Step 1: prepare the rice.

Pour the rice into a saucepan and fill the ingredient with running warm water. Mix the rice well with your hands and then carefully drain the water. Then we repeat the procedure several more times and so on until the water becomes clear. At the end, fill the component again with ordinary cold water so that the liquid covers the rice approximately by 1.5-2 centimeters and place the container on medium heat. After the water boils, turn the heat to low, cover the pan tightly with a lid and cook the rice for 15 minutes. Attention: The rice should turn out undercooked, since this is what will ensure that after preparing the main dish, the rice ingredient will turn out crumbly and absorb all the juices of the vegetable ingredients and spices. After the allotted time for cooking the rice has passed, turn off the burner and set the pan aside so that the component can cool to room temperature. And now we put the pan with a tightly closed lid in the refrigerator to brew overnight.

Step 2: prepare the onion.

Using a knife, remove the peel from the onion and then rinse the ingredient well under running warm water. Place the vegetable on a cutting board and cut it into two halves with a knife. Then chop each onion part into small squares, the size no more than 1 centimeter. Transfer the finely chopped component to a free plate.

Step 3: prepare the carrots.

Using a knife, peel the carrots. Then we thoroughly rinse the vegetable under running warm water and then place the component on a cutting board. Cut the carrots into squares about 1 centimeter in size and transfer to a clean plate.

Step 4: prepare the bell pepper.

We rinse the bell pepper under warm running water and then place the ingredient on a cutting board. Cut off the tail with a knife and remove the seeds. Rinse the vegetable again under running water to remove any remaining seeds. And now, using the same sharp tools at hand, we chop the component into small cubes. Attention: All chopped vegetables should be approximately the same size in order to fry evenly on all sides. Transfer the finely chopped pepper to a free plate.

Step 5: Prepare the green onions.

Wash the green onion feathers under running water. Afterwards, shake off the ingredient several times and transfer it to a cutting board. Using a knife, finely chop the component and then transfer it to a clean plate.

Step 6: Prepare the celery greens.

We wash the celery greens under running warm water. Place the ingredient on a cutting board and, using a knife, chop the greens. Finally, transfer the celery to a free plate.

Step 7: Prepare the ginger root.

Using a teaspoon, peel the ginger root. After this, lightly rinse the ingredient under running water and place it on a cutting board. Using a medium grater, grate the root and transfer the shavings to a clean bowl.

Step 8: prepare the garlic.

Place the garlic cloves on a cutting board and, using the tip or handle of a knife, lightly press down the ingredient so that you can easily remove the peel from it. Then lightly rinse the vegetable under running water. Using the same sharp tools at hand, finely chop the component and then transfer it to a saucer.

Step 9: prepare spicy rice with vegetables.

So, pour vegetable oil into a deep frying pan and place the container on medium heat. When the oil is hot, turn the heat to less than medium and add chopped garlic and ginger root to the pan. With constant stirring with a wooden spatula, fry them for 1-2 minutes. This must be done so that these components release all their aroma and juice, which will subsequently make our dish aromatic. After the allotted time has passed, add chopped carrots to the frying pan and mix everything well again using available equipment. Fry the carrots with other vegetables for another 3-5 minutes, not forgetting to stir everything with a wooden spatula from time to time. After this, put chopped onions, bell peppers and celery into a container. Having mixed all the vegetables well, continue to fry them for another 4-7 minutes until they become soft. Then add ground black pepper, soy sauce, salt and sesame oil to the vegetables in the pan. Mix everything well, but don’t be surprised when our mixture turns dark brown due to the sauce. When we add rice, we get a dish that is quite appetizing in color. Now add frozen peas to the container and mix everything again with available equipment. When the peas become soft, add semi-cooked rice to the pan and begin to constantly stir everything with a wooden spatula until the rice begins to acquire a soft brown hue. Attention: at the last stage you need to add salt, but before doing this, you need to taste the dish, since soy sauce itself is already salty. We still prepare the dish for 4-5 minutes and then turn off the burner. Add chopped green onions to the pan and mix everything again with a wooden spatula. That's it, the dish is ready!

Step 10: Serve the spicy rice with vegetables.

This method is slightly different from the traditional method of cooking spiced rice. Usually, rice cereals are first fried in spices, and then water is added and simmered until cooked. We will do the opposite: first we cook the rice, and after that we fry it in curry.

It is better to rinse rice cereals in cold water, although one often hears about the pointlessness of this action. However, practice shows that washed rice actually turns out more crumbly. At first the water will be cloudy.

However, it will soon become completely transparent.

Now you can start cooking. Pour rice into a tall saucepan and add water. It should be twice as much as cereal. The rice should be cooked but still crumbly. Try a few beans. If they are not hard and do not stick to your teeth, you can remove the pan from the stove.

We rinse the finished rice again in cold water (put it in a colander and put it under the tap) to get rid of the stickiness we now need.

Heat a frying pan and heat the butter in it.

Add curry to boiling oil. Lightly fry the spices until a characteristic smell appears, usually a couple of minutes is enough.

  • 2 tbsp. l. butter

How to cook spicy rice:

Rinse the rice well, soak for 15 minutes, then drain in a colander for 15 minutes.

Pour water into a saucepan, add 1.5 teaspoons of salt and place over high heat.

Prepare the seasonings

Heat ghee or butter in a medium saucepan and fry 1 tsp. cumin seeds (jeera) and 1 tsp. pepper

When the cumin (cumin) seeds begin to darken, add cinnamon (1 tsp), ginger (1 tsp), cardamom (3 crushed pods) and nutmeg (0.5 tsp). Stir quickly, add rice and continue stirring.

After 1-2 minutes, when the rice is slightly fried, pour in boiling water, cover the pan with a lid and reduce the heat to low.

Without lifting the lid or stirring, cook for 15-18 minutes until the rice has absorbed all the water. Remove the lid and keep the pan open over low heat for a few minutes.
