Tips for cooking meatballs

Meatballs in a slow cooker prepare without hassle. Especially if you make meatballs without pre-frying. Meat balls are perfectly steamed in a slow cooker, they turn out soft and low in calories, since almost no fat is used. To ensure that the meatballs do not fall apart during cooking and that they turn out beautiful and tasty, take into account the advice of experienced housewives on how to cook meatballs in a slow cooker:

  • In addition to minced meat, the meatballs contain porridge (rice, pearl barley, buckwheat) and vegetables (cabbage, potatoes, onions, carrots). To prevent the meatballs from falling apart, it is advisable that the amount of porridge and vegetables does not exceed the amount of meat.
  • Minced meat held together by eggs. However, egg white makes the meatballs tough. If possible, add only yolks to the minced meat.
  • Use broken rice for cooking, buckwheat and other cereals. It is more sticky, so the meatballs will not fall apart.
  • If you decide to make minced meat from raw cereals, add more water. For one serving of cereal you need to add 3 servings of water, and on top of this add liquid for the sauce.
  • For meatballs, creamy sauces are prepared with sour cream and cream, tomato, mushroom, vegetable, when the vegetable sauté is filled with water and thickened with flour.
  • Instead of flour, you can thicken the gravy with starch. To do this, dilute 1 teaspoon of starch in 0.5 cups of cold water and add to the sauce, stirring gently so that no clots form.
  • Serve the finished dish with a side dish warm.. Meatballs can also be served cold as an independent dish.

You probably know how to cook delicious meatballs, but you bought a multicooker and have never tried making them in this smart device. Let's correct the mistake and prepare meatballs in a slow cooker: select minced meat, rice, all other ingredients, and get started without delay.

Meat you can take any. In our family we respect pork or assorted pork and chicken. But perhaps you like lean veal, or turkey, or assorted pork and beef - take them.

Gravy- this is also important. Until I got to Greece and tried meatballs in tomato-pepper sauce, I didn’t even realize how diverse the effects of this dish are, how unrecognizable it can be. Today I prepared a sauce for meatballs using ketchup and sour cream with tasty additives.

Choosing for meatballs rice, I usually prefer evaporated grits - I like it neat and a little firm. And you decide for yourself which rice you like best. This is completely unimportant, you just need to remember that meatballs made from traditional Krasnodar meatballs and fashionable brown meatballs (“fashionable” because health is in fashion today) turn out different.

Preparation time: 20 minutes. Cooking time: 40 minutes. Servings: 7 pcs.

Ingredients

  • minced meat (pork) 500g
  • rice 150g
  • chicken eggs 1 pc.
  • onion 100g
  • ketchup 1 tbsp.
  • sour cream 2 tbsp.
  • wheat flour 1 tbsp.
  • vegetable oil 5 tbsp.
  • chopped dill 1 tbsp.
  • water 1 tbsp.
  • salt 2 pinches
  • bay leaf and black peppercorns to taste

To prepare the meatballs, we used a multi-cooker-pressure cooker Brand 6051 with a power of 1000 W and a bowl capacity of 5 liters.

Preparation

Peel the onion and cut into small cubes. In my opinion, this is much tastier than when the onions are passed through a meat grinder along with minced meat. In the meat grinder, it releases juice, which we are forced to drain, and when slicing, all the pieces retain their integrity, taste and aroma. In a word, cutting is more natural. More correct.

Combine minced meat, washed rice (in three waters, pay attention!), egg, salt and chopped onion in a bowl.

Mix all the components of the minced meat by hand so that they are evenly distributed throughout the entire volume.

Now the sauce. We combine sour cream with ketchup and flour in a bowl, trying to mix them evenly, so add the flour gradually while stirring.

Add 1 glass of water, a little salt and dissolve all the ingredients of the sauce, stirring evenly.

From the resulting minced meat you need to make round meatballs of any size so that they fit in one layer in the multicooker bowl.

Pour sunflower oil into the multicooker, turn on the “frying” mode, and when the container warms up a little, lay out the meatballs.

Fry the meatballs in a slow cooker on all sides until golden brown for no more than 10 minutes - this is necessary so that they do not lose their shape during stewing.

Turn off the “frying” mode, add bay leaves and peppercorns to taste and pour sauce (a mixture of flour, sour cream, ketchup and water) over the meatballs.

Important: the meatballs must be at least half immersed in the sauce.
Sprinkle them with chopped dill or parsley, close the lid and cook in the “stew” mode for 30 minutes at maximum pressure (70 kPa).

After the multicooker beeps to indicate the end of operation and the pressure has dropped, you can serve aromatic and satisfying meatballs from the multicooker with gravy.
