Soaked cranberries and soaked cranberries - one of the easiest ways to harvest, allowing you to keep these berries until winter or spring almost intact and almost fresh.

The main advantage of this method is that the appearance and taste of the berries remain unchanged, and the main inconvenience is that you need to store jars with soaked berries in a cold place, but at a positive temperature, which means that in urban conditions only in a refrigerator in which space limited. However, it seems to us that it would still be good to have two or three cans of lingonberries and a jar of cranberries in the refrigerator. When choosing which berries you will soak, you need to remember that cranberries are much more acidic than lingonberries, and therefore more limited in future use. Soaked lingonberries are good for decorating homemade cakes, desserts, tartlets with meat salads - just generously sprinkle with berries on top. Cranberries for these purposes should be used with great care, just a few berries, otherwise its sharp sour taste can ruin your dish. But by adding a few freshly crushed cranberries to a layer of sweet cake, you get an amazing sour taste. And both lingonberries and cranberries can be added as an ingredient to some meat salads. Need:

  • Lingonberries (or cranberries) - 4-5 glasses (standard, 200 ml)
  • Water - 1 liter
  • Sugar - 5 tablespoons
  • Cloves - 10 pieces (just in case, for "culinary dummies", we clarify: we do not mean flowers, but the fragrant spice of the same name, which is sold in small bags, like all spices, in grocery stores)
  • Allspice peas - 4-5 peas

In addition, you will need 2 glass jars with screw caps with a volume of 0.6-0.8 liters.

Cooking:


We remind you that for lingonberries and cranberries the process is the same. For soaking, we select the most beautiful, strong, large berries. The berries need to be washed and sorted out (we already wrote about how to do this in the lingonberry jam recipe, you can see this). Before soaking, the berries selected and washed with raw water should be washed with chilled boiled water (fill them with cold boiled water in a clean bowl and slightly “chat” with your hands there), then we throw the berries into a colander and let the water drain.


Pour a liter of water into a ladle or a small saucepan, put it on the stove and bring to a boil. When the water boils, add sugar, cloves and allspice, stir so that the sugar dissolves completely. Reduce heat and boil for 3-5 minutes. Turn off the stove, remove and discard the cloves and allspice peas. The resulting syrup (syrup here is a conditional concept, it is not very sweet, but somehow the resulting liquid must be called - not brine!) Cool to room temperature.


Pour berries into clean, dry jars, while the jar should not be completely filled with them, the berries occupy 2/3 or 3/4 of the jar volume.


Pour the berries in jars with chilled syrup - now our jars are full, the berries, as a rule, float to the surface.


We twist the lids on the jars and put them in the refrigerator, (or soaked cranberries) are ready.

The forest gives us many benefits, among them lingonberries stand out, it has long been customary to wet it for the winter. Easy winter recipe

Cooking according to this recipe is simple, just put everything in a prepared jar and pour boiled water over it. It is enough to take a kilo of prepared berries, a pound of sugar, a teaspoon of salt and about 3 liters of water.

The forest gift is placed in a container for urination, the filling is prepared separately. Water is boiled with sugar and salt. Cool the marinade. The stacked berries are poured with prepared water with sugar and salt, put oppression, covered with gauze. After 20 days, the berry is ready.

cold way

Berries soaked in this way are easy to store, and it is not difficult to cook them. Properly calculated ingredients will help the product last longer.

The recipe is different in that the filling of berries is carried out with boiled water, without the addition of spices and spices.

As a result, we get a drink with a natural taste, and the berry will be like fresh. For every one and a half kilos of berries, 4.5 liters of water will be required.

The workflow is carried out as follows:

  1. Berries are placed in a prepared container by a third.
  2. Fill to the top with water.
  3. Close the lid with holes and put in a dark place for a week.

After 7 days, a sample is taken. You can use it as you like, but do not forget to add the selected amount of liquid to the berries.

Sugarless

The filling in this recipe is very tasty, you can add it with daily use, as it is used up. It is worth remembering that after 2-3 months the berries and liquid will no longer be suitable for consumption. A jar with a capacity of 3 liters is prepared for urination, about a liter of prepared berries are placed there. In a saucepan, boil and cool to room temperature 2.5 liters of water, pour into a jar of lingonberries. The jar is closed with parchment or a nylon lid with holes. Put in a dark place. Additionally, it is advisable to cover the lid with gauze, this will prevent the entry of small insects.

With salt

Very little sugar is used to prepare urination - salt and selected spices will give the main taste. The most commonly used is cloves. For a kilo of berries you will need a liter of water, 30 grams of salt, sugar on the tip of a knife, a clove bud. The berries are placed in a container for urinating, syrup is boiled from the remaining ingredients, cooled and poured over the berries. Under a nylon cover for 10 days they are stored in a room with a temperature of up to 10 degrees, then they are taken out to a cooler room.

With honey

In this way, it will be possible to prepare a berry, as in ancient times - there was no sugar then. Instead, honey was used as a sweetener. No more than 100 grams of honey are taken per kilo of product from the forest, salt is on the tip of a knife, and cinnamon and cloves are optional.

Prepared jars are filled with berries up to their shoulders. Water is measured, boiled and cooled liquid is poured into jars, and then poured into a common vessel. The rest of the ingredients are added there and heated in a water bath. Berries are poured with cooled syrup and placed in a cool place without light.

With sugar

How to soak lingonberries with sugar so that it is not cloying, but also sweetness is felt? We use the following recipe:

  1. A kilo of berries is laid out in jars, 5 centimeters without filling up to the top.
  2. From a liter of water, 250 grams of sugar, 2 grams of salt prepare syrup.
  3. Jars are poured with chilled brew.
  4. Cover with gauze in several layers.

Storage can be carried out at room temperature, but not more than a couple of months.

Without cooking

Urination is carried out in a standard way, but it is not necessary to boil the syrup, it is enough just to dissolve the sugar in water. A glass of sugar is taken per liter of liquid, the jars are completely filled with berries, poured with syrup, covered with a lid or gauze in several layers.

How to store

It is not enough to save the benefit of the berry by urinating, it is necessary to choose the most suitable temperature regime. Usually, storage is divided into two stages: for the first 2-4 weeks, pickled berries are stored at higher temperatures, and then they are taken out to a cool room without light. At the very beginning, you can store the gifts of the forest in a room or in the kitchen, and then put it in the refrigerator or basement, unless otherwise indicated in the recipe.

Step 1: prepare the cranberries.

To begin with, we need to sort out the berries and separate fresh, ripe lingonberries from spoiled and unripe ones. For economical housewives, the last berries can not be thrown away, but boil compote or jelly from them. But not without the fact, of course, that completely spoiled berries will not correct the situation and it is unlikely that they will make a good tasty drink. Therefore, if such ones come across under the arm, it is better to get rid of them. And put good berries in a large bowl. Pour plain cold water into a container and gently rinse the lingonberries in it. After that, we drain the water through a colander, and transfer the washed main ingredient to another large bowl.

Step 2: Sterilize the jars.

In order for our Soaked lingonberries to be stored for a long time, it is necessary to prepare the container. Therefore, we wash the jars under running warm water. You can add some baking soda and treat the containers well inside and out. Soda itself is a good alkali and therefore washes away grease and dried dirt from dishes. We rinse the jars until the soda coating disappears in the containers, and the jars begin to “creak”. Place a medium saucepan over high heat with a little water. When the water boils, make a slightly less than medium heat and place a flat sieve or an ordinary oven grate on top of the container. We put the jars on the surface so that they are at a small distance from each other. We sterilize the container within 15 minutes. And when droplets of steam begin to flow along the walls of the cans from the inside, turn off the fire. Attention: the jars are very hot, so we use cloth potholders and transfer the containers to the kitchen table covered with clean cloth towels.

Step 3: prepare the syrup.

We put a large saucepan on the fire and bring purified water to a boil. After - make medium heat and add sugar to the water with a spoon. You can add more sugar if you like sweeter dishes. Stir with a spoon until the sugar dissolves. After - turn off the heat and set the pan aside - let the sweet water cool to room temperature.

Step 4: Prepare the Soaked Lingonberries.

As I said, lingonberries prepared according to this recipe can be stored for a very long time, while retaining their beneficial properties. Indeed, the composition of this berry-healer includes such minerals as iron, phosphorus, calcium, potassium and magnesium. In addition, it gives us vitamins A, B, C and E. Cooking method:

  • Put the lingonberries on the bottom. You can shift it with lingonberry leaves, but this is not necessary.
  • Boil and cool water to room temperature. Pour in the cranberries.
  • Close the jar with parchment paper or a nylon lid with a slit (the slit can be made with a sharp knife) or round holes (such lids are usually used when preserving to drain the marinade from jars). Additionally, the lid can be covered with gauze to protect against insects.
  • Put in a dark, cool place.

The lingonberries soaked in their own juice will be ready in a week. Benzoic acid, which is very abundant in the composition of this berry, will help her to be stored all winter. But the water must be periodically poured out of the can, topping up with fresh water. From the juice poured from a can, you can make a tasty and healthy fruit drink, and use the berries themselves later.

Soaked cranberries with sugar

  • lingonberries - 1 kg;
  • sugar - 0.15 kg;
  • apple (optional) - 50 g;
  • salt - 2 g;
  • water - 1 l.

Cooking method:

  • Sort and rinse the berries well. Let the water drain.
  • From a liter of water, salt and sugar, boil the syrup. Cool it - it should not be hot, otherwise the berries will not retain their shape.

  • lingonberries - 1 kg;
  • water - 1 l;
  • salt - 20 g;
  • sugar - 3 g;
  • carnation - 1 pc.

Cooking method:

  • Pour washed and dried lingonberries into sterilized jars.
  • Boil water, put cloves, salt and sugar in it, cook for a couple of minutes.

  • Pour the right amount of water into the pan, put spices, salt and sugar in it.

Lingonberries for the winter are prepared using the following components:

  • 20 g of salt;
  • 3 g of granulated sugar;
  • 1 clove.

A step-by-step recipe for a dish includes several steps:

  2. For some time, the resulting syrup is infused under a closed lid.
  3. Place lingonberries in sterilized glass containers.

Prepare the following foods:

An excellent winter dessert is lingonberries soaked with apples. The ideal ratio of tastes of two natural ingredients will give a lot of unforgettable moments. But most importantly: the process of preparing the dish is very simple.

Stock up on ingredients:

  • 1 kg of berries;
  • 500 g of apples;
  • 0.7 l of water;
  • Salt ½ tsp;
  • 250 g of granulated sugar;
  • 100 g of vinegar (9%);
  • Spices: cloves, black peppercorns, cloves.

Then start cooking:

  1. Prepare fruits: wash and dry the berries, cut the apples into small slices.
  2. Boil the marinade using water and spices.
  3. Arrange the fruits in jars.
  4. Add boiled liquid.
