your hands. The result should be juicy, as in the photo.
  3. Cover the prepared dough with a cup and let it rest.
  4. After 10-15 minutes, we knead our bun again and divide it into four parts. And then we roll out each part with a rolling pin. Make the pancake very thin, almost transparent!
  5. The juices rolled out in this way now need to be dried a little. To speed up the process, I dry them in a preheated oven on a baking sheet (you can also dry them in a large frying pan on the stove). After drying one side, turn it over to the other.
  6. After drying the juices, you can start directly preparing homemade noodles. To do this, I fold the dried juice in four, put the same folded juice on top and start cutting the noodles from the end (thinner). Noodles are considered tastier and more refined the thinner they are sliced!

  11. After this, add a little bay leaf to the pan for taste and remove from heat. You can add separately fried onion until golden brown to the vermicelli. And already on a plate you can chop fresh herbs, and also add a spoonful of sour cream - God himself commanded it! Now the dish is ready.

My acquaintance with Chinese cuisine happened a long time ago when I was on a business trip in Singapore.

Of course, I forgot a lot of what was there, but the celebration of the Chinese New Year, as well as Bengali and Chinese cuisine, is quite difficult to forget.

Chinese New Year is something unforgettable! Colorful dragons, processions through the streets, trucks rushing here and there, in which a group of people with red armbands with drums and musical cymbals played incessantly.

Singapore itself amazes with its magnificent performances. This is Sentosa Island, with a bunch of attractions, attractions, including the Underwater World, the Light Fountain and terribly expensive drinks. Impeccable cleanliness, year-round temperature of +35 degrees and an absolute absence of dust and almost daily light rain! And the air, so heavy and saturated with unfamiliar aromas!

I was able to try several different cuisines there. Most of all, of course, I was struck by Bengali and Chinese cuisines. Bengal - with its CRAZY spiciness (imagine, in a small portion bowl with pieces of chicken there were THREE hot peppers! And the hottest ones!).
Chinese cuisine did not impress me at first, because... it is sold in most eateries and, like any fast food, it was very different from the “classic” one. But when we were invited to a Chinese restaurant, it was a completely different matter. First, they brought us live shrimp, which were doused with cognac (so that we could make sure that the shrimp were alive and fresh when they were later taken away for cooking). Then came a series of dishes. These were very small portions of a variety of dishes, but there were more than ten of them (it is noteworthy that liquid and non-liquid dishes alternated completely unpredictably). And when I was already full, they brought us a huge dish with crabs in an original sauce. With beer, which in Singapore is very, very good, the end of the meal was simply magnificent...

But I digress
The philosophy of Chinese cuisine is completely different from European cuisine. I won't go into details, but if you go to a restaurant somewhere in Moscow or your city and order top dishes, you will never get an idea about their food. It is a large number of dishes in small portions, a menu compiled in a certain way according to the canons of Chinese cuisine, that provides balanced nutrition, great pleasure from food and is also therapeutic.

However, I want to present you with one dish that is prepared very simply and very quickly - literally 20 minutes, but the result is simply magnificent and if you suddenly have guests, you will greet them with honor

So, Chinese chicken noodles - in 20 minutes
Of course, this is not quite a classic recipe. I saw this recipe in one of the programs, but changed it a little to my taste. I didn't add sugar because... For me, the sweetness of the pepper is enough and I added wine vinegar, although it is better to add Chinese wine. In addition, ingredients like ginger and hot pepper appear differently in different recipes. Usually hot peppers are taken dried.

Ingredients

chicken breasts 2 pcs
sweet pepper 1 piece
onions (preferably white - with white skin) 1 small head
5 spice mixture 1 tsp
ginger (preferably fresh, cut into strips) 1 tsp
garlic 2 cloves
hot pepper (I just have a small one) 2 centimeters
starch 1 tsp
wine vinegar 2 tsp
soy sauce 2 tsp
coarse non-iodized salt 1 tsp no slide
noodles (I used Japanese udon) 2 servings
turmeric for noodles (optional) 1 pinch

My noodles took 8 minutes to cook, so I’ll start the description there. Place a saucepan with plenty of water on the fire. Salt the water and bring to a boil. Be sure to taste the water, the water should be well salted.


Place the noodles in the pan. Be careful not to let the noodles stick together. Once it is in the water, stir it. Add turmeric if you want to change the color and add a subtle flavor to the noodles. Cook the noodles, as the Italians say, a little al dente (slightly firm, but just lightly).


If you have breasts with bones and skin, like me, cut off the skin and carefully remove the breasts from the bones. Trim off the pieces of breast that separate from the inside and cut the breasts into strips across the grain, about half a centimeter thick.


Now the breasts need to be marinated. Add a level teaspoon of salt, 5-spice mixture, soy sauce and wine vinegar (or Chinese wine if you have it) to the breasts. Mix well and leave to marinate for 10 minutes.


Cut the onion into strips. To do this, cut the onion in half, cut off the butt and arrow and cut the halves along the onion.


Cut the sweet pepper into strips. If you have fresh ginger, cut the garlic and ginger into strips.


If your noodles are already cooked, place them in a colander and rinse them in cold water to stop the cooking process. Add a little vegetable oil and stir. Set aside.


Sprinkle the breasts with starch and toss to combine.


Mix thoroughly so that the starch is evenly distributed over the surface of the pieces.


Now get ready to cook the dish. You should already have all the ingredients on hand, because... The overall cooking process will now take you no more than 7 minutes. Separately, a bowl with pieces of chicken, separately with onions, separately with bell peppers, a little boiling water, salt shaker. Ginger and garlic can be used together. Unfortunately, I don’t have a wok pan, so I used a cast iron one. Pour three tablespoons of vegetable oil into it and place the frying pan on MAXIMUM heat.

Throw ginger and garlic and hot pepper into the pan. Literally for 10 seconds. Stir immediately.


When it comes to a dish like chicken noodles with vegetables, we usually think of either rice or udon noodles. With the first one everything is more or less clear. But the second one is a Japanese variety of wheat noodles. It is also popular among Russians because eggs are not used to prepare it. This means that noodles are lower in calories.
