The classic version of the dish is apple. For its preparation, take green apples in the amount of 600 g, three teaspoons of agar-agar, two teaspoons of stevia or honey, two eggs and 100 ml of water.

  1. Agar-agar is kept in cool water for 30 minutes. At this time, the apples are peeled and seeds are removed, after which they are placed in the microwave and baked for 5 minutes.
  2. Hot fruits are whipped in a blender to make a homogeneous mass. Soaked agar-agar, stevia or honey is added to it.
  3. The mixture is whipped and laid out in a metal container, placed on a slow fire and brought to a boil.

Egg whites are beaten until white peaks appear, mashed potatoes are added to them in small portions, the shaking process continues. With a confectionery syringe, the finished consistency is laid out on parchment and placed in the refrigerator overnight.

Things are even worse with sugar: sometimes it is called a drug, sometimes it is extolled as fuel for the brain, sometimes carbohydrates from snickers are bad, and from pears they are good. This, of course, is not the case. Read and remember: all carbohydrates are sugars.

And if you do not suffer from diabetes, obesity and insulin resistance, then sugars enter the blood faster or longer (by the way, the difference turns out to be minimal - it doesn’t matter to you in the context of health, let alone weight loss.

The whole point is to find the middle ground. We do not infringe on the claim that plant-based, minimally processed, varied foods are a “better” diet for you and your health than fast food and confectionery.

However, we want to convey to people that there is no need to be afraid and demonize food groups: “in a drop there is medicine, in a spoon there is poison”, remember this principle. So the question of whether marshmallows are harmful or useful is generally redundant for us.

When losing weight

The composition of marshmallows is as follows: berry and fruit puree, sugar, egg white, thickener (gelatin, pectin or agar-agar). Sugar gives your brain nutrition and energy, fruit puree provides vitamins, egg white is the most absorbable protein a priori, and pectin is an extremely healthy type of fiber. However, the downside is that with a calorie content of 310 kcal, marshmallows have 79 gr. sugar, only 1 gr. protein and 0 gr. fat.

This airy and sweet marshmallow will have the same taste, but it will not have the main thing - pure, refined sugar. We advise you to feel free to experiment and try creating chocolate and coconut marshmallows - the main thing is that you taste delicious!

  • honey - to taste (½ - 1 tablespoon),
  • water - ½ cup,
  • agar-agar or gelatin - 10 gr.

Important: different companies produce different agar-agar and you need to adapt to a specific type. Sometimes agar-agar needs to be pre-soaked, sometimes it needs to be boiled right away, the cooking time is also different - each manufacturer indicates his own.

How to cook

    To obtain the required amount of apple puree, you need to take about 2 times more by weight. Unpeeled apples should be cut in half, core removed and baked in the oven. After baking, the skin will come off easily, and the pulp will be easier to grind into a smooth puree. We create a puree and leave to cool. After the cold puree, add honey to taste.

    Lightly grease a baking dish with oil. Then cover with parchment paper (enough so that the edges of the paper hang down on one side) and grease it with oil.

    Pour ¼ cup of water into a small bowl (or the bowl of a stand mixer with a whisk), and pour the agar/gelatin into the water. Now set it aside until the substance dissolves.

    Place the honey and the remaining ¼ cup of water in a small saucepan. Boil everything over medium heat.

    Using a hand mixer, very carefully at low speed, pour and mix the puree into the gelatin mixture, pouring the hot syrup into the bottom of the bowl. After stirring the mixture until smooth, add vanilla and increase the speed to high.

    Advice: you can add a small amount of food coloring to make the marshmallows a nice and unusual color!

    Now beat the whites into a stiff foam and begin to add applesauce with gelatin in a spoon, without ceasing to beat. Diet marshmallows at home will turn out tender if the mass is well whipped and airy enough. Beat for 12-15 minutes, or until the mixture is thick and fluffy (it will look like marshmallows).

    Now you need to drop marshmallows with a spoon on a sheet covered with parchment and leave to harden. You can also form fluffy halves using a pastry syringe or bag. Another option: spread the mixture in an even layer and use different molds to “cut” cool marshmallow shapes:

    Important: agar-agar begins to harden at room temperature, but it can also be taken out in the cold, but you should be patient: marshmallows can harden for a long time - up to 12 hours.

We put the strawberries in a saucepan (frozen, you can not defrost), pour in a little water. Put on fire, bring to a boil and cook for 2-3 minutes. Remove from heat and blend with a blender. Cook the syrup to a temperature of 110 degrees. In parallel, add protein to the puree and beat with a mixer until a fluffy mass is obtained. Without stopping whisking, gradually pour in agar syrup in a thin stream. Whip until a meringue-like mass is obtained. We shift the mass into a pastry bag with a nozzle and place the marshmallows on parchment paper or a silicone mat. We leave the marshmallow at room temperature overnight or at least for 5 hours - during this time it should dry out.

Ingredients:

  • * frozen strawberries 200 g.
  • * gelatin 15 g.

What is marshmallow

Marshmallow is a confectionery product belonging to the genus sugary. This kind of marshmallow has an ancient origin. Historians claim that it appeared on the territory of the Middle East, Western Asia, and Southern Europe. When preparing, egg white and granulated sugar were used as the main components. Cooking method

  • Transfer the marshmallow mass to a pastry bag with a nozzle and deposit on parchment paper. I got 1 large baking sheet, maybe more, I'm just getting used to the new assistant, and I twisted the whisk after cooking. In general, this can be done with a conventional mixer.

You will need:

  • Boil applesauce over low heat or in the microwave until 100g. I used baby puree without sugar, you can take 4-5 apples, bake them, puree them, rub them through a sieve - the result will be the same.
  • Soak agar in 60g. water, set aside.
  • We defrost the currants in the microwave, puree, wipe through a sieve (about 200g will remain), boil down to 80g.
  • We put a saucepan with currant puree, agar and 70g on the stove. erythritol, bring to a boil over low heat.

    The mass is very thick, so be careful not to burn. Since I don't have a thick-bottomed saucepan, I just put a regular one in a pan and boil in it. It is very convenient to do this for making custard, for example.

  • Beat the protein, add 30g. erythritol, beat to soft peaks.
  • Add the cooled applesauce to the protein, beat.
  • After a couple of minutes, add a little thick berry syrup, do not pour on the whisks of the mixer! Beat until stable peaks.

    The mass begins to thicken. I advise you to put the container on your knees to control the temperature - the agar freezes at room temperature. As soon as the container is no longer warm, it's time to plant marshmallows.

  • We shift the mass into a pastry bag and deposit on baking paper or a silicone mat. You need to do this quickly!
  • We dry at room temperature overnight, fold the halves one to the other, sprinkle with powder or starch with a brush, if desired. Enjoy homemade healthy marshmallows.

So, as a result, a contented thick white mass came out. The molds must be lubricated with oil so that the marshmallows, when ready, can be safely removed without damaging their appearance. After oiling, it is necessary to lay parchment paper. But if you have silicone molds, you won't need it.

After this procedure, it is already possible to pour the mass into molds and put it somewhere for a day in the refrigerator. After this time, you can already get the molds. And you need to take out the marshmallow with a knife. Next, the finished diet marshmallows must be completely rolled in powdered sugar and you can already start the meal.

Diet marshmallow with apples

Perhaps, it is worth considering another way to prepare dietary homemade marshmallows. It will be much different from the one described above.

For cooking, you need to take a large apple, weighing about 200 grams, and divide it into four parts. The core, of course, needs to be cut out. The apple needs to be baked in the oven for half an hour, while the temperature should be 180 degrees. At this time, you need to take two egg whites and, together with 10-20 grams of honey, beat with the help of, again, a mixer.

You can already take out the baked apple from the oven and knead it with a fork. Add 5 grams of gelatin to the water and heat in the microwave. After all the steps, it is necessary to mix all the masses together, pour into molds and already put directly in the refrigerator. You have to wait about two hours for it to be ready.

An alternative would be another recipe for diet marshmallows at home. According to him, it is necessary to take agar in the amount of one and a half teaspoons and dissolve in cold water in the amount of 100 milliliters. Again, you need to take apples, but already two, cut into several pieces, remove the core from them and bake again, but only for five minutes. Next, you need to puree them with a blender.

Agar should be heated for a minute, stirring it constantly. With the addition of applesauce, boil and remove from heat. Next, you need to take two proteins, beat them well and, without stopping whipping, gradually add a mixture of agar and apple. When everything is one, it is already possible to lay out in molds and leave to cool at room temperature.
