Victoria pureed with sugar recipe for the winter. Strawberries with sugar

Such a long-awaited, but such a short strawberry season pushes housewives to look for new options for procuring berries for future use. What to do if you are a little tired of traditional preserves and preserves? Prepare “live” jam – strawberries, grated with sugar.

Composition and calorie content

Speaking about strawberries pureed with sugar, it should be noted that in such a dessert the berries remain fresh. It is not surprising that it has almost the same properties as strawberries, only picked from the bush. The berry contains many organic acids, which determine the slight sourness in taste.

Strawberries are one of the garden champions in terms of vitamin C content, so pureed dessert has a pronounced anti-cold and immune-strengthening effect. It can be used as a prevention of flu and colds, vitamin deficiency, and also promote a faster recovery from illness.

Vitamin E, also contained in the berry, is an antioxidant - it binds radionuclides, removes toxins, and also slows down the aging of the body. Vitamin B3 (niacin) is another component found in large quantities in sugared strawberries. B vitamins are involved in metabolic processes, hematopoiesis, they have a beneficial effect on the condition of the skin, and niacin also helps strengthen the heart.

Potassium and magnesium, also found in abundance in strawberries, also have a positive effect on the cardiovascular system. Potassium also helps maintain water-alkaline balance and removes excess fluid from the body. Magnesium has an anticonvulsant effect and is necessary for the functioning of the nervous system.

The dessert contains a large amount of calcium, which is necessary primarily for the health of bones and teeth. In addition, here it is combined with ascorbic acid, which improves its absorption. Phosphorus “helps” calcium, which also maintains the strength of the skeletal system and also improves cerebral circulation.

The composition of the dessert also includes sodium, which is responsible for the water-salt balance in the body, helping to maintain all trace elements in the blood in the desired state. This, in turn, guarantees adequate nutrition of all tissues.

If we talk about microelements, then most of all the dessert contains iron, which is necessary to provide the organs with oxygen. The second place is occupied by copper, which is responsible for the production of collagen. Slightly smaller quantities contain selenium, which promotes the production of antibodies. Manganese is also present in the composition.

Strawberries are rich in fisetin, a type of flavonoid that has a positive effect on brain cells, reducing the intensity of their aging.

The fresh berry itself is low in calories - 35 kcal per 100 grams. However, adding sugar significantly increases the energy value of the dessert - up to 153 kcal per 100 grams of product (the average value may be higher). BZHU looks like 1.6/2.7/151.6.

Proportions

Since this strawberry dessert is not boiled, you need to take care of its preservation for the winter. A natural preservative, sugar, will help with this. It turns out that in grated strawberries it is used not only for taste, but also to preserve the dessert, which means its amount cannot be reduced.

The classic recipe assumes a 1:1 ratio of sugar and berries. That is, for 1 kilogram of berries you also need a kilogram of sugar. If the strawberries are quite sour or the composition also includes lemon, the amount of granulated sugar can be increased to 1200-1300 g. Possible increase in the amount of sugar. Then take 1.5 parts of sweetener for 1 part of berries. This will help increase the shelf life of the strawberries. You should not take more or less than the indicated volumes, since in the first case the berries will become candied, in the second they will begin to deteriorate.

As a rule, the recipe indicates the amount of sweetener to mix with the berries, however, another 100-150 grams are required to make a “lid” on the surface of the composition before sealing the jar.

Many housewives do not know how to determine the amount of finished dessert from the available volume of berries. For example, how many berries do you need for 5 liters of such dessert? Usually the volume of dessert is reduced by 2.5 times the amount of fresh berries. For example, a 5-liter bucket yields approximately 3 liters of ground treats.

Preparing the berries

Preparing berries begins with sorting them. Despite the fact that the strawberries in this dessert are pureed, you should not use damaged or rotten berries. They can provoke fermentation processes and spoil the preparations.

You should use ripe berries without cracks, damage or signs of insect penetration. It is important to remember that even a slight violation of the integrity of the berry indicates that pathogenic bacteria could penetrate through it. Considering that pureed strawberries are not heat-treated, this can be quite dangerous.

The next stage is washing the berries. Strawberries are very tender, they are easy to crush and damage. In addition, it quickly absorbs moisture. This should be remembered when preparing raw materials. Strawberries should be washed in small portions using a colander. There is no need to turn it over with your hands or a spoon, just shake the colander lightly. You need to rinse the berries under low pressure and only in cool water.

If heavily soiled, the berries can be immersed in a bowl of water and left for 5 minutes. Litter, grass and insects will float to the surface, earth and sand will settle to the bottom. After “soaking,” the strawberries are also washed using a colander.

Clean berries should be given 10-12 minutes to drain excess water. After this, they are laid out in one layer on a clean towel, where they should dry completely. Now you can start cleaning the ponytails, after washing your hands with soap.

Cooking methods

It seems that strawberries twisted with sugar is such a simple recipe that there is only one way to prepare it. However, in practice everything turns out differently. We introduce you to the most popular proven recipes for this healthy dessert.

Recipe No. 1

Grind 1 kg of berries through a sieve and add 1 kg of granulated sugar to the puree. Hand-crushed strawberry mass is denser and does not contain seeds. Mix everything thoroughly and leave the mixture in the pan for 2-3 hours until the sugar is completely dissolved. This also requires periodic stirring of the composition.

After the sugar crystals are no longer noticeable in the puree, it should be distributed into sterile jars and stored in the refrigerator. If the strawberry mass seems sour, you can increase the sugar content to 1200-1300 g.

Recipe No. 2

First of all, you need to puree the strawberries. This can be done with a blender or by spinning it through a meat grinder.

Now the whipped strawberries are placed in a pre-sterilized jar, the layer of berries should be 2-3 cm thick, and on top of it there should be a layer of sugar of the same thickness. Next, you need to alternate layers of sugar and pureed berries, but the last layer must be sugar. You can slightly increase its thickness to 3-3.5 cm. Such a sugar “lid” will ensure the shelf life of the dessert. After this, all that remains is to seal it with a lid and store it in the refrigerator.

Recipe No. 3 with lemon

Lemon in this recipe is used not only for taste, but also acts as a natural preservative. In addition, its addition increases the benefits of grated strawberries, significantly increasing the level of ascorbic acid in the dish.

For 1 kg of berries, 1-2 lemons and 1 kg of sugar are required. The lemon should be washed and scalded with boiling water, and then cut into small pieces; there is no need to peel the peel. Grind the berries and citrus through a meat grinder.

You can grind the lemon using a meat grinder, and punch the berries with a blender, but such processing does not make a noticeable difference, and the labor intensity of the process increases. You should not try to grind the lemon with a blender; there will be large pieces left that can taste bitter in the dessert.

After the strawberry-citrus mass is ready, add sugar to it, stir and wait until completely dissolved. The final stage is transferring it into jars.

Recipe No. 4

This method is not a recipe in the true sense of the word, but a way to freeze and store strawberries. It is necessary to grind 1 kg of berries with the same amount of sugar. Next you will need molds or ice packs. They are filled with berry mass and frozen. When scarlet pieces of ice form in the molds, they can be removed and transferred to containers with lids or plastic bags for more compact storage.

You can use grated strawberries as an independent dish or add it to tea, prepare fruit drinks and compotes. Quite juicy and aromatic, the mass is suitable for soaking biscuits and making cocktails. It can be added to dairy and fermented milk dishes, cottage cheese, or placed on a sandwich or toast. If in the middle of winter you want to taste jam or make marmalade, just boil the mixture with pectin or gelatin.

However, great taste is not the only reason for the popularity of pureed strawberries. She will help out during the flu and cold season. It is enough to add it to tea, drink it with milk or eat it fresh. It’s worth leaving some treats for the end of winter and beginning of spring, because it is at this time that vitamin deficiency, chronic fatigue and a decline in activity are observed. The berry, rich in vitamins and minerals, will help you quickly get rid of these troubles.

It’s quite simple to prepare pureed strawberries with sugar. and recommendations from experienced housewives will help make the dessert even more tasty and healthy.

  • To prevent the berries from fermenting, you can rinse them in vinegar water. To do this, 1 tablespoon of vinegar 9% should be dissolved in 1 liter of water. Use the resulting liquid to rinse the berries.
  • For cooking, use enamel pots and basins. Due to the high acidity of the composition, strawberries, in contact with metal surfaces, oxidize, which affects its taste. Enameled surfaces must not have chips or scratches.
  • Store the pureed strawberries correctly in the refrigerator, then you can seal the jars with nylon lids. If you freeze berries directly in a jar, they may burst due to the difference in pressure inside and outside the container.
  • Mashed berries packaged in bags, containers or frozen in molds are stored in the freezer. If possible, freezing should be extreme, that is, as quickly as possible.

Do not pack large portions of berries; if possible, set the maximum temperature in the freezer. It is important that the strawberries are not subjected to repeated freezing and thawing. It is better to pack strawberries in small batches - for one time use.

  • Storage in the refrigerator will be shorter than in the freezer. In the first case, the berries need to be eaten within 3-4 months, in the second they can be stored for up to 8-10 months.
  • If you decide to leave the berries overnight so that the sugar dissolves better, put the container in the refrigerator and cover with a clean towel. In the summer, strawberries left indoors for such a long time will most likely begin to ferment.
  • An important aspect of food preservation is sterilization of jars and lids. It must be carried out before laying the composition, but at the same time the jars must have time to dry. The lids also need to be sterilized; if nylon ones are used, scald them with boiling water.

Strawberries are a delicacy that is available in our country only during one or two summer months. Of course, berries are sold in large supermarkets all year round, but they do not always have the taste that we are looking for. Ordinary jam cannot replace it. The best option is pureed strawberries with sugar. It’s easy to stock up on such yummy food for the winter.

Uncooked jam

Strawberries mashed with sugar, the recipe for which we will definitely describe below (and more than one), is otherwise called raw jam. This method of preparation, called cold canning, allows you to preserve the taste and aroma of fresh berries. And with such processing, much more vitamins remain than in classic jam.

Thus, all the advantages that strawberries pureed with sugar have are obvious. Without cooking, without wasting time, without significantly changing the taste and aroma, you can get an excellent winter preparation. There are only two disadvantages: the sweet can only be stored in the refrigerator, and its shelf life does not exceed six months.

Preparation

Before you cook strawberries pureed with sugar, you need to process them. Carefully sort the berries, remove the stems. Rinse the strawberries under running water using a colander, then let them dry a little. If you grind wet berries, the raw jam will quickly spoil.

The only additional ingredient is sugar or powdered sugar. If you wish, you can add other berries, for example, strawberries, to diversify the tastes. It is also not forbidden to use vanillin and other aromatic spices.

The only equipment you will need is jars, lids and containers in which the strawberries will be mixed with sugar. For grinding, each housewife can use any device convenient for her - a blender, a meat grinder or a regular pestle with a mortar, a sieve or a fork.

Mashed strawberries with sugar for the winter are prepared only from good berries. Set aside crumpled and damaged specimens and use them in another way, otherwise the workpiece will not last long in the refrigerator.

Proportions

Usually sugar and berries are taken in a 1:1 ratio, but this parameter can be varied depending on taste preferences. Those who like it sweeter should take twice as much sugar as berries. If someone likes the natural taste, you can measure just half a kilo of sugar per kilogram of strawberries.

Recipe No. 1: classic

Chop the strawberries, mix the resulting puree thoroughly, put it in a saucepan and heat to 60-65 degrees. Add sugar to the warm mass, mix everything and heat it another 70 degrees so that the sweet sand dissolves.

Pour into sterilized jars. Sprinkle a little sugar on top to form a crust - this will keep the strawberries longer. You can close the container with a nylon lid, since sterilization is not necessary.

Recipe No. 2: Strawberries for the freezer

Strawberries mashed with sugar, the recipe for which is given below, is an almost complete dessert.

The berries should be crushed so as to obtain a homogeneous mass, so it is more convenient to use a blender. Next, the strawberries are mixed with sugar, of which you need to take half as much as the berries.

The mass is poured into molds, plastic jars or containers. The container must be closed. All this beauty is placed in the freezer and stored there in the future. Instead of containers, you can use ziplock bags - this is even more practical.

Another option is to pour the sweetness into ice cube trays. After freezing, place the resulting cubes in a bag and store in the freezer. If necessary, you can always get the required number of cubes and add them to a milkshake, tea, champagne, yogurt or porridge.

Strawberries pureed with sugar live longer in the freezer than in the refrigerator, and will quietly lie there until the next harvest.

Recipe No. 3: delicious jam

For this recipe, the optimal ratio of sugar and berries is 1:1.

We wash and dry the berries, then carefully transfer them to some container (pan, bowl) and sprinkle with sugar. After this, grind the berries using a masher or blender.

Next, the tasty mixture is moved to the stove, heated and, with constant stirring, simmers for about 3-5 minutes. Then it is poured into sterilized jars, closed and, after cooling, put into the refrigerator.

Recipe No. 4: strawberries in their own juice

How to cook strawberries pureed with sugar without heating them on the stove? After all, during heat treatment, a certain amount of valuable substances is still lost, although in a smaller volume than when preparing jam. Well, you can do everything almost the same, only without heating.

We prepare the strawberries, sprinkle them with sugar and let them stand for a while so that the berries release their juice. A few hours is enough, but you can leave it overnight.

Recipe No. 5: portioned

It will turn out even tastier and better if you add sugar gradually during the grinding process.

We take a small batch of washed and dried berries, put them in a container and mash them with a masher, gradually adding sugar. Then add the next batch of berries to this mixture and mash again, adding sand. And so on until all the ingredients are added.

The future jam is infused for about fifteen minutes, and then placed in storage containers.

How to sterilize jars

Since pureed strawberries with sugar are prepared for the winter virtually without heat treatment, the optimal container for storing them is a sterilized glass jar.

Sterilization can be carried out by placing the jars in an oven preheated to 140 degrees for ten minutes. Lids should not be sent there, so as not to melt the sealing rubber. Just boil them for five minutes.

If you take small jars, you can pour a little water into them (literally to the level of 1-2 centimeters) and put them in the microwave for 3-5 minutes.

Are these strawberries healthy?

Mashed strawberries with sugar are prepared for the winter not only as a dessert, but also so that the menu during the cold period is more fortified.

Each spoon of raw jam contains vitamins A, B 1, B 2, B 5, B 6, B 9, C, E, H, PP. Microelements include calcium, magnesium, potassium, phosphorus, and fluorine. In addition, the sweetness contains many useful acids and amino acids, glucose and fructose.

The calorie content of the treat is 220 kcal per 100 grams, provided that equal amounts of sugar and berries are used.

This is how pureed strawberries with sugar are prepared easily and quickly. You can store it for the winter by placing it in the refrigerator or freezer, depending on what container is more convenient for you to use and what dishes you plan to add berries to.

The proportion "Berries:Sugar" affects the processing method and the period and place of storage. So, with a ratio of 1 to 2 (for 1 kg of strawberries take 2 kg of sugar), raw or “live” jam is prepared. Strawberries and sugar are ground in a blender for the winter, without boiling for a minute, immediately packaged in sterile jars and stored in a cold cellar or refrigerator. A large amount of sugar “works” as a preservative. But over time, crystallization often occurs - the jam becomes sugared.

There is a recipe in which strawberries and sugar are ground at a ratio of 1 to 1 - berries and granulated sugar are equal. Sugar is saved, the puree is boiled for up to half an hour, and sometimes citric acid is added. The jam comes out rich, but the berry freshness is lost and the color darkens. Stores safely at room temperature.

The next option, in my opinion, is universal. Here, strawberries with sugar for the winter are pureed in a blender in a ratio of 1 to 1.5 (add 1.5 kg of granulated sugar to 1 kg of strawberries), then boiled and boiled for exactly 5 minutes. One of the versions of the Five Minute jam. The natural color, aroma, and taste of strawberries remain, sweetness is in moderation. Hermetically sealed, they are kept in a cupboard, pantry, or any convenient place.

So, to prepare strawberries with sugar for the winter in a blender, we will take the products according to the list. Containers for long-term storage of preparations are not only thoroughly washed, but also sterilized (after cleaning, washing with soda, jars + lids are steamed in a hot oven or in a water bath).

Since the berries will be ground (pureeed), we throw away the obviously rotten ones, but we safely take the juicy, overripe, almost ripe, soft and wrinkled ones into use. The integrity of the berries does not matter here. After selecting, place the strawberries in a bowl of cold water and leave for 5-10 minutes.

Dirt of various sizes will partially settle at the bottom and partially float up. Then rinse in several waters, preferably under a running stream. Place in a colander and shake off.

We tear off the petioles and rinse. To get rid of excess moisture, it is advisable to spread it in one layer on paper/baking sheet/towel and dry.

Place clean strawberries in a bowl, add granulated sugar and puree with a blender. You can grind it by passing it through a meat grinder, crush it with an ordinary masher-pestle for puree and even with a fork - soft berries do not cause difficulties and are easy to crush. Strawberries with sugar are crushed until homogeneous (homogeneous) or small fragments are left.

Pour the fairly liquid strawberry-sugar puree into a saucepan. You won’t have to cook for a long time, so you can do without thick-bottomed/non-stick containers. The main thing is to take it with a surface that does not oxidize, for example, enameled. Place on high heat and bring to a boil. Reduce the heat, constantly skim off the sticky pink foam that appears on the surface and cook the strawberry jam for 5 minutes.

Pour into sterile dry jars and seal tightly. Cool and transfer the blender-chopped strawberries and sugar to a cool room for the winter. Once uncorked, store it on the refrigerator shelf.

We serve strawberry delicacy with pastries, desserts, ice cream, and tea as a snack.

Enjoy your tea all year round!
