Broccoli is a controversial vegetable: despite the fact that it is a treasure trove of vitamins and a storehouse of microelements, most residents of the post-Soviet space do not have warm feelings towards it.

The reason for this is banal - many simply do not know the true taste of such a product. But it has long been proven that it depends entirely on compliance with the cooking technology. That’s why it’s important to know how to cook frozen broccoli and what “goodies” you can make from it.

Do I need to defrost broccoli before cooking?
Why are we talking about frozen cabbage? Yes, because in this form it is available all year round, which allows you to include it in your diet even in winter. However, do you need to defrost broccoli before cooking?

This is not recommended for a number of reasons:
Most of the vitamins will disappear irrevocably.
The inflorescences will become shapeless, turning into mush after cooking.
When trying to cook broccoli correctly, remove the bag of frozen vegetables from the freezer immediately before putting it in boiling water.

If the pieces are frozen and stuck together, defrost them just enough to be able to separate the inflorescences.

How and how long to cook frozen broccoli in a saucepan

When choosing a pan for cooking, it is important to follow several rules:
We use large containers so that the inflorescences touch each other less during cooking.
Pour in just enough water so that the vegetables are only lightly covered.
Dip the cabbage into lightly salted, boiling liquid.
Cook after boiling for 2 to 5 minutes. The duration of boiling depends on the size of the inflorescences: the larger they are, the longer the heat treatment lasts.
Remove the finished vegetable from boiling water. Left in it, it will simply quickly “creep away.”

How to cook broccoli in a saucepan step by step:
Place the bowl of water over high heat and bring the liquid to a boil.
Salt to taste (approximate proportions: 0.5 tsp salt per liter of water).
Place frozen inflorescences (or a whole head).
We wait until the water boils again, then turn the heat to low.
Cook the cabbage for the required number of minutes until done.
Using a slotted spoon, remove the inflorescences, place them on a plate, and pour melted butter or vegetable oil over them.

Shrimp is a very tasty and healthy product. It is quite possible to cook it at home, but to do this you should follow a few simple cooking rules. The finished shrimp meat will delight you with its softness, tenderness and juiciness.

Shrimp is a very tasty product, which in our usual society is considered a delicacy. This is because the cost of shrimp can be too high and sometimes exceeds all permitted standards. The higher the quality of the shrimp, the more expensive their cost will be.

It is worth noting that there are two types of shrimp:

  • cold-water
  • warm water

Cold-water shrimp are those shrimp that we usually call “Atlantic”. They are not large and they are cheaper. The more elite types of shrimp are considered warm-water: Tiger and Royal. This shrimp is much larger in size than the Atlantic one, it has more meat, and its meat is tastier.

Shrimp is a product that definitely needs to be cooked to avoid poisoning. In addition, the taste of cooked shrimp meat is aromatic and tender, while raw shrimp meat is almost tasteless, with a fishy taste.

The best way to prepare shrimp is to boil them. But this is not so simple either. The fact is that cooking shrimp requires a certain amount of time.

It must be followed very precisely. If you overcook the shrimp for just a minute, the meat will become rubbery and not tasty. And if you do everything correctly, the shrimp will literally “melt in your mouth.”

How and for how long to cook fresh shrimp after boiling?

Now that you have precisely determined the type of your product, you should start cooking them. It is important to know that there is no need to peel the shrimp before cooking; you risk tearing off excess pieces of meat.

However, if you have some personal beliefs and aversions to shrimp heads, you can do this painstaking work and chop off each head with a knife. But with the same success you can do this with the finished product, without harm to the meat.

Preparation of shrimp:

  • Prepare a large saucepan for cooking. It could even be a ten-liter saucepan. The main thing is a sufficient amount of water and a convenient way to catch shrimp with a slotted spoon.
  • Wait until the water boils completely and salt it, a teaspoon of salt per large pan of water is enough
  • If you wish, you can add any spice to the water to your taste. The most popular are: bay leaf, a bunch of dill, a few cloves and even a slice of lemon or lime

Boiled shrimp can be immediately placed on ice to cool and retain their tenderness. But this is far from essential. You can immediately place them on a paper towel to absorb excess water or on a serving plate.

Do I need to defrost shrimp before cooking?

In most cases, the buyer does not purchase freshly caught shrimp in the store, but frozen ones. This is the most common way to deliver shrimp anywhere in the world for consumption. But there is one nuance with such shrimp. As a rule, the product that is frozen is already semi-finished.

Probably, some have already noticed that fresh shrimp has an unpleasant grayish color, while packaged and frozen in a store it has an appetizing orange color. The semi-cooked shrimp is deliberately lightly boiled and frozen for ease of consumption.

This kind of shrimp should be cooked a little less time than fresh shrimp. It is important to know that it should not be defrosted. If you notice that there is too much ice on one shrimp, this is the consequence of several refreezes and the dishonest attitude of sellers towards the products.

It is best not to buy such shrimp. Avoid frozen weight shrimp and buy ones that are sealed.

If there is a lot of ice on the shrimp, you can try breaking it before cooking. Cover the shrimp with a towel and tap them with a rolling pin.

Cooking frozen shrimp:

  • Salt the water, pepper and add spices to taste
  • Place frozen shrimp in a saucepan
  • Without waiting for the next water to boil, time exactly forty seconds
  • After 30-40 seconds, take a slotted spoon and stirring all the shrimp, begin to take them out onto the dish one by one
  • Make sure your shrimp is soft

How long to cook frozen peeled shrimp?

Cooking frozen shrimp depends only on their size. Thirty seconds may be enough for a small shrimp, while a tiger shrimp requires a full minute.

Some gourmets are confident that no cooking should be done for frozen shrimp. In principle, this opinion is true. But for hygienic purposes and in order to eat a warm dish, there is one simple way to prepare the dish.

How long to cook frozen shrimp:

  • Open the bag and pour the shrimp into the bowl
  • Boil water in a kettle until it boils
  • Pour boiling water over all the shrimp
  • Keep an eye on the shrimp; they should be kept in hot water until the “ice glaze” completely disappears.
  • After this, you can drain the water and serve the shrimp on the table.
  • Sprinkle shrimp with lemon juice or prepare a separate creamy garlic sauce

How to cook frozen, unpeeled shrimp in the shell?

In a modern store you can find three types of shrimp for consumption:

  • freshly caught
  • unpeeled (those that were frozen immediately or after cooking)
  • peeled (can be pickled, can be in sauce and even frozen)

The difference between peeled and unpeeled is that some have a shell, while others do not. If you see shrimp meat on sale, you should know that this is a ready-to-eat product that only requires defrosting. Shrimp that show a shell have a natural shell and eggs (depending on gender).

Shrimp meat in any form is more expensive than unpeeled shrimp because most of the work has already been done. The existing shell does not affect the taste of the product in any way. While you boil the water, fresh shrimp should be cooked in the usual way:

  • small - half a minute
  • large - two and a half

Cooled, cooked shrimp in the shell are easy to eat. You tear off the tail (it is spiny and not edible), as well as the head. Spread the legs of the shrimp and take out the meat. Everything is very simple.

Almost every housewife makes elementary mistakes when cooking meat. In most cases, she pours cold water over the meat, and during the boiling process begins to remove the foam. Foam, by the way, is nothing more than a protein that has coagulated. During the heating process, mineral salts and proteins dissolved in cold water pass into the water, but when placing meat in boiling water, they mainly remain in the product itself. How to cook meat correctly? There are some secrets in this matter.

How to cook meat correctly

If you are not interested in a good broth as a result of cooking meat, put the meat in boiling water. If you want a rich broth, place the meat in cold water. Take your time to skim off the foam - it is useful for the broth and has nutritional value. And to remove unsightly flakes, just put a head of onion in the pan, this will make the whites curl and the foam will disappear. Cook the broth or soup over low heat, this will keep the dish transparent. If you want the nutrients to be preserved not in the broth, but in the meat, add salt immediately after boiling. During the cooking process, the pan with meat should be closed, this will improve the taste of the final product. Excess oxygen will not enter the pan, thereby minimizing fat oxidation. After turning off the heat, leave the meat in the broth for another 10 minutes. Next, the meat must be removed, even if you do not serve it immediately. Do you want to use the product a little later? Then, to preserve the juice in the meat, carefully wrap it in foil or hide it in a plastic container.

Is it possible to cook frozen meat?

We’ll answer right away: you can, but first you should familiarize yourself with some nuances. So, if you need frozen meat for soup, no problem! Just remember to skim off the foam, otherwise you risk getting reproached for making the soup cloudy. Here it is useful to clarify that the richness of the broth is determined not by the meat, but by the bones, so it is better to save the meat itself for the second course. If the meat is intended to be used specifically for these purposes, it is still advisable to defrost it first. Firstly, defrosted meat will have a completely different taste after cooking. Unfrozen meat can greatly disappoint you in this regard. Secondly, the product will lose its main nutrients; in fact, a frozen piece of meat will not bring any benefit to the body. Typically, meat is defrosted at room temperature by immersing it in water. Such defrosting can make the product tougher, but if the operation is performed in the microwave, you will lose the normal “marketable” appearance of the meat. Thus, we have established that there are no theoretical contraindications to cooking frozen meat. You just have to be prepared for our product to lose a certain part of its beneficial properties, and, of course, taste.

Is it possible to cook smoked meat?

And this procedure is quite doable. Such meat should be washed and placed in boiling water. Since the volume of the product practically does not change during cooking, it must be completely covered with water. Smoked meat is cooked within 1-3 hours, depending on the size of the piece. Do not add water as it evaporates - its amount should be calculated immediately. Smoked meat is cooked over low heat. The degree of its readiness is determined using a fork. Do not rush to remove the finished product from the pan - let the meat cool in the broth.

Shrimp are small sea crayfish of the order of decapods; they live in the seas, and some species also live in fresh water bodies. Depending on the type of shrimp, they grow up to 30 cm (jumbo shrimp).

Shrimp can be eaten as an independent dish, or served with any side dish. But it’s better to refrain from eating shrimp with beer. Shrimp is also an excellent base for first and second courses.

Before you cook the shrimp, you need to buy them.

Stores sell shrimp in paste form, fresh frozen or more often, boiled-frozen, uncut, headless or peeled (one meat). On the packaging, numbers indicate the number of shrimp in 1 kg or pound (453.6 g), for example 90/120, 50/70, the lower the number, the larger the shrimp.

Some useful tips on how to choose the right shrimp:

  • Fresh shrimp is firm and smells like the sea.
  • The more the shrimp is bent, the shorter it sits before freezing.
  • Not fresh or spoiled shrimp will be dried out, with yellowish flesh and/or black spots on the legs.
  • Dry white spots indicate that the shrimp are frozen.
  • Boiled-frozen shrimp are better preserved if they are frozen in one block.
  • The ice should have a thickness of no more than 1 mm (according to our GOSTs, there should be up to 4% ice) and the shrimp should be easily separated from each other.
  • If the shrimp are pale pink and/or there is a lot of snow in the package, this means that they have been defrosted and frozen frequently during storage.
  • It’s not scary if the shrimp’s head is greenish, which means it fed on plankton, but a pregnant shrimp will have a brown head; its meat during this period is more useful. It is not advisable to buy black heads on shrimp that have not been frozen for a long time.
  • if you buy 1 kg of uncut frozen shrimp, after cooking you will get 500-600 g, and after cleaning you will only get 250-300 g of shrimp meat;
  • To preserve nutrients and taste, you need to defrost shrimp gradually: first transfer them from the freezer to a regular refrigerator compartment, and then defrost them at room temperature;
  • shrimp are a perishable product; they cannot be stored for a long time in a defrosted form;
  • the cooking time of shrimp depends on the size, the smaller the size, the faster they cook;
  • to quickly remove the shell from shrimp after cooking, dip them in cold water for 2 minutes;
  • To keep the shrimp juicy, after cooking, you can leave them in the water for 10-15 minutes.
