Boil rice properly

Rice must be boiled in advance to a crumbly state - in Thailand, special rice cookers are used for this, which are very easy to use and store rice in the right form for a long time, but you can also take an ordinary pan. It is worth choosing any long-grain jasmine-type rice that is boiled with a minimum amount of salt at the rate of two parts of water to one part of dry rice, plus one glass of water for the entire volume. If there is clearly not enough water, add in small portions, carefully monitor that it remains crumbly, but not too hard. It must be cooled to room temperature.

  • Soy sauce: 2 tablespoons

  • Brown sugar: 1 tablespoon
  • Oyster sauce: 1 tablespoon
  • Freshly ground black pepper: ½ teaspoon

  • Onion: one medium, chopped
  • Garlic: 7 cloves, finely chopped

  • soy sauce - 4 tbsp

Then we put the eggs and green onions to the rest of the ingredients and again mix all the ingredients. Rice with fried onions is a great combination.

Now the final step is to pour the basmati rice into the pan.

Again, mix everything thoroughly and pour, if necessary, a little more soy sauce so that it is absorbed into the rice. Fry over high heat, yes, yes, stirring constantly, for about 3 minutes and turn off the heat - you can eat.

  • Bulgarian pepper - 1 pc.

Rice is needed, ideally, yesterday's or at least rested after cooking for a couple of hours to dry out from excess moisture. Freshly cooked rice will make porridge.

Finely chop the garlic, chop the hot pepper and set aside. Cut the vegetables and put them in another bowl. We prepare everything in advance, because there will be no time later (the fire is blazing, everything is burning). Mix a tablespoon of oyster sauce and two tablespoons of soy sauce. Let's beat one or two eggs.

At maximum heat, heat the pan or, who is lucky, the wok. We splash a couple of tablespoons of sesame oil there and heat it to a light haze. Throw in garlic and hot peppers. Careful, garlic burns instantly, so a couple of strokes of a spatula to mix and add vegetables. Stirring constantly, fry everything for a few minutes so that the vegetables are fried, but remain crispy. We shift them to half the pan and pour the eggs.

Immediately, until the top of the eggs grabs, add the rice and mix everything. Pour in the sauce and stir, stir, stir. In general, “stirring” is the key word when cooking in a wok, the walls of the wok are thin, the fire is large and if you gape, everything burns out in an absolutely excellent way. Cook for another 5 minutes, add a couple of tablespoons of sesame oil already for flavor and can be served sprinkled with coarsely chopped green onions.

If you use rice as the main dish, then you can easily add the meat component.

Recipe 9: Chinese Zucchini Fried Rice

Chinese fried rice is a non-standard side dish for a Slavic person, but, nevertheless, very tasty! This is what makes it more and more popular in our country, and indeed around the world.

By the way, you can cook such a dish from the leftovers of boiled rice that you could do the day before. Only now the cereal should be well cooled in this case, it is desirable that it stand in the refrigerator for a while.

In general, we are sure that you will like Chinese fried rice and maybe even become your favorite side dish! Therefore, take note of this photo recipe!

  • rice round-grain polished - 300 gr
  • zucchini - 200 gr
  • green onion - 50 gr
  • carrots - 1 pc.
  • chili pepper - 1 pc.
  • grated ginger root - ½ tsp
  • garlic - 2 cloves
  • shiitake - 6 pcs
  • soy sauce - 4 tbsp.
  • 0.4 cup sesame oil
  • egg - 1 pc.

The first thing we will do is cook the rice. Only now we will not salt it, because in the future we will have to use soy sauce, which will add saltiness to the finished dish!

When the rice is ready, we will cool it and send it to cool in the refrigerator.

Now let's take care of the vegetables: cut the mushrooms into thin slices, carrots into strips, chili into small rings.

At this stage, we will cut the zucchini into cubes, and chop the onion and garlic as finely as possible.

Peel the fresh ginger root and grate it on a medium-sized grater.

Now we just have to chop the green onion.

Heat a wok or a deep frying pan over high heat and pour a quarter of a glass of sesame oil into it. Then we fry the garlic, grated ginger and chili pepper in it for one minute.

Then we send the carrot to the wok and fry all its contents for one minute. Then add mushrooms and zucchini there. All contents are constantly stirring!

Since sesame oil burns quite quickly, we remind you once again that the contents of the pan must be stirred all the time!

Now we send boiled and chilled rice to the vegetables and fry it for just a couple of minutes so that it does not turn into something overcooked.

Crack an egg into a bowl and add some soy sauce to it. Together, beat them well with a whisk and quickly send them to the wok. After rice with vegetables, mix well.

Now we remove the dish from the fire. Chinese fried rice is quickly laid out on plates, sprinkled with green onion and served.

Fried rice is my favorite dish in Thailand. I can order it for several days in a row and it does not bother me. Thai rice can be either shrimp or chicken, or a vegetarian option without any meat. Since many people come to Thailand for seafood, we also chose cooking with shrimp.

Let's start with the basics.
Ingredients:
1. Boiled rice (cooked in advance) - 1 cup
2. Shrimps (or other meat) - 200 grams
3. Egg - 1 piece
4. Tomato - half a piece
5. Onion - half an onion
6. Carrots - half a piece
7. Young corn - 1 piece
8. Chinese cabbage
9. Garlic - 1 head
10. Sunflower oil - 3 tbsp
11. Soy sauce - 2 tbsp
12. Fish sauce - 1 tbsp
13. Sugar - 1 tsp

This is how we prepare all our products.

Separately egg, shrimp and rice.
Tomatoes and onions are cut into 4 parts in equal parts of a square shape.
We press the garlic with the side of the knife and crush, then finely chop it. Keep it separate from other vegetables.
Carrot cut into cubes. Corn slices.
Chinese cabbage, as usual, cut green onions and other greens.

Now a few words about sauces. Fish sauce and sugar are added to absolutely all dishes, be it soup or a second course or dessert. Soy sauce is always added to the second. Well, they're fried in oil.

Now, let's get down to cooking. The whole process takes less than 10 minutes. The main thing in Thai cuisine is speed, otherwise everything will burn and ruin the whole result at once. That is why the cooked chopped ingredients are all laid out right next to each other. Moreover, if something should be thrown into the pan separately from the other, then they must also be prepared on a plate separately. All this will need to be quickly grabbed and thrown into boiling oil. Thai dishes are cooked on a big fire. Therefore, be careful not to burn anything, it happens instantly, stir constantly, and if necessary, add a little water, which should also be in a small jug at hand.

Cooking Thai Fried Rice:
1. Heat the pan, pour oil on it.
2. After the oil has warmed up a little, immediately pour the garlic into it. Don't wait for the oil to get too hot, the garlic will immediately burn into black embers. And it should remain only golden.
3. As soon as the smell of garlic has gone, and this happens somewhere in 30-40 seconds, so throw the shrimp into the pan. At the same time, with a spatula, constantly mix everything well.
4. Continue stirring actively for another minute, add the egg. Stir well to break up the egg into small pieces.
5. We just saw that the egg is ready, and this happens in 1-1.5 minutes, so you immediately throw vegetables - corn, onions, tomatoes, Chinese cabbage. Continue stirring vigorously so that nothing burns.
6. Immediately add soy sauce, fish sauce and sugar. Mix everything thoroughly.
7. Do not let the vegetables burn, add rice. Press all the lumps with a spatula, not a single lump should remain, the rice should be well mixed with vegetables.

As a result, after about 7-10 minutes, we have ready-made rice.

We put it in a bowl, then abruptly turn it over onto a plate and such a slide remains.


Proper Thai rice is always served in such a slide, and on the plate, as a rule, you will also see chopped fresh cabbage, tomatoes and cucumbers.

This is a typical Asian recipe, very tasty, filling and easy to prepare. You can use different ingredients, in fact, only rice and an egg are mandatory.

Fried rice dishes


Fried rice is widely used in many dishes in Southeast Asia. The most popular type of such a product is called Nasi Goreng. The first word of the name means "boiled rice", the second - fried. That is, Nazi Goren is fried boiled rice. It is usually prepared from yesterday's boiled rice. This is a common type of breakfast. It is customary to serve it with strips of omelet or fried eggs, fried tempeh, vegetables, crab chips.

Thailand has its own varieties of fried rice dishes. Among them, three types are especially common: khao pat mu with pork, khao pat kung with shrimp and khao pat kai with chicken.


There is no one classic fried rice recipe. Usually, even in the simplest version, onions and green onions, garlic and hot peppers are used. Below we describe one of the examples of how the Indonesian Nazi Goren is prepared.

Preparing fried rice Nazi Goren

Grind garlic, onions and green onions, fresh pepper pod in a mortar. Fry the pasta in palm oil.

Add seafood or meat, fry until tender. We take out the meat and fry yesterday's rice in the same pan.

We put meat to rice, season with sambal and soy sauce. Fry the fried eggs and serve with fried rice, vegetables and chutney.


A variety of vegetables are often added to rice: green or green peas, beans, sweet peppers, mushrooms, leeks, water chestnut, bamboo strips. Of the spices, curry and turmeric are often used.

There is also a variant of a similar fried noodle dish called bami goren. In its preparation, Asian noodles are used instead of rice.


Well, now let's move on to the preparation of our version of fried rice.

Thai Egg Fried Rice

The Thai version of fried rice involves the addition of a beaten egg during the cooking process, which is gently mixed in. Products for cooking this dish are quite common for our conditions.

You can experiment with the ingredients at your discretion. You can add more vegetables or meat.

We will use the following products:

  • boiled rice
  • meat (turkey)
  • eggplant
  • carrot
  • zucchini
  • Bell pepper
  • vegetable oil
  • soy sauce
  • pepper

First we cut all the products. This must be done in advance, because during the cooking process there will be no time for this - the contents of the pan must be constantly stirred.

Products can be cut into strips or cubes - whichever is more convenient. The main thing is to be thinner. Whisk the egg in a bowl. We put a large flat plate next to the stove.

Heat up a tablespoon of oil in a frying pan. Saute vegetables until half cooked. At the same time, you need to constantly mix with a spatula until the vegetables become the consistency we need. They should be soft on the edges, but still crunchy in the middle. Depending on the type of vegetables and the thickness of the slices, this takes 5-10 minutes. We take out the fried vegetables on a plate.


Add a second tablespoon of oil. Fry the meat slices. Also stir constantly. There is an interesting nuance here - the meat should not be fried, we do not need a crust! The meat should actually be stewed, as it were, although we cook it at maximum heat. To get this result, you need to constantly stir the meat during cooking. We take it out after 5-10 minutes.


Again, add a spoonful of oil. Fry rice in the same way - without getting a fried crust. This will take approximately 3 minutes.

Now let's start cooking the eggs. Make a well in the middle of the pan. We put an egg in it. We don’t interfere with rice anymore, we only deal with the egg. We need to get dense small pieces. We give the egg a little thicken and begin to tear off the strips of the egg on one side, pushing them to the side. It is not necessary to interfere in a circle, this is done from above with a stabbing movement.

This procedure takes the longest time. You can’t immediately mix the egg with rice - it will remain wet, will not have time to grab and make sticky rice.

When we have dealt with the egg, having disassembled it into small strips of flakes, we spread the prepared meat and vegetables to the rice. Now you need to pour a couple of tablespoons of soy sauce, salt, pepper and mix gently.


All! The dish is ready. Ready fried rice is served with spicy adjika-type seasoning and soy sauce.
