Unlike apples, pears this year decided not to upset me and gave me a simply luxurious harvest. And that’s why I make homemade pear jam - tender, aromatic and very tasty! In my cookbook I have several successful recipes for pear jam in slices, but in addition to the traditional proven ones, I decided to make a new one - fried pear jam with lemon. Why fried? Yes, because it is not cooked in the usual way - in a frying pan. That is, you don’t cook it for a painfully long time, but quickly fry it in a frying pan.

You can make very tasty pear jam in just half an hour. The only disadvantage of this recipe is that you can’t prepare a lot of this jam at once; the quantity is severely limited by the capacity of the frying pan. But everyone has their shortcomings, right? In a way, this is even convenient - you definitely won’t get tired while you prepare a small portion of jam, and this process will only be a joy for you.

Ingredients for a frying pan with a diameter of 26 cm:

  • 0.7 kg pears;
  • 250 g sugar;
  • juice and zest of half a lemon (medium size).

How to make pear jam in a frying pan:

For jam we need firm but ripe pears. Peel them and cut into arbitrary small pieces about 0.5 cm thick.

As I already said, this is a recipe for pear jam with lemon: we will need both zest and juice. Pour pears, sugar and lemon zest into a dry Teflon-coated frying pan and pour in lemon juice. Mix carefully.

Place the frying pan over medium heat and bring to a boil – the pears will release a lot of juice at once and the mass will become liquid. Skim off the foam and reduce the heat to low.

Cook the jam, periodically removing the foam, for 25-30 minutes, so that it becomes thicker and the color becomes darker (at the beginning of cooking, the pears were completely white).

Immediately place the finished jam into dry, sterilized jars. Like most jam recipes, this is pear jam - without sterilization. Therefore, we simply seal the jars with lids. Turn the jars upside down and let them cool completely.

You can store this jam at room temperature, but always in a dark place.

At the same time, it is better to make jam from pears of the same variety. In this case, all the pieces will be cooked at the same time, and they will look the same.

If you cut the pears, but it is not possible to prepare jam immediately after, then they need to be placed in a salty solution (10 g of salt per 1 liter of water). This will prevent them from darkening. Before cooking the jam, place the pears in a colander to drain excess liquid.

1. Cut 3 pears in half, remove the seed box with a spoon, and peel each half.

  • 2 or 3 tbsp. l. Sahara;
  • 150–170 ml of clean water;
  • half a lemon;
  • 30–40 ml of light grape juice.

To prepare, you need to melt sugar in a frying pan to make caramel. Place the frying pan over very low heat, add butter, add sugar and squeeze out the juice from the lemon.

While the caramel is preparing, you should prepare the fruit. Wash the pears under running water, cut them and remove the seeds. You can pour lemon juice over the cut area to prevent the fruit from darkening.

Hot water mixed with grape juice is poured into the frying pan. Pour in the liquid carefully to avoid splashing. After boiling, the pears are placed on the bottom of the frying pan so that their cut is from the bottom. The pears should boil in this syrup for 5 or 7 minutes. After this, turn the halves over and let them boil for another 5 minutes. The syrup will become thicker as it cooks. After the sauce thickens, turn off the heat and leave the pears in the pan until they cool completely.

You need to take:

  • 2 or 3 small firm pears;
  • 3 tbsp. spoons of granulated sugar;
  • 20 grams of butter;
  • 130–150 ml of water.

In a certain order, you need to start preparing the delicious dessert. Melt the sugar in a small saucepan. After it turns into caramel, you need to add oil to the container. Mix the mass well until it becomes homogeneous.

Peeled and halved pears are placed in caramel and filled with water. It is better to take water that is already hot and pour it in little by little to avoid splashing.

Boil the cut fruits in caramel on low heat for 5-7 minutes, then turn the pears over to the other side and boil for the same amount of time. You can check the readiness of the fruit with the sharp tip of a knife. The knife should pass freely through the pears. If you chose very juicy pears for the dish, the caramel may remain liquid and not thicken. In this case, the pears are pulled out and the syrup is left to cook until it becomes thicker.

To prepare this chocolate dessert with a divine taste, you will need to boil the pears in caramel according to the above recipe, and then knead the dough.

Required ingredients for the dough:

  • flour – 250 g;
  • cocoa powder – 70 g;
  • a pinch of baking soda;
  • butter – 60 g;
  • sugar – 150–170 g;
  • chocolate – 100 g;
  • eggs – 2 pcs.;
  • milk – 100 ml;
  • vanilla.

To prepare chocolate dough, you need to immediately mix the dry ingredients in one container: flour, soda and cocoa powder. In another container, beat the wet ingredients: butter, sugar, eggs, pre-melted chocolate, milk. Pour the dry mixture into this mass and mix thoroughly using a mixer. Vanilla is added at the end.

The pear for this pie should not be cut into slices, as in previous recipes, but into thin slices, and their thickness should be less than 5 mm. These pieces are very thin, so they need to be filled with caramel directly in the mold where the cake will be baked.

According to the recipe for such a pie, you need to take 2 large pears, which are cut into thin slices, and place them immediately on a baking sheet covered with parchment paper. Caramel is poured over the pears so that it completely covers the slices.

Dough:

  • butter -120 g;
  • sugar – 200 g;
  • 2 large or 3 small eggs;
  • milk – 100 ml;
  • flour -180 g;
  • 1 tbsp. l. baking powder;
