What is absinthe

To give a more refined taste, some manufacturers add to absinthe: Roman wormwood, anise, fennel, calamus, mint, lemon balm, licorice, angelica and some other herbs.

    Secondary countries producing absinthe or drinks similar to it in content are: Italy, Germany, USA and the Netherlands.

    In particular, a curious phenomenon was the “Liqueur d'Absinthe” sold in Amsterdam, containing 26 milligrams of thujone per liter, whose production is attributed to the French brand “Francois Guy”.

    Russia, Ukraine and Bulgaria are also trying to join the club of absinthe-producing countries.

History of absinthe production

Speaking about famous brands of absinthe, it’s worth starting with a short overview of the enterprises that produced the drink, so to speak, in its past life, that is, from the time of its creation (the end of the 18th century) until its almost universal ban (the beginning of the 20th century).

Among the leading manufacturers and brands of that time, in addition to the pioneer in this industry - the company Pernod Fils, mention should be made of such dinosaurs of the absinthe industry as Fritz Duval Dubied Père & Fils, A. Vichet, la Cressonnee", "Terminus", "A. Junod", "Cousin Jeune", "L. Lemercier" & "Duval", "Oxygenee" and "Kübler absinthe".

Moreover, most of them were in one way or another connected with the Pernot family or with the French region of Pontarlier.

The appearance of the Pernod Fils brand in Pontarlier took place thanks to Major Daniel Henri Dubier, who in 1797 bought the recipe for wormwood mixture from its creators - the Henriot sisters from the Swiss Couvet, and his son-in-law, the Swiss Henri-Louis Pernod, who put the production of the drink on a factory basis.

The extreme popularity of Pernod Fils is evidenced by the fact that by the end of the 19th century the company was producing 30,000 liters of the drink daily.

In 1798, one of the closest relatives of the house of Dubier/Pernod, Fritz Duval, opened his own business in Couva, calling his brainchild: “Fritz Duval Dubied Père & Fils”.

In turn, in Pontarlier there were factories of such famous absinthe producers as A. Vichet, la Cressonnee", "A. Junod", "Cousin Jeune" and "Terminus".

The fate of the drink, produced under the Oxygenee brand, whose advertising featured the optimistic phrase: “This is great,” is interesting. After the ban on absinthe was lifted, this brand reappeared on the shelves. But since current French absinthe does not contain wormwood, the revival of “Oxygenee” turned out to be very conditional.

Another thing is the Swiss brand “Kübler absinthe”, founded in 1863, banned along with other brands in 1910, and again revived by the great-grandson of the company’s founder after the re-legalization of absinthe.

  4. The sugar is set on fire.

  6. Three parts of water are poured in and mixed, after which the alcohol can be consumed.
  1. Sugar is placed on a heated absinthe spoon.
  2. Alcohol is poured slowly.
  3. The drink is diluted with a small amount of water.

The most unusual option is Russian. And it is suitable for those who love thrills. The main thing is to act in order.

  1. You will need two glasses.

The traditional color of absinthe is green. But there are also red, yellow, black, brown, white. Aged absinthe is yellow. Adding coloring can also “age” the drink. The red tint is achieved by adding the same dye or pomegranate extract. Black and brown absinthe are infused with the roots, not the leaves, of wormwood. Perhaps the most unusual way is absinthe in Russian. You will need 2 glasses. Pour the drink into the first one and set it on fire. Let it burn for a while, then cover it with another glass. All these recipes are only for a pure high-proof drink. They are needed to reduce the alcohol concentration, so absinthe is diluted with water. The 55-degree liquid can be drunk by pouring directly from the bottle. Absinthe is always drunk slowly, in small sips.

Let's start with a simple recipe. Its base is ordinary vodka. To prepare we will need:

  • 1 bottle of vodka;
  • 2 dec. l. wormwood;
  • 2 dec. l. angelica root;
  • 2 dec. l. anise seeds;
  • 1 dec. l. marjoram;
  • 0.5 dec. l. fennel seeds;
  • 0.5 dec. l. ground coriander;
  • 4 cardamom pods;
  • 2/3 cup (200 g) sugar syrup.

Take a 1 liter glass jar, pour wormwood into it and fill everything with vodka. Leave the tincture at room temperature for 2 days. Then filter it.

Homemade absinthe

Place the remaining ingredients in a bowl, grind and add to the semi-finished product. Leave it for a week. After the specified period, filter the mixture and dilute with sugar syrup.

Another recipe with vodka. This absinthe is more aromatic. Required:

  • 1 glass (200 g) vodka;
  • 1 dec. l. wormwood;
  • 2 tbsp. l. mint (leaves);
  • 0.5 cups (200 g) sugar syrup;
  • lemon zest.

Pour the crushed wormwood into a container and add vodka. Keep the jar well closed for 2 days.

Filter the tincture, then add mint and lemon zest to it. Leave for another 8 days, filter again. Add sugar syrup.

Another method involves distillation. But this is the kind of absinthe that will be closest to the real thing. Take:

  • 1 liter of pure alcohol;
  • 100 g wormwood;
  • 50 g each of anise and fennel;
  • 10 angelica and cumin each;
  • 15 g each of a mixture of “Provencal herbs” and lemon balm;
  • 3 g chamomile;
  • 5 g hyssop (optional).

Mix the herbs and pour alcohol into them. Place the container in a dark place and keep for 1-2 weeks at room temperature.

Then dilute the resulting mixture to 55º and pour it into the distillation apparatus together with the herb. Pour out the first 50 ml of the resulting liquid. When about 5% of the tincture remains to be distilled, stop the process.

The next stage is coloring. In order for absinthe to acquire an emerald color, you will need a mixture of herbs:

  • 15 g "Provencal herbs";
  • 10 g licorice;
  • 8 g lemon balm;
  • 2 g each of angelica and chamomile.

Pour the mixture with a small amount of distilled drink (the dosage of herbs is calculated for 1 liter of liquid), leave in a dark place for several days, strain and add to the main part. The resulting absinthe is left in a dark place to mature for 2 weeks.

Pure absinthe is a rather bitter drink, so it is rarely consumed in this form. And if you have to, then it should be well chilled and a single dose should be 30 ml (the capacity of a classic absinthe glass). No more than 3 such glasses are recommended per evening.
