The abundance of meatballs and dumplings on shop windows seems to be trying to nullify the industry of preparing real home-made minced meat!

And numerous advice from online chefs regales users with distorted facts about what meatballs are in general. Let's start by remembering that minced meat dishes with additives other than salt, pepper and other spices are most likely cutlets or meatballs.

How to choose meat for making delicious meatballs?

Meatballs, like steaks, are made from minced meat without fillers.

Where did meatballs come to us from? The word "fricadelle" is originally Italian and means "meat balls". But housewives from all over the world learned to cook minced meat almost simultaneously.

Meatballs are not a dish for a rich table, crackling with the abundance of dishes on it. This is budget food for working families, and it’s worth talking about the “tenderness” of the taste of meatballs only if you can afford not to save money and cook minced pulp of the first or even the highest grade. As an option, you can cook their trimmings (goulash), which are used for minced meat in order to save money, and the meatballs may turn out tasty, but they can hardly be called tender.

However, these products are very valuable because they can be stored for quite a long time when frozen. They can be used as a material for quickly preparing first or second courses.

Cooking secrets and tricks

You can improve the taste of meatballs by mixing two types of minced meat. (beef and pork) in a ratio of 1:3. You can add some other ground meat (turkey, chicken, lamb), and this will add piquancy to the dish.

Classically, meatballs are made only slightly larger than the volume of minced meat which is contained in dumplings. And this is done just for speed of preparation. At any time, the housewife can take out round meatballs from the freezer and cook them with minimal time.

Many argue that cooking meatballs without fillers is “not economical.” And this is again a debate about taste preferences! Some people will prefer to eat a small bowl of delicious meatball soup without bread, rice, semolina or the like, while others will want a large bowl of meatball soup made from meat with the addition of minced meat.

Recipe for classic meatballs

  1. For a kilogram of beef, take three hundred to four hundred grams of lean pork and grind the meat in a meat grinder. Salt, pepper, thyme - to taste. Chop a few cloves of garlic with a knife (however, you can use a garlic press) and also add to the mass. Stir everything extremely thoroughly. The degree of tenderness of our meatballs will depend on this. In the case of poorly ground or lazily stirred minced meat, they will not be too tender!
  2. The last step in preparation is rolling balls the size of a small plum. When freezing, divide the meatballs into as many servings as you plan to use them to feed a certain number of people.
