In a huge carp that weighed 4 kg. turned out to be caviar. What can be done better with it?

I'm sure I'm not the only one who has encountered a carp full of caviar. I just didn’t want to fry the caviar, it’s liquid in this fish.

I wasn't too lazy and made a step-by-step recipe with pictures.

Compound:
1. my carp contained 240 grams of caviar
2. 1 egg
3. 3 tablespoons flour
4. 2 tablespoons of sour cream (fat content 15%)
5. salt and seasonings to taste

The breadcrumbs in the photo turned out to be an unnecessary ingredient. The result will be a consistency like thick sour cream. No breading needed.

I drained the water from the caviar and rubbed it through an iron sieve. If you don’t have a sieve, like I do, you can rub it through a grater with small holes.
The eggs pass quite quickly, and the films remain on the surface and are easily removed.

We get a lot of pure caviar.
By the way, I saw recipes where caviar in this form was kept in salt for a day, and then washed and mixed with herbs and oil. After eating, spread it on bread. I didn't try. I believe that 2 times in boiling water will not disinfect the caviar. I don't want to take risks.

The flatbreads fry quite quickly. I suspect that the next step was introduced in the recipes in order to increase the cooking time! River fish, after all. You don't have to do this if you believe that processing is already enough.
I didn’t take any risks and simmered the pancakes under the lid.
We set the burner to the lowest setting and simmer all the resulting cakes at once under the lid. Keep them like this for 10 minutes, stirring a couple of times so that the bottom ones don’t burn.

Tastes better when cooled. They go well with tea or as an independent dish.

My mother used to cook them often when I was a child, but now I remembered them by chance. I bought river fish and when cutting it I found a sufficient amount of caviar. At first I thought about salting it, and then I decided to remember the past and make pancakes from fresh caviar. In addition to this method of obtaining caviar, you can purchase it separately in places where fresh fish is sold (crucian carp, carp, perch, pike, carp, silver carp) and prepare delicious cutlets from fish caviar. If you got too little caviar from the fish and plan to replenish its reserves next time, then take care of its proper storage. Freeze the caviar by placing it in the refrigerator for a couple of days under film or placing it in the freezer in a plastic container.

Egg pancakes from fish roe are prepared very quickly and simply. They turn out appetizing, bright, beautiful and very tasty. But there is one small nuance in their preparation. If you cook them yourself, without adding any ingredients, then simply fried caviar will turn out quite dense. Therefore, all kinds of juicy products are added to the dough: sour cream, cream, mayonnaise, twisted onions or cabbage, etc. These components of the dish will dilute the dryness of fish roe, and the cutlets will become more tender and soft.

Ingredients

Caviar of any fish – 300 g
Eggs – 1 piece
Sour cream – 3 tablespoons (or cream)
Vegetable oil - for frying
Soy sauce – 1 tablespoon (optional)

1. To make cutlets from fish caviar, you need to properly prepare the caviar itself. We will remove all partitions, capillaries and films from the caviar. Place it in a sieve and rinse under running water. Leave it in until all the liquid drains away. Then put it into a bowl for mixing minced meat and add sour cream.

2. Pour in soy sauce, beat in an egg, season with spices and salt.

3. Using a blender, we will beat the caviar until it becomes a homogeneous, smooth mass, so that all the eggs are broken up as best as possible. If there is no such device, then before adding the remaining ingredients to the caviar, grind it through a sieve or pass it through a meat grinder a couple of times.

4. Place the frying pan on the stove, add a little vegetable oil, and heat it well. Since the dough is very liquid, you won’t be able to form the pancakes with your hands. Therefore, we will take a tablespoon and pour the dough into a hot frying pan. It will spread over the surface, taking a round shape.

5. Pancakes are fried very quickly, literally 2-3 minutes on each side over medium heat. Therefore, do not move away from them so as not to burn. As it cooks, the dough will change color, acquiring a beautiful and appetizing bright orange hue.

6. Serve the finished caviar with sour cream, garlic or fish sauce, or with all kinds of gravies. River fish caviar cutlets can be consumed either warm or chilled.

Carp caviar has beneficial properties. But at the same time, it is not very popular and does not appear on the table often. But in vain. It contains many useful minerals that are very necessary for the human body. Caviar is inexpensive, so a dish of pancakes is affordable for average citizens of our country. Carp caviar pancakes are a dietary dish that will appeal to all fish lovers. If there is no caviar in the market or store, pancakes can be prepared using the roe of a different type of fish.

Carp caviar pancakes: preparation

The amount of caviar in this recipe is from one medium-sized carp. If you have more caviar, increase the amount of other ingredients.

Although the carp is not particularly large, there was a decent amount of caviar in it! Rinse the caviar and add very finely chopped onions; if you have a blender, grind into a paste. Next add salt, pepper, egg and finely chopped parsley and dill. You can do it without greens, but it’s tastier and more aromatic with it!

Now we need to mix the ingredients and beat with a fork. Not with a blender! And not with a mixer! Gently beat with a fork until smooth.

Heat a frying pan with vegetable oil well and spoon in future carp caviar pancakes.

Fry on one side, turn over, turn down the heat a little and fry the second side. No need to cover with a lid! Pancakes made from carp caviar do not need to be stewed; they will fry perfectly even without a lid.

To prevent the dough from being too thick, we need an ingredient that will provide a sufficient amount of liquid. If our plans did not include preparing a lean dish, then we could use a chicken egg. But since we are preparing food for the Lenten table, we took a head of onion, which we turned into pulp. To do this, you can use a blender or meat grinder. But I didn’t want to wash a bunch of dishes just because of one onion, so I just grated it. This activity, of course, is not very pleasant, but it significantly reduces the cooking time.

Carp caviar has a fairly neutral taste, so it wouldn’t hurt to add a little garlic and lemon. Garlic will add a slight spiciness and aroma to the pancakes, and lemon juice will add a pleasant sourness.

To get a homogeneous dough, do not forget to remove all films from the caviar. Now all that remains is to add flour, salt and pepper and bake neat, delicious pancakes.

How to make pancakes from carp caviar:

Step 1

Remove all films from the caviar and knead it thoroughly with a fork to obtain a liquid mass of uniform consistency.

Step 2

Turn the onion head into pulp. You can use a blender or meat grinder. Or you can do it like we did - grate it on a fine grater.

Step 3

Peel the garlic and pass it through a garlic press.

Step 4

Squeeze the juice from half a lemon.

Step 5

Add onion pulp, garlic and lemon juice to the caviar. Salt and pepper to taste. Add flour and knead the batter for pancakes.

Step 6

Heat the vegetable oil in a frying pan, use a tablespoon to place the pancakes in the oil and fry until golden brown.
