How to cook minced meat balls with gravy in the oven

To save time, use ready-made mixed minced meat, also called homemade, or prepare it yourself. Grind the pork and beef pulp in a meat grinder in equal proportions and place the resulting minced meat in a bowl.

Peel the onion. Cut it into very small cubes, or grind half the onion together with the meat in a meat grinder. Add 1/2 of the onion slices to the minced meat, the rest will be used to prepare the gravy.

Add the chicken egg to the bowl. As in any other dish where minced meat needs to be given a certain shape, an egg is useful to ensure that this shape does not fall apart during heat treatment.

Season the ingredients in a bowl with salt and ground black pepper. Mix thoroughly. If desired, you can add ground chili pepper or paprika to the minced meat.

Form the minced meat into meat balls, giving them an oval shape, and roll them in flour.

Pour some vegetable oil into the frying pan and heat it. Fry the cooked meatballs on both sides in vegetable oil until a light golden brown crust forms. Place the fried cutlets in a baking dish, also greased with oil. Try to choose a shape that is not too large, so that in the future the meatballs will be almost completely covered with gravy.

Start preparing the gravy. Peel the carrots and chop them using a grater. Next, the carrots and remaining onions need to be fried in hot vegetable oil until soft.

As soon as the vegetable slices become soft, add tomato paste to the pan and pour in about 200 ml. boiled water. Bring ingredients to a boil over high heat. If you think the gravy is too thin, stir 1 tsp in a separate glass. starch and 3 tbsp. clean water. Pour the resulting liquid into the boiling gravy and mix thoroughly. You will notice how the sauce begins to thicken right before your eyes.

Pour the resulting gravy into a baking dish.

Place the minced meat balls with gravy in the oven, set the temperature to 200 degrees in advance. Simmer the dish in the oven for 20-25 minutes. After removing the pan from the oven, sprinkle the chops with chopped fresh herbs.

I don’t cook pure meat cutlets so often and usually exclusively for the male half, since the female half still prefers cutlets. But, to be honest, no one has ever given up the cue balls.

I make them differently each time, it all depends on the products I have on hand.

Today I bought everything specially, I knew that I would also cook for you. Therefore, this time I have the ideal selection of meat products: beef, pork and chicken breast.

I prefer to add less beef, and equal parts of pork and chicken. It is from minced meat in this proportion that the meatballs are the most harmonious, that is, meaty and juicy, but at the same time very tender.

For meatballs, I usually (like this time) buy a neck, both beef and pork. It is the most tender, with a sufficient amount of fat; the minced meat from it always turns out perfectly juicy.

The chicken breast can be replaced with thigh fillets or other parts of the chicken, it doesn’t matter. However, today the cut breast looked so tempting that I decided not to bother.

For 15 ready-made meatballs we will need:

  • 200 grams of beef neck
  • 400 grams pork neck
  • 400 grams chicken breast fillet
  • 1 onion
  • 1 raw egg
  • 2 cloves garlic
  • salt, ground black pepper to taste
  • crushed crackers for breading
  • butter for frying

For the gravy:

  • 2 tablespoons tomato paste
  • glass of hot boiled water
  • salt, granulated sugar to taste

I washed all the meat and cut it into equal pieces:

In an hour I start forming the balls. They are usually made round and slightly pressed on top so that they do not swell during frying. You can bread it in flour, but I prefer it in breadcrumbs:

It is recommended to fry them in butter, like all meat products, but sometimes I deviate from this rule and fry them in vegetable oil, although not today. Still, with butter they seem to turn out juicier and tastier!

I fry them for about ten minutes on each side until golden brown at a temperature of 200 degrees, and only then turn down the heat, cover the pan with a lid and let them simmer for another twenty minutes until done.

You can’t imagine how tasty, aromatic, incredibly juicy they are! They even squirt juice when you bite them. The best option for our men, agree!

For children, I cook meatballs in tomato sauce.

To do this, I dilute 2 tablespoons of tomato paste in boiled hot water, add some salt, sweeten it and pour it into the frying pan with the meatballs:
