How to choose fish?

Only the right catfish will have excellent taste. In order for the dish to turn out exquisite and tasty, the purchasing process should be approached with full responsibility.

It is best to purchase a frozen piece that is cut from a whole fish. If the family is large, then you can take a whole catfish. Before purchasing, be sure to examine the appearance of the fish to ensure its suitability. Close attention is paid to the appearance of the eyes. Ideally, the pupil does not differ from the pupil of a living fish. If the eyes seem dark or cloudy, then it is better to refuse to purchase such fish.

There should be no stains or mechanical damage on the skin of the zubacti. If the fish has been defrosted repeatedly, the structure of the meat becomes uneven and loose. It will flake when cooked.

If you buy fresh catfish, you can keep it in the refrigerator for no more than 24 hours. Stores sell frozen steaks that can be cooked not only on the grill, but also steamed. Preference should be given only to fish that have little ice on the surface. Smooth and snow-white pieces are considered the most delicious. Close attention is also paid to information about the manufacturer and brand.

In order for the dish to turn out tasty and refined, you should carefully study the intricacies of its preparation.

There are many such secrets.

  1. To ensure that the fish remains whole during cooking, it is best to cut it into several large pieces.
  2. Before frying, carefully roll the layers in flour or breadcrumbs.
  3. If catfish is baked in foil, you need to get rid of the top layer - the fish will brown better.
  4. Lemon juice is an excellent solution for getting rid of unpleasant fishy odor.
  5. The product must be defrosted only at room temperature. It is better to avoid quick defrosting in the microwave, as this will negatively affect the taste of the finished dish.

The main method of preparing catfish is frying. At first glance it may seem that this is quite easy. However, this process is fraught with unpleasant surprises. Violation of cooking technology or low temperature can completely ruin the taste of catfish.

To avoid this, you need to follow certain rules.

  1. If frozen fish is used, it must be completely defrosted before cooking. Otherwise, during the frying process, excess moisture will be released, causing the meat to begin to separate.
  2. It is better to salt fish not using the usual method, but using a saline solution. Thanks to this, the product will “set” with salt better and faster. In addition, the steak pieces will not lose their shape in this case. The solution is made as follows: for 1 glass of water you need to take 2 tablespoons of salt. The fish is kept in this brine for about 25 minutes.
  3. To keep the steak pieces in shape, use a thick batter. Its main purpose is to enable it to seal the fish tightly.
  4. Before you start cooking, you need to warm up the pan properly. As for the amount of oil used, opinions differ. Some chefs recommend frying fish in a large amount of oil, while others prefer to do without it. You can use a non-stick frying pan to cook catfish.
  5. Fried catfish is usually served with salads or side dishes. For the latter, you can use rice or potatoes.
  6. The catfish will turn out delicious, even if you just boil it. It should first be thawed and kept in brine for some time. You can boil it either in a pan or steam it.

In order for the dish to be as tasty as possible, you need to adhere to certain rules.

  1. If the catfish will serve as a first course, then it should be immersed in cold water and put on low heat. The basic rule for preparing yushka is that it should not boil.
  2. For other dishes, the catfish must be in boiling water. Cooking time varies depending on the size of the fish. This usually takes no more than 10 minutes.
  3. The process of steaming catfish takes a little longer – up to 20 minutes. However, this method of preparation allows you to preserve much more useful vitamins than after boiling.
  4. In boiling broth, catfish can emit a distinct fishy odor. You can get rid of it with herbs or lemon.
  5. If blue catfish meat is to be used in a salad, it should be dried with a paper towel before slicing. Excess liquid will have a bad effect on both the taste and appearance of the dish.

Boiled catfish is considered the ideal solution for a light and healthy dinner. This is a great option for making fish salad.
