- flour – 7.5 cups
- water – 800 ml
- vegetable oil – 350 ml
- salt – 2 teaspoons
- sugar – 1 glass
- fresh yeast – 25 g
- vanillin – ½ sachet

For the filling:
- dried apricots – 500 g
- orange – 1 pc. (large)
- strawberry jam – 1 glass

Cooking Lenten pies with dried apricots

1. Prepare the dough. To do this, dissolve the yeast, ½ cup of sugar and flour in warm water so that the dough turns out like liquid sour cream. Place the dough in a warm place for 1 hour, covered with a napkin.

2 .Then mix the dough with vegetable oil, sugar, salt and vanillin. Gradually add sifted flour to the mixture and knead the dough. It should turn out soft.

3. Place the dough in a deep container near a heat source for 1 hour and cover with a towel. The dough, increased by 2-3 times, should be kneaded and left to rise again.

4. While the dough is fermenting in a warm place, prepare the filling. Remove the zest from the orange. The white layer is bitter, so peel it off and throw it away.

5. Pass the orange, zest, dried apricots and jam through a meat grinder and mix the finished filling.

6. Knead the risen dough and divide it into equal pieces (about 80 g).

7. To make it easier to work with the dough, grease the surface of the table with vegetable oil and place pieces of dough on it.

8. Flatten each piece into a flat cake and make longitudinal cuts on two opposite sides with a knife, not all the way through.

9. Place the filling in the middle and fold in the cut edges one by one, forming an open pie. Pinch the ends, leaving only the middle open.

10. Grease a baking sheet with vegetable oil and place the pies on it.

11. Leave to rise near heat for 30 minutes.

12. Bake in an oven preheated to 220 degrees for about 20 minutes until golden brown.

13. Remove the finished pies and cover with a towel for 15 minutes to soften.

  • Add sunflower oil, salt to the mixture obtained above and mix everything well again.
  • Steam the dried apricots, dry them and cut them.
  • Add a little flour to the main mixture and mix again. Then add baking powder, nuts, dried apricots, vanilla sugar and soda (quench with vinegar first).
  • Mix everything well, and then add flour to the required level. Your dough should look like pancakes.

Pie filling:

  • 1 kg dried apricots
  • 150 grams of sugar

In order to prepare the dough for a pie with dried apricots, I dilute yeast in warm water.

Pour the diluted yeast into 350 grams of flour.

I bake this pie very often, even not during Lent, because... I don't like it very much
rich and moderately sweet pastries...

To prepare the pie, we used the recipe for quick dough “Dough in 15 minutes”, well known on culinary sites.
I have been using it with minor modifications for a long time, for any baking,
it rises well and always turns out!!!



"Basic recipe "Dough in 15 minutes":
3 glasses of water, 100 g of regular yeast, 4 tbsp. granulated sugar, 8 cups flour, 1 cup vegetable oil, 1 tsp. salt. This is a large dose, enough for 3-4 round pies.
Incl. sourdough dough: 3 cups warm water + 4 tbsp. sand + 6 tbsp. flour (slightly heaped) + yeast.



For 1 round pie (shape d= ~ 26 cm), 1/4 (or 1/3) of the basic recipe is enough.

So, for 1 round pie today I take 1/4 of the basic recipe, namely:
0.75 cups warm water, 25 g pressed (raw) yeast, 1 tbsp. granulated sugar, 2 cups flour, 1/4 cup (that's 6 tbsp) vegetable oil (I use sunflower), a little salt.
Incl. sourdough dough: 0.75 cups warm water, yeast, 1 tbsp. granulated sugar, 1.5 tbsp. flour.



Preparation:
*in a bowl, mix 0.75 cups of warm water, yeast, 1 tbsp. granulated sugar, 1.5 tbsp. flour. Stir, stand for 15 minutes until everything rises.
When finished, add salt and vegetable oil and mix.
*Immediately pour this mixture into the sifted flour.
Knead (~5 minutes, the dough will be elastic and not sticky).

All. The dough is ready. You can bake. This is in the original recipe. But I still let the dough rise once, knead it and immediately form the products on a baking sheet, let them sit in a warm place for a while, after doubling their size, bake (~ 30 minutes at 190 °C).

Forming the cake:
Place the prepared dough, without rolling it out, into a greased form (I used baking paper), stretch it with your hands along the bottom of the form, forming a side + dried apricot filling + chopped almonds (more if desired) + sprinkle with streusel (today I have a lean streusel).

I let it rest a little in a warm place (I have a heated oven), after doubling it
size - bake for ~ 30 minutes at 190 °C.



Filling for 1 round pie:
*200 g of dried apricots is ~18-20 pcs (pre-soak it, cut it with kitchen scissors into cubes into ~6-8 pieces, depending on the size, or into strips, like I had today, simmer a little in water, you can add butter ~ 5 minutes), I used to grind dried apricots to a pulp, but now I only do this, it’s soft enough and doesn’t spoil the taste of the pie,
*1- 1.5 tbsp. granulated sugar (I don’t add it, because I use large and fleshy dried apricots, and they are usually sweet),
*1 tbsp. vitamin "Lemon rolled in sugar" (gives a very tasty sourness in the pie) -

*1-2 tbsp. chopped almonds (mix the filling with almond nuts or put nuts on top of the filling).



Lenten streusel for 1 round pie:
4.5 tbsp. flour + 3 tbsp. sand = mix, only then + ~ 4 tbsp. vegetable oil (I sunflower) - add it gradually 1 tablespoon at a time, do not overfill, otherwise the very oily streusel will be difficult to sprinkle on the pie. You can make more streusel.

Note:
Before presenting this pie, I tested this streusel for some time in other baked goods, because... I didn’t have an exact recipe, and with it the top is not as crispy as with butter.

Therefore, I still prefer streusel with butter:
3 tbsp. flour + 2 tbsp. sand + 40-50 g butter.
This is a small dose; for those who like more sprinkles, I advise you to increase it by ~1.5 times.
