Clean the hare carcass from films and marinate. Then chop it into pieces, dry, fry until golden brown and transfer to a cauldron, add chopped roots: carrots (1 pc.), parsley (1 pc.), celery (0.5 pcs.).

Pour a little broth and dry wine (100 g) into the cauldron, add chopped tomatoes (2 pcs.), bay leaf, salt and pepper to taste and simmer covered in the oven for 35-40 minutes.

Clean the hare carcass from the films, cut into small pieces and soak in cold water for 4-5 hours. Place 150 g of lard in a cauldron and render out the fat. Remove the cracklings, and fry chopped onions (5 pcs.) in the resulting fat until golden brown.

Preparation
