So, let's get started and, before kneading the dough for the pies, let's prepare the ingredients:

This is: 3.5 cups of flour; 250 ml kefir; a tablespoon of sugar; 2 eggs; 10 ml vegetable oil; a teaspoon of soda; pinch of salt

To fry pies with kefir, you will need 100 ml of vegetable oil.

Since you will prepare the dough for kefir pies in a short time, first of all make the filling. In my family, the filling, which consists of rice and minced meat, is very popular, but you can fill the pies with whatever you want.

For the filling you need: 250 g minced meat; 1/3 cup rice; one onion and one carrot

Don't forget to salt the filling and season it with pepper and aromatic herbs. Plan your time and keep in mind that it will take you at least half an hour to prepare the filling.

You need:

  1. Boil the rice in salted water and rinse it under the tap.
  2. Make a frying mixture for pies from carrots and onions, followed by adding minced meat. Keep the pan on the fire with the ingredients for several minutes until the minced meat changes its original color.
  3. Season with salt and pepper and add rice to the mixture. The filling for the pies is ready.
  4. One piece of advice: when choosing minced meat, focus on its composition; the fat content in it should be at least 25%. This is an important detail, because it affects the juiciness of the filling, which means the pies will be tastier.

Recipe for making kefir dough:

  1. Start kneading the dough for pies by beating the liquid ingredients (kefir, eggs, vegetable oil) followed by adding sugar, salt and soda.
  2. Pour the sifted flour into the dough gradually, mixing immediately with a spatula and then with your hands.
  3. To prevent the pies from turning out airy, do not make the dough too hard, so add flour in small portions, and at the end of kneading, add it a spoon at a time.

The quick kefir dough should not stick to your hands; this is a signal to complete the kneading process.

So, you have the base for the pies ready, now it’s time to form the baked goods:

  1. Pinch off a small piece of dough and, on a table dusted with flour, stretch the cake with your hands. There is no need to use a rolling pin; everything is done with your fingers.
  2. Place a tablespoon of filling in the center of the dough ball and seal the edges tightly. The first pie is ready, continue to do the same until you run out of all the dough and filling.
  3. To fry the pies, use a regular frying pan with hot sunflower oil.
  4. Keep the pies on the fire on each side until they are golden brown. If necessary, fry the pies by turning them on their sides.

Keep in mind that the pies will increase in volume at high temperatures, so place no more than 6 pies in a standard frying pan.

Ingredients, without which it is unrealistically difficult to prepare a dish:

3 cups flour; half a glass of vegetable oil; a glass of kefir; a packet of instant yeast; a teaspoon of salt; large spoon of granulated sugar

To prepare the dough, follow my recommendations, that is:

  1. Heat 100 ml of water to a temperature of 36-37 degrees and dissolve the yeast and sugar. Leave the mixture for 20 minutes in a warm place.
  2. During this time, mix the butter and warm kefir in a bowl and after the yeast begins to “work” and form bubbles, combine both masses.
  3. Then add salt and sifted flour. Knead the dough, place it under a napkin in a warm place and leave for 15 minutes. During this time, the dough will rise and will be ready for cutting.
  4. All you have to do is form the pies. Roll the dough into a sausage, divide it into parts and roll out a flat cake from each.
  5. Place any filling in the center of each and seal the edges.
  6. Before heat treatment, baked goods made from kefir dough should increase in volume, give it 5 minutes for this.
  • If you want to fry the pies in a frying pan, use vegetable oil. Place kefir baked goods immediately with the seam down so that they do not fall apart, then turn them over and finish cooking.

  1. Soften the margarine in one of the following ways: leave it for several hours at room temperature or place it in the microwave for a couple of minutes.

  • 100 ml. milk;
  • 2 eggs;
  • 3 tbsp. l. vegetable oil.

The preparation process will take a few minutes, but the result will definitely exceed expectations. To make yeast dough, you must first slightly warm the milk. Then add sugar to it and mix thoroughly until completely dissolved. After which you can add yeast by mixing it with milk. Then cover the container with the resulting mixture with a clean towel and place it in a warm place for 10-15 minutes. This will be the base (dough).

At the same time, you need to mix kefir with vegetable oil. Be sure to make sure it is not cold. Beat the eggs into the resulting mixture, add salt and mix everything well. Then pour the dough into the egg-milk mixture and, having mixed the ingredients, begin to add flour. After kneading is completed, the mass must be lowered back into the container and covered with a towel.


Just like the dough, the finished yeast dough should be kept in a warm place for about 15 minutes, but more is possible.

After this time, the finished mass can be taken out and prepared to form pies.

How to bake pies?

After the kefir dough (yeast or non-yeast) for pies is ready, it should be divided into 2-3 parts. This is necessary to make it more convenient to deal with it. From each part you need to form a cake, inside which you put the filling. As previously mentioned, you can use both sweet and salty (meat) foods as fillings.

As a filling for kefir pies, you can use: finely chopped fresh apples, pears, jam, mashed potatoes with or without mushrooms, minced meat, rice with egg, liver with fried onions, stewed cabbage. In this case, the last option is most appropriate for this type of product. They can not only be baked in the oven, but also fried in a frying pan.

Even if you made the dough for frying the pies in a frying pan, you can also make them in the oven. In this case, you just need to brush them with egg on top so that they end up golden brown.

If you want to make pies with meat filling, choose minced meat that contains at least a quarter of fat. This is done taking into account that the dish does not become dry later.

If suddenly the pies, or rather their meat filling, become dry, you can serve broth (chicken, meat or vegetable) in small bowls with them.

If you are cooking in the oven, place the pies seam side up. And if in a frying pan, seams down.

Another secret to making beautiful and tasty pies in the oven concerns the cooking temperature. After all, in order for them to be even, the temperature must be gradually increased. At the same time, the baking sheet with the formed pies must be placed in a preheated baking cabinet.

Products:

  • Flour – 3.5 tbsp.
  • Kefir – 1 tbsp.
  • Oil – 80 g

  • Mix flour with sugar, salt, soda

Lush, airy pies come out when using yeast-free dough based on kefir. Another advantage of this recipe is the ability to use any filling, both sweet and fresh; whatever is in the refrigerator will go into use!

Ingredients:

  • Kefir 3.2% fat – 200 g
  • Egg – 1 piece
  • Salt, soda - 0.5 tsp each.
  • Sour cream, sunflower oil - 1 tbsp.
  • Flour – 400 g
  • Sugar - 1 tbsp.

Preparation:

  • We take kefir of maximum fat content, remove it from the refrigerator overnight in advance, it is better to use “old” one, which has the maximum amount of lactic acid bacteria due to long-term storage, then the dough will be fluffier (don’t be afraid of getting poisoned; when baking, the temperature is sufficient to disinfect the product)
  • Add sour cream, sugar, salt to it
  • You can mix in the whole egg, or just the yolk, then you get different doughs (you should try both ways, then choose the option you like), lightly beating with a fork first to avoid the appearance of pieces of unmixed baked egg white in the finished baked goods

  • Mix everything, add sunflower oil, part of the flour, soda (used instead of yeast, but the main thing is to take good quality powder, not stale, it is recommended to change it every 5-6 months)

  • Add flour, sprinkle the table with it, knead the dough with your hands

  • Grease the table with vegetable fat, knead the mass on it so as not to clog it with excess flour, stir until smooth
  • If, even when kneading, the dough sticks to greased hands, it means there is not enough flour; you should add it a teaspoon at a time until the desired consistency (this happens due to the different thickness of kefir)

  • Grease the container with oil, lay out the dough, cover with cling film, and leave to “rest” for 15-20 minutes.

  • Pour a little sunflower oil onto the table, divide the dough into small balls (volume about a tablespoon), stretch with your fingers, making the edges thinner and the middle denser
  • Place the filling in the center, pull out the edges, seal with dumplings, thus making all the pies
  • Heat the oil in a frying pan (there should be a lot of it so that the sides are well fried), place the pies seam side down, and turn them over after 1-2 minutes.

Products:

  • Flour – 400 g
  • Kefir – 250 ml
  • Unscented vegetable oil – 125 ml
