Finally, I can cook cheesecakes the way I like. I always thought that the reason I make tasty or tasteless cheesecakes is because I put the wrong amount of flour in them. But in fact, it turned out that I simply had the wrong approach - I formed beautiful and even flat cakes on the board, rolled them in flour and then fried them, but now I just immediately fry the cheesecakes in a frying pan, like pancakes. It turns out tastier, healthier (less flour in the composition) and faster. In general, everything turned out the way we wanted.

The most important thing is to take very tasty cottage cheese, because the taste of the cheesecakes is completely determined by the taste of the cottage cheese, and then knead the dough very carefully to preserve the grainy texture of the cottage cheese. I do this with a fork, trying to mix gently and not crush. This time I made cheesecakes with rye flour, simply because I didn’t have any other flour at home, and in the end I was very surprised that this choice didn’t affect the taste of the cheesecakes much at all. They just looked darker.

So you can make different options: regular flour, whole grain flour, rye flour... and it’s even more interesting to mix it into any type of flour in different proportions.

And another important thing: I fry them in a fairly large amount of oil. In a dry frying pan the taste is not the same. And then I just put it on a paper napkin to absorb excess fat.

In fact, cheesecakes can be eaten with sour cream, honey, berries, jam, and any sweet sauce... You can come up with a lot of options.

But I like cheesecakes without additives; you can simply sprinkle them with powdered sugar for beauty, because they are so tender and tasty that any additive is too rich for them. But that's just my choice. All the other members of my family always add something. In the summer, of course, fresh berries. It turns out beautiful and very fragrant.

Ingredients

  • 400g Cottage Cheese
  • 4 tablespoons with top flour
  • 3 eggs
  • 2.5 tbsp sugar
  • 0.5 tsp baking powder

Cooking method

  1. Gently mix cottage cheese, eggs and sugar
  2. Add flour and baking powder and mix
  3. Heat the vegetable oil and spoon the mixture into the pan
  4. Dipping a spoon into water, slightly flatten the cheesecakes.
  5. Fry on both sides, reduce heat and cook for about 5 minutes, depending on their size.
