It is not the dough that gives sweetness to buns, but the filling. Sugar is clearly felt in the biscuit dough. Therefore, it is advisable to prepare almost unleavened dough, and then adjust the sweetness with the filling.

0.350 kg sugar; 0.8 kg flour; a pinch of salt; dessert spoon of vanilla sugar; 1% kefir – 0.4 l; packaging of dry yeast; 15 ml olive oil; 1 egg; 50 g of dried apricots and prunes.

Preparation:

  1. Dissolve dry yeast in a glass of warm kefir.
  2. Place the mixture in a warm place for 10 minutes, and in the meantime sift the flour and mix it with the beaten egg and sugar.
  3. When the dough becomes homogeneous, add the remaining kefir and dough.
  4. If it turns out that the dough sticks to your hands, you can thicken it and add flour.
  5. Wash dried fruits, dry and finely chop. Pour into the bun dough and, mixing with your hands, transfer to a bowl.
  6. Cover the bowl with a towel, put it in a warm place and do not disturb it for an hour.
  7. After the allotted time, pinch off medium-sized pieces of dough, form into balls and place on a baking sheet, maintaining a certain distance. Line a baking sheet with parchment paper and spray with vegetable oil.
  8. When the delicious buns have increased in volume, bake them in the oven preheated to 180 degrees. After 25-27 minutes, you can take the yeast buns with kefir onto a dish and sprinkle it with powdered sugar.

How to make sweet buns from yeast dough?



Grind fresh compressed yeast with a teaspoon of sugar into a liquid paste.





Pour in warm milk, dissolve the yeast in the milk. Add 2-3 tbsp. spoons of flour (sifted), stir until smooth.





The dough for the dough will be the same in consistency as the dough for pancakes. Cover the dough with a thick towel or lid and place in a warm place for 30 minutes.







Periodically check how the dough fits. When the dough has grown 3 times and is covered with holes, you can start kneading the dough.





Melt the butter in the microwave or remove it from the refrigerator in advance and leave it at room temperature. Also take out the eggs and kefir in advance so that the products heat up. Mix soft butter, eggs and sugar.





Pour in kefir at room temperature. Mix the ingredients until they combine into an almost homogeneous mass (small lumps of butter may remain, this is not a big deal).





Add the matured dough. Mix the dough with the rest of the ingredients.







Sift flour into the dough. First add 3 cups of flour and see how the dough turns out. If it is viscous or sticky, add more flour, but little by little, so that the dough does not turn out dense.
