Thaw the shrimp.
Wash the shrimp in cool water, remove the head and intestinal vein, and remove the shells.
Dry the peeled shrimp with paper towels.
Place shrimp in a bowl, add salt, freshly ground pepper, honey, lemon juice and olive oil.
Mix the shrimp well with the honey-oil mixture.

Leave the shrimp to marinate for 20-30 minutes.
Dry the marinated shrimp from the marinade.
It’s good to heat a little olive or vegetable oil (or olive and butter) in a frying pan.
Place the shrimp in a hot frying pan and fry for about 2-3 minutes on each side (you need to fry very quickly - the shrimp are ready as soon as they become matte through and through - that is, they are no longer transparent).

Remove the cooked shrimp from the pan, place in a bowl and set aside.

Prepare toast.
Peel and chop the garlic.
Pour olive oil into a small bowl.
Add garlic to the oil.
Let the garlic oil steep for 1-2 hours.

Cut the bread into small cubes.
Heat the garlic oil in a frying pan (be careful not to let any garlic from the oil get into the frying pan).
Place the bread cubes and lightly fry them in oil.
Then place the croutons on a baking sheet, lightly salt and sprinkle with Provençal herbs (you can add garlic from the oil).
Dry the croutons in the oven at 180°C (instead of the oven, you can dry them in a convection oven for a couple of minutes).

Wash the lettuce leaves well.
Pour cold water into a large bowl, dip the lettuce leaves in it and leave for 1 hour - the salad will become crispier and fresher.
Remove the salad from the bowl of water, shake off excess water and dry the leaves well with paper towels.
Tear the salad with your hands and place in a dry, clean bowl.
Add a little Caesar dressing and stir gently.

Rub the plate in which the salad will be served with a clove of garlic cut in half.
Place lettuce leaves with sauce on a plate.
Place croutons on leaves and sprinkle with grated Parmesan.
Arrange the fried shrimp.
Lightly drizzle some of the sauce over the salad.
Serve the salad immediately so that the croutons do not get soggy.
