Low-calorie pancakes with rice flour. Banana pancakes made from rice and corn flour (gluten free) with homemade banana sauce

I have a bag of rice flour lying around in my closet. Actually, I bought it to sprinkle on proofing baskets to prevent the bread from sticking. But for a number of reasons I don’t bake bread yet, and the flour disappears. I came across a recipe for pancakes with this flour and decided to try it. And this is what happened.

1 egg
130 g rice flour
220 ml milk
75 g wheat flour
1 tsp baking powder (I add baking powder according to the weight of flour according to the instructions on the package, it varies)
1 tbsp. sugar (or to taste)
pinch of salt

I have a double portion in the photo, because there were a lot of eaters

In a bowl, mix rice and wheat flour, sugar, salt, baking powder

Separately whisk eggs with milk

Combine the flour mixture with the liquid mixture and knead the dough. It turns out quite thick. Leave for 15-20 minutes.

The recipe didn't say anything about oil, but I still poured a tablespoon of vegetable oil into the dough before frying the pancakes.

I bake all my pancakes in cast iron pans and grease them with a piece of unsalted lard. The fire is not very big. For 1 pancake I poured 2/3 of a ladle of batter.

Pour in the dough and wait until the bubbles stop tightening (it was written 1 minute, but it turned out less for me, use your pans as a guide)

Turn over and fry until done. I fried it quickly, so I advise you not to move too far from the frying pan.

The finished pancakes turn out porous, but quite dense, it may even seem that they are a little dry. Therefore, I would advise serving them with some fairly liquid sauce, in the original it was cherry. I didn’t have cherries, I had apples boiled with sugar, sour cream and maple syrup (not included in the photo)

In general, they turned out to be interesting pancakes, everyone liked them

And today I’ll just share a great recipe for banana pancakes, which I now cook almost every day)) If you manage to buy rice flour, don’t hesitate, grab it right away! Her baked goods are so delicious! In combination with corn, it will delight you with a wonderful breakfast, which both adults and children will be happy about)) If you don’t have such flour, it doesn’t matter, just replace it with regular one)
I’ll also give you a recipe for a cool homemade banana sauce, which takes just a minute!)) Moreover, it will be an excellent replacement for store-bought sauces with additives! And here, everything is naturel, as they say)) soft, sweet, thick... mm... finger-licking good!

Ingredients:

1 large ripe banana
150 ml milk
110g yogurt without additives (or kefir)
1 tbsp. without a pile of cane sugar (not necessary, but it tastes better with it))
100g rice flour
100g corn flour
2 eggs
1 pinch baking powder

1) Grind the banana in a blender into puree. Add 2 eggs and sugar to it, and blend again for about a minute - you will get a fluffy, thick mass.

2) Add yogurt and milk, whisk until smooth.

3) Add both flours and baking powder, and whisk everything again until smooth.

4) Heat the pan well, then reduce the heat to medium, and spoon out future pancakes. As soon as bubbles appear, wait a couple more seconds and turn over.

Banana sauce:

1 ripe banana
2 tbsp. with a heap of yogurt without additives
I usually take milk “by eye”, but approximately it is about 40g (weighed on a scale))
(optional, add 1 tsp maple or agave syrup or honey)

Place all the ingredients in a blender (I put it in a tall blender bowl and use an immersion blender), blend for about 1 minute until completely smooth. Then pour it into a gravy boat and serve it with pancakes, waffles, or whatever))

Delicious pancakes! Breakfast that is good for your figure.
Ingredients:

  • oat flakes - 1 tbsp.
  • milk 1% - 1 tbsp.
  • whole grain flour - 1 tbsp. l.
  • eggs - 1 pc.
  • slaked soda - 1 tsp.
  • sweetener - to taste.

Preparation:

We mix oatmeal with 1/3 cup of milk. Beat the remaining milk with the egg (until foamy), add sweetener, and beat. Beat oatmeal with milk well, add milk beaten with eggs and sweetener, a tablespoon of flour and beat everything again, then add slaked soda. Leave for at least 40 minutes.
Then mix with a large spoon from bottom to top until smooth. Fry in a heated frying pan (the first time we grease the frying pan with oil, fry all the rest without oil.
Fry until bubbles appear, turn over and fry for another 8-10 seconds.

2. poppy seed pancakes.


Ingredients:

  • eggs - 1 pc.
  • kefir 1% - 100 ml.
  • flour - 1.5 tbsp. l (we have rice).
  • poppy seed - 1 tsp.
  • sweetener - to taste.

Preparation:
Mix everything and fry in a hot non-stick frying pan without oil on both sides.

3. banana pancakes.


Ingredients:

  • banana - 2 pcs.
  • kefir 1% - 250 g.
  • whole grain flour - 1 tbsp.
  • egg - 1 pc.
  • baking powder - 1/2 tsp.
  • vanillin - to taste.
  • sweetener - to taste.

Preparation:
First, mash the bananas with the addition of eggs. Add sweetener, baking powder and vanillin to the resulting mixture. Mix thoroughly. Then add flour in portions and mix. We must achieve the consistency of thick sour cream. Heat up the pan and prepare our pancakes. We fry them without oil.

4. quick pancakes with yogurt.


Ingredients:

  • natural yogurt - 300 g.
  • whole grain flour - 160 g.
  • egg - 1 pc.
  • vegetable oil - 1.5 tbsp. l.
  • lemon juice - 1 tsp.
  • soda - 1 tsp.
  • salt - to taste.
  • sweetener - to taste.

Preparation:
These pancakes can also be called pancakes, since they are prepared with a minimal amount of oil. Place 300 g in a bowl. Yogurt (12 tablespoons), add a pinch of salt, sweetener and egg. Pour a level teaspoon of soda with lemon juice and stir thoroughly. Add to the yogurt, add a tablespoon of oil and stir with a whisk or fork. Sift 160 g into a bowl. Flour and mix until smooth. All! You can start cooking. Turn on medium heat and grease the pan with a thin layer of oil before preparing the first pancakes. Use a spoon to place the dough at a distance from each other; the shape of future pancakes can be corrected with the same spoon. For thin pancakes, 1.5 tablespoons will be enough; if you want it more fluffy, you can put 2-3 tablespoons of dough for one pancake. Cook for about two minutes until golden brown and bubbles begin to pop on the surface of the dough. Carefully flip the pancakes using a spatula, reduce heat and cook for another 1-2 minutes on the second side. Cook the whole batch like this (no need to add any more oil.

5. carrot pancakes.


Ingredients:

  • carrots - 1 pc.
  • kefir 1% - 150 g.
  • oatmeal - 250 g.
  • egg - 1 pc * soda - 2 g

preparation: beat an egg, add grated carrots, pour in heated kefir, stir, add soda, flour, stir and you are ready to bake. Carrot pancakes can be served hot or cold, with natural yogurt or kefir. Bon appetit!

Beat the egg with milk, add all dry ingredients, beat thoroughly. (If you use sakhzam in tablets, they must first be crushed)

Fry in a preheated non-stick frying pan without adding oil. (1-1.5 minutes on each side).

You will need:

  • 2 bananas;
  • 2 eggs;
  • 1/3 cup low fat milk;
  • 4 tbsp. oatmeal;
  • a little vegetable oil.

First the bananas are chopped. Beat the eggs well and combine with the puree. Gradually add flour so that there are no lumps. Add milk. Place pancakes on a frying pan with a spoon or a small ladle and fry for 2-3 minutes on each side. The result is tall, fluffy pancakes. They are best served hot.

In this recipe, oatmeal can be replaced with oatmeal, then the pancakes will turn out more textured. They are lightly crushed with a blender or scrolled in a coffee grinder, poured with milk to swell, and combined with other products. The taste of these pancakes is extraordinary, as is the structure.

To make oatmeal pancakes, you only need 3 ingredients:

  • oatmeal - 150 g;
  • egg;
  • milk - 100 ml.

First you need to grind the flakes to get flour, and a blender will help with this. If you don’t have a blender, then you can use a coffee grinder or buy ready-made oatmeal. Add warm, but not boiled milk to the oatmeal, mix everything thoroughly and leave for 3 minutes.

Meanwhile, lightly beat the egg in a separate bowl until smooth. Then it should be added to the standing oatmeal-milk mass and mix everything thoroughly - the dough is ready. You need to fry oatmeal pancakes in a dry, heated frying pan, preferably one that has a non-stick coating. To make the pancakes even, it is better to carefully spoon out the dough, forming a circle.

First, the tortilla is fried on one side for 2-3 minutes until bubbles appear on its surface, then turned over to the other side, covered with a lid and fried for another 1 minute. As a rule, the entire cooking process takes 20-30 minutes. You can serve oatmeal diet pancakes with strawberries, raisins and honey. They go well with tea, coffee or milk.

Carrot diet pancakes

To make carrot cakes, you need:

  • Sweet and juicy carrots;
  • Low-fat kefir;
  • Oatmeal;
  • Soda;
  • Egg.

As usual, beat the egg and add the finely grated carrots. Pour in warm kefir and mix well, add soda, add oatmeal, knead the dough thoroughly. We don’t add sugar, because carrots are already sweet. Serve carrot pancakes with light sour cream or yogurt.

Very often my family asks me to cook pancakes for breakfast. I myself, I admit, love them with all my soul, so I bake with pleasure not only on weekends, but also on weekdays. Due to the fact that there is very little time before work, I try to cook according to already proven, simple and easy recipes. And the first on my list are the so-called pancakes. These are thick pancakes that are popular for breakfast in America, and they have taken root well here too. I used to always cook pancakes according to the classic recipe, but recently I started experimenting. This is how the recipe for corn pancakes was born, which the whole family loved.   • 1. Break an egg into a bowl, add sugar and salt. Beat with a whisk until foam appears.
  • 2. Now add kefir to the egg mass and mix well. I like to use kefir with a small percentage of fat content, I noticed that it makes pancakes taste better.
  • 3. Add corn and rice flour, as well as baking powder. Our task is to thoroughly mix all the contents of the bowl so that the mass turns out to be quite thick, smooth, and without lumps.
  • 4. Lastly, add sunflower oil and quickly mix the pancake dough again. We leave it to stand for literally 3-5 minutes. This is necessary so that the corn and rice flour separate properly.
  • 5. In a well-heated frying pan with a non-stick coating, fry small pancakes on both sides without oil. You can cover it with a lid to make it even more fluffy.
  • 6. Place the finished corn pancakes in a traditional stack and decorate to taste. I like to coat each pancake with honey or chocolate sauce, it turns out to be a kind of mini-cake. Tasty and impressive!

You can surprise your family with American pancakes made from rice flour. They turn out very appetizing, with a golden crust and a light porous crumb. The overseas treat is fried in a dry frying pan, and melted butter is added to the dough. This gives it tenderness and a special taste. The absence of gluten allows you to include dessert in your diet.

Ingredients:

  1. rice flour – 160 g;
  2. milk – 250 ml;
  3. chicken egg – 1 pc.;
  4. sugar – 20 g;
  5. soda – 0.5 tsp;
  6. salt – 1/3 tsp;
  7. vinegar 9% - 1 tbsp. l;
  8. butter – 30 g;
  9. vegetable oil – 1 tbsp. l.

PP pancakes made from rice flour - recipe

In a bowl, combine the chicken egg, salt, and granulated sugar. If the egg is large, then one category C1 or C0 is enough. If it is small, then you need to take two eggs of category C2.

Adjust the amount of sugar according to your tastes.

Beat the egg with sugar, add milk. You can use kefir or even sour cream.

We extinguish the soda with vinegar and add it to the kefir-egg mixture.

Add rice flour. It can be purchased or prepared at home from washed and dried rice. In the second case, you need to sift it.

Mix everything and add melted butter. It must be melted in any convenient way and cooled before use.

Mix everything until smooth.


Heat a frying pan that has been greased with vegetable oil, lay out a portion of the dough, distribute it so as to obtain a thick pancake with a diameter of 15 centimeters. Fry for a minute until the bottom turns golden.

Real pancakes, as mentioned, are fried in a dry frying pan. But I like it with butter.


Flip the pancake over using a spatula and fry for another minute or less. The time depends on the heating power and the thickness of the product.


Place the finished rice flour pancakes in a stack.
