Cut the cooled butter into small pieces and place in a deep bowl. Pour in granulated sugar. And mix well.

Add full-fat sour cream, preferably homemade, and mix.

Beat in a chicken egg. Continue stirring until smooth.

Peel the ginger root and chop on a fine grater. Add grated ginger and baking powder to the oil mixture. Stir.

Add sifted wheat flour in small portions. Stir with a spoon until thick.

Place on a dusted board and continue kneading with your hands until a dense dough forms that does not stick to your hands. Wrap in cling film and refrigerate for 60 minutes.

Remove the dough from the refrigerator and divide into four parts. Place three of them in the refrigerator. We work with each part separately.

Roll out into a thin layer 5 mm high. Take your cookie cutters and cut out the shapes you want. Do the same with the rest of the dough.

Place the blanks on a baking sheet with parchment and place in a hot oven for 15-25 minutes at 180 degrees.

Cool the finished cookies to room temperature.

While the cookies are cooling, prepare the glaze. Place the cold egg white in a clean, deep container. Add a pinch of salt. Beat with a hand whisk until foam forms. If using a mixer, beat at low speed. Add powdered sugar in small portions. Mix well after each addition. Pour in the lemon juice and continue stirring until all the powdered sugar has been incorporated. Depending on the weight of the protein and the desired consistency of the glaze, powdered sugar can take from 120 to 180 grams. If you need a thicker glaze, add more powder.

Brush the cooled cookies with glaze using a kitchen brush and let the glaze dry a little.

If you want to draw something on cookies, take the required amount of prepared glaze, add a couple of drops of coloring and powdered sugar so that the glaze does not spread. Place the colored icing in a piping bag with a small hole and pipe the desired pattern.

Gingerbread cookies with glaze are ready.
