  • 1 cup flour
  • 1 cup of sugar
  • 4 eggs
  • 0.5 tsp baking powder or soda slaked with vinegar (I replace soda with baking powder in the same amount)

It was from mastering the classic recipe for charlotte that my “career” as a wife and hostess began. My mother called this delicious charlotte "dacha" because it was made from apples picked at the dacha. In our brand new Polish oven, it turned out amazingly fluffy.

Since this cake is considered banal and elementary, the description of the process of its preparation is usually reduced to a couple of lines. My rather lengthy description is dedicated to inexperienced home confectioners and anticipates precisely their questions.

Ingredients

  • Four decent sized eggs;
  • 180 g of granulated sugar;
  • 150 g flour;
  • three - five apples of sweet and sour taste;
  • 5 g vanilla sugar;
  • a little cinnamon (optional)
  • a pinch of salt.

How to do

  1. In clean apples, cut into quarters, cut out the "middle" with seeds. Then cut into small pieces.
  2. Pour all the sugar (vanilla too), salt into a deep container (basin or bowl), beat the eggs there, beat with a whisk or a mixer. The mass should lighten and increase in volume.
  3. Add flour in batches while continuing to beat. The result should be a non-clumpy, smooth mass.
  4. Lay the form (diameter 22 - 24 cm) with baking paper, generously grease with butter, sprinkle with sugar (if the bottom after baking is the top) or flour (if the top of the charlotte is the baked top).
  5. Place apple slices all over the bottom, sprinkle with cinnamon if desired.
  6. Pour dough on top in a spiral - start at the edges of the charlotte and move towards the center.
  7. Hit the mold lightly on the table a couple of times. This will release excess air and the dough will be distributed more evenly.
  8. Place in an oven preheated to 180°C. In my oven, the process takes sixty to seventy-five minutes. The baking time depends on the number and juiciness of the apples, as well as on your particular oven.
  9. Circle the finished product along the contour with a suitable knife with a thin blade, turn it over onto a board or a flat dish.

My remarks

  • I strongly recommend putting baking paper on the bottom of any shape. If you bake in a split form, then the apples may leak through the gap during baking. If you bake in a ceramic form, then it will be easier to remove the charlotte from it.
  • I love the variation of the charlotte recipe when there is a lot of fruit and little dough. In this case, five apples should be taken for baking. Biscuit lovers with a little fruit can limit themselves to three apples.
  • Is your mixer low power? Then a more fluffy charlotte will turn out if you beat the whites with sugar separately, and then add the yolks, continuing to beat.
  • Do not use too unripe apples for cooking - they give excess moisture when baking in the oven. Overripe fruits with starchy pulp are also not good - they will turn into porridge.
  • No baking powder needs to be added. The biscuit will rise perfectly and be fluffy on eggs alone.

I derived my signature recipe using a reliable old tool - experience. You just have to go through all the technological operations step by step and get the treasured lush apple charlotte.

Ingredients

  • Four large eggs;
  • 225 g flour;
  • 175 g of sugar;
  • 140 ml of vegetable oil without a pronounced aroma;
  • 5 g vanilla sugar:
  • 1000 kg of sweet and sour apples;
  • one teaspoon (without a slide) of soda;
  • on the tip of a knife of salt.

How to do

We cut the washed apples into quarters, remove the seed nests, cut into slices.

We put sugar, salt, vanilla sugar in a high container, break the eggs there. We pour vegetable oil. Beat first at medium speed for about 2 - 3 minutes.

Then beat at high speed for 3-4 minutes. The mass will become lighter, slightly increase in volume.

Sift flour together with soda.

Add flour to the whipped mixture in two to three additions, continuing to beat. It will turn out a liquid dough, as in the photo.

Cut out a square piece of baking paper, lay the bottom of a round detachable form (diameter 24 cm) with it, sprinkle with sugar, flour.

Arrange the first layer of apple slices on the bottom, pour about half of the dough, twist the mold to the left, to the right, so that the dough is more evenly distributed.

Divide the remaining apples.

Pour the rest of the dough on them, distribute it with a spoon and scroll the form in different directions. Hit the mold a couple of times on the table to release excess air.

Bake charlotte with apples in an oven preheated to 180 ° C for about 75 minutes. Readiness to check with a splinter. It should come out of the thickest part of the cake completely dry.

My remarks

  • It is possible to replace vegetable oil with butter or melted pork lard. The taste and appearance will vary - the most magnificent is charlotte with vegetable oil. Charlotte with butter will have the most “creamy” delicate taste, pork lard will give the dough elasticity and “juiciness”.
  • Sprinkle over apples, if desired. I do not do this. What I like about this pie is the delicate, clean apple flavor and aroma.
  • The best charlotte is obtained with sweet and sour, strong green apples. They will give enough, but not too much juice, they will retain their shape in the finished product, their sourness will successfully contrast with the sweet taste of a juicy biscuit.

I slightly changed the original recipe, which I once found in a Czech magazine, and added some raisins to the ingredients. I always think that cottage cheese with raisins is a great combination. The sweetness of raisins is the best way to set off the sour taste of apples and make the charlotte as a whole more “textured”.

Ingredients

  • Four eggs;
  • a handful of raisins;
  • 250 g cottage cheese (18%);
  • 750 g of apples;
  • 120 g of sugar;
  • 140 g flour;
  • one tablespoon of corn starch;
  • half a teaspoon of soda;
  • 5 g vanilla sugar.

How to do

  1. Wash the apples, remove the seed pods, cut into thin slices.
  2. Wash raisins, dry.
  3. Heat oil (two tablespoons) in a heavy bottomed saucepan, add sugar. While stirring, bring the sugar to a beautiful light caramel color. Make sure that the mass does not burn!
  4. Put apple slices in caramel, mix, cook for a couple of minutes.
  5. Whip the egg yolks with the cottage cheese and remaining butter with any suitable kitchen gadget.

We probably do not have such a family where they would not cook such a pie with the beautiful name "Charlotte". I was sure that the name is associated with France. But it turned out that the classic charlotte with apples has more to do with England. Like many popular dishes, charlotte has several versions of its origin. I like the romantic love story of an English chef who is in love with a girl with a beautiful name Charlotte. To win her heart, he came up with a very tasty dessert and gave it the name of his beloved. And yet, according to most culinary experts, the name of the dessert comes from the English charlyt, which means a dish made from beaten eggs, milk and sugar. Charlotte was prepared as a cold dessert from slices of bread soaked in syrup, butter, eggs with milk and even wine, which were placed in a special form and alternated with fruit.

Later, at the beginning of the 19th century, the French chef Marie Antoine Karem came up with a new dessert called Russian charlotte - Charlotte Russe. Instead of bread, he lined the form with savoiardi cookies, and filled the middle with Bavarian cream with gelatin. It is interesting that such a dessert was most liked not in Russia, but in America.

And in Russia, over time, this pie turned into a biscuit pie with apples. Classic charlotte with apples is one of the most popular pies. More than one generation has grown up on it, I myself started to cook such a cake when I was 10-12 years old. Its popularity is explained by the availability of products, because apples, eggs and flour were in our kitchen even in times of shortage. During this time, a lot of charlotte recipes have been invented, each housewife brings her own “zest” to this recipe. But no matter what recipe we cook, the result is almost always excellent.

Classic charlotte with apples - a step by step recipe

The classic charlotte with apples is an excellent pastry for tea when the apples are ripe in the garden and you want to quickly cook something tasty. The classic charlotte should be fluffy, and therefore it is prepared like a biscuit cake, with a lot of eggs.

We will need:

  • apples - 7 pcs. (approximately of course)
  • flour - 1 cup
  • sugar - 1 cup
  • cinnamon - 1/2 tsp
  • vanilla sugar - 1/2 tsp
  • eggs - 5 pcs.
  1. Let's prepare the apples. To do this, remove the core, seeds. Cut apples into thin slices. To prevent the apples from turning brown, you can sprinkle them with lemon juice.

2. Before preparing the dough, you can turn on the oven to preheat. We will put the pie in a well-heated oven.

3. In order to get an airy dough, you must first separate the egg whites from the yolks.

4. Squirrels, gradually adding sugar, beat with a mixer for several minutes. Proteins should almost double in size.

5. We also gradually mix the yolks into the dough without turning off the mixer. If there is no mixer, it does not matter, stir the dough with a regular spoon.

6. Add vanilla sugar.

7. Sift the flour through a sieve before kneading. Then gradually pour the flour into the dough, stirring it continuously.

8. It is advisable to take a form for charlotte with high sides and a detachable one, so that it is convenient to take out the finished cake. We cover the bottom of the form with baking paper and grease with vegetable oil.

9. Divide the dough into 2 parts. Pour half of the dough into the mold.

10. Now put the apples on the dough. We lay out the slices with an overlap so that more apples fit and the cake would turn out juicy. Sprinkle apples with cinnamon to taste.

11. Top with the remaining dough, distributing it evenly over the entire surface.

12. Put the cake in the oven first at 190 degrees for 10 minutes, and then reduce the temperature to 180 and bake for 30-40 minutes.

Another great charlotte recipe that has its own twists and turns. Let the classic charlotte not be offended, here we will add a little sour cream. And we will decorate this charlotte beautifully with apples.

We will need:

  • apples - 5-6 pcs.
  • flour - 150 gr.
  • sugar - 150 gr.
  • vanilla sugar - 10 gr.
  • salt - a pinch
  • cinnamon - to taste
  • eggs - 4 pcs.
  • zest of 1 orange
  • sour cream - 1 tbsp. l. with a slide

I must say right away that we will decorate the charlotte with apples, so it is advisable to cook red apples - just more beautiful.

  1. Cut apples into thin slices. And you can turn on the oven at 180 degrees at this stage.

2. Let's try not to separate the white from the yolk for the airy charlotte of the eggs, but to beat the whole eggs. It is best to use a food processor or mixer for this. Beat the eggs at medium speed, adding a pinch of salt and vanilla sugar.

3. Whisking continuously, add sugar gradually. Whipping speed can be increased. Beat for 6-7 minutes, you should get a homogeneous, lush white mass.

4. It's the turn to add flour. We pre-sift it through a sieve and gradually introduce it to the eggs. At the same time, the mixer continues to work continuously.

5. To give the cake a special flavor, grate the orange zest and mix it into the dough.

6. In conclusion, add 1 tablespoon (possible with a slide) of fat sour cream. We mix the dough.

7. We cover the bottom of the baking dish with paper, which we grease with butter and sprinkle a little with sugar.

8. Put apples on the bottom and sprinkle with cinnamon for a delicious flavor.

9. Pour apples with dough, and decorate with apples on top. To do this, insert the apple slices into the dough, moving from the outer edge to the center in a spiral.

10. Put the charlotte in a preheated oven for 30 minutes. Charlotte actually turns out to be airy and beautiful.

We cook the classic charlotte like a biscuit, with a lot of eggs. But if you have kefir in your refrigerator, then kefir turns out to be no less tasty charlotte with apples. And how beautiful it can be made with the same apples!

We will need:

  • apples - 5-6 pcs.
  • flour - 160 gr.
  • sugar - 100 gr.
  • salt - a pinch
  • kefir - 150 ml
  • vanilla sugar - 10 gr.
  • vegetable oil - 60 gr.
  • eggs - 2 pcs.
  • soda - 1/2 tsp

For decoration:

  • apples - 2 pcs.
  • water - 120 ml.
  • sugar - 90 gr.
  1. Kefir for the test should be at room temperature. Pour it into a bowl and add soda there. Stir and leave for 5 minutes, so that the soda quenching reaction starts.

2. We remove the middle and seeds from apples. Cut apples into thin slices. Do not forget to leave 2 apples for decoration (this is optional).

3. Drive eggs into a bowl with kefir and stir well. Add salt, sugar and vanilla sugar there.

4. Sift the flour and gradually add it to the dough, while stirring continuously.

5. Pour in vegetable oil, continue stirring until smooth. The consistency of the dough is similar to thick sour cream.

6. We cover the baking dish with paper and pour the dough into it.

7. Apple slices in this charlotte on top of the pie. We insert the slices into the dough with a cut down, laying them in a spiral.

8. Bake in an oven preheated to 180 degrees for about 40 minutes. The cake is covered with a beautiful golden crust.

How to decorate a cake with apple roses

Bring water to a boil in a pan and add some sugar. When the sugar begins to caramelize, add the apple slices to the pan.

Simmer apples over low heat for about 3 minutes, first on one side, and then turn over. The apples will become soft, and after that it will be easy to form roses from them.

To do this, lay the apple slices tightly one next to the other, folding into a flower. Bottom can be fastened with a toothpick and fixed on a charlotte.

One of my favorite recipes as it is the easiest of all. Even away from your recipe notes, you can easily remember the recipe - all 1 glass.

We will need:

  • apples - 3 pcs.
  • flour - 1 cup
  • sugar - 1 cup
  • sour cream - 1 cup
  • vanilla sugar - 10 gr.
  • eggs - 1 pc.
  • soda - 1/2 tsp quenched with vinegar or baking powder
  • cinnamon to taste

This recipe is very simple, even a beginner will cook.

  1. In a bowl, beat the egg, add sugar, vanilla sugar and sour cream. Stir with a mixer.

2. Sift the flour and also gradually add it to the dough, continuously stirring with a mixer. Do not forget to add baking powder or add soda quenched with vinegar.

3. Peel the apples and cut into thin slices. Lubricate the baking dish with vegetable or butter and put half the apples on the bottom. Sprinkle apples with cinnamon, if desired.
