One of my favorite childhood dishes is cottage cheese casserole. This dish was prepared by both mother and grandmother, and was a mandatory component in school and camp canteens every week. Years later, I wanted to cook such a dish for my family, but in order to add a “zest” to the usual cottage cheese casserole, I decided to diversify it with orange. In this case, part of the orange is an ingredient in the casserole itself, and from the remaining part you can make aromatic and tasty caramel.

  • Semolina should be allowed to swell; to do this, mix it with three tablespoons of sour cream and leave for 30 minutes.
  • After 30 minutes, turn on the oven, while all the ingredients are mixed, it should have time to warm up to 180-200 degrees.

  • Separate the yolks from the whites of the eggs.

  • Place cottage cheese, yolks, swollen semolina, zest into a blender bowl and grind. It is not necessary to achieve a paste-like state of the mass; small lumps are quite acceptable. It happens that I don’t want to bother with a blender, and then I just mix all the ingredients with a spoon, and the casserole turns out more loose.

  • Beat the whites with sugar and vanilla with a mixer until thick white foam.

  • Gently mix the curd mass and whipped egg whites.

  • Grease a baking dish (mine size is 18*18 cm) with butter and sprinkle a little with semolina.

  • Pour the curd mixture into the pan, and carefully spread the remaining two tablespoons of sour cream on top.

  • Transfer the pan to the preheated oven. I place a cup of water at the bottom of the oven; the water evaporating during the cooking process will prevent the bottom of the dish from burning.

  • Usually the casserole is cooked for 40-50 minutes, but I advise you to focus not on the time, but on the color of the top and sides of the casserole; it is ready if a tender golden brown crust has appeared.
  • Cottage cheese casserole is not served hot; it needs to cool before serving. I usually offer jam, condensed milk or sour cream for casserole.

    Adviсe:

  • I know that many housewives will want to add soda or baking powder to the casserole, wanting to make it fluffy, however, this is absolutely not necessary. When you add baking powder in the oven, the casserole will rise high and beautifully, but when it cools, it will fall greatly and turn into an unsightly curd pancake.
