Rice is not picky about its partners: add meat to it - it will be delicious, add vegetables - also good, make a sweet sauce - great, a seafood cocktail - please... The main thing is not to overcook the rice, but choose the right spices and sauce for additional products.

In Spain, one of the versions of the iconic (especially for tourists) national dish – paella – is prepared with seafood.

Of course, it would be too bold to call our version of rice with shrimp paella, but there is no need for unnecessary modesty either: try it - it’s very tasty!

Ingredients

  • boiled frozen shrimp – 500 g
  • rice – 300 g
  • onions – 3 pcs.
  • sweet carrots - 3 pcs.
  • ginger – 1 g
  • black pepper – 1 g
  • salt – 2 g
  • red pepper - on the tip of a knife

Total cooking time: 40 minutes, number of servings: 3-4.

Preparation

1. You must first select shrimp. We recommend using boiled and frozen ones, they are much faster to work with.

2. The shrimp must be kept in boiling water for about 5 minutes. Drain the liquid and pour boiling water over it again. This way they will be completely defrosted.

3. Wash the rice, add it to the pan and boil until half cooked for 10-15 minutes.

4. Peel the onion and cut it into small cubes. Place it on a heated frying pan and lightly fry.

5. Peel the carrots and cut into strips. Add it to the frying pan and fry it the same way.

6. As soon as the onions begin to become golden brown, add rice to the pan. Once all the ingredients are in the pan, you need to add all the seasonings.

7. At the very end, shrimp are added.

8. Add 50 - 100 ml of water to the frying pan. The rice should be cooked well.

9. Place the finished dish on plates and garnish with shrimp.

Note to the hostess

1. The cooking process guide suggests the best method for defrosting shrimp. You shouldn’t treat them like meat, that is, keep them on the bottom shelf of the refrigerator for a long time. There they will thaw too slowly, gradually losing the juice that formed inside them during the initial heat treatment - even before freezing.

2. Despite the fact that the time for boiling rice is specified here, you still need to independently monitor the stage of its half-cooking. Surely housewives have noticed that one type of cereal boils quickly, while another is much slower. You need to take out 3-4 grains with a slotted spoon, rinse them with cold water and bite them into pieces. If the middle is crunchy and the outer part has softened, it’s time to remove it from the burner.

Very often this Thai dish is confused with the Italian dish risotto, since the main ingredients are almost the same. But there are differences in preparation and consistency. The Thai version is rice porridge with all sorts of additives, and the Italian version is a pasta-like soup. As we have already said, preparing this dish is extremely simple, you just need to adhere to the technology and prepare the products required by the recipe in advance.

Ingredients:

  • 250 grams of rice;
  • 300 grams of shrimp;
  • three tablespoons butter;
  • one onion;
  • head of garlic;
  • ground pepper;
  • salt.

Preparation:

  1. First you need to cook the rice properly. First of all, you need to rinse it thoroughly and put it in a saucepan.
  2. Boil water.
  3. Fill with boiling water, as they say, waist-deep.
  4. Place the saucepan on the stove and cook over high heat, without covering with a lid, adding salt and one tablespoon of oil.
  5. As soon as the rice begins to boil, cover the pan with a lid. Reduce the heat and cook for 20 minutes. Important! The rice is not stirred during cooking!
  6. Then, after this time, remove it from the stove and let it stand for about 7 minutes, and then put it on a large plate to cool.
  7. Peel the onion, cut into strips and fry with oil until it becomes translucent.
  8. Place in a separate bowl.
  9. The shrimp need to be thawed, peeled and fried in the remaining oil in a frying pan for about 5 minutes.

  11. Mix well and fry, stirring constantly. To prevent the dish from being dry, you can add a little olive oil.

In this recipe, you can use all your favorite vegetables or those that you just happen to have on hand, but we recommend bell peppers, tomatoes, carrots and eggplants.

Ingredients:

  • about three hundred grams of rice;
  • shrimp 250 grams;
  • set “FROZEN VEGETABLES” 400 grams;
  • thirty gamma green onions;
  • four tablespoons of oil;
  • salt,
  • seasonings

Preparation:

  1. The first step is to thoroughly wash the rice and place it in hot water.
  2. Next you need to add salt, bring to a boil and cover the saucepan with a lid.
  3. Cook over low heat until the water evaporates.
  4. We wait about 15 minutes and throw it into a colander.
  5. Rinse thoroughly under running cool water. Rice should not be sticky.
  6. Now you need to pour sunflower oil into a saucepan and heat it.
  7. Place the “vegetable mix” in a frying pan and fry (stirring often) until it becomes soft.
  8. Finely chop the green onion and place it in a saucepan, then the rice, salt and add seasonings.
  9. Thaw the shrimp and add them to the rest of the ingredients. Mix well.
  10. Cook with the lid on for another 6 minutes.

With mushrooms and cheese

This dish not only has an unusual taste, but is also quite high in calories. Any mushrooms will do, including champignons and the simplest ones that grow in the forest.

Ingredients:

  • three hundred grams of mushrooms;
  • two hundred grams of shrimp;
  • four hundred grams of rice;
  • vegetable oil about 30 milliliters;
  • three tablespoons of soy sauce;
  • cheese approximately 150 grams;
  • spices;
  • salt.

Preparation:

  1. We process mushrooms depending on their type. If these are forest ones, then do not forget to wash and clean them thoroughly. Next, put them in a saucepan with boiling water. Cook for about one hour and place in a colander (to drain excess water). If the mushrooms are large, then they need to be cut into pieces.
  2. Salt the water and put the pre-washed rice in it to cook.
  3. Cook until done and set aside to cool.
  4. Fry the mushrooms in sunflower oil, and then add the rice directly to them in the frying pan and stir after adding seasonings.
  5. Place the defrosted shrimp in a frying pan with the rice.
  6. After 5 minutes, add soy sauce.
  7. Mix properly.
  8. Grate the cheese and add it to the frying pan with the rest of the ingredients.
  9. Cook the dish until it reaches a uniform consistency.
  10. Remove from the stove and let the dish sit for six minutes.
  11. Serve hot.

Step 1: prepare the rice.

Everyone probably knows how to cook Jasmine rice, but if you forgot or didn’t have time to make it in advance, we will remind you. So, first we put the grains on the countertop, sort them out, pour them into a colander, rinse them and leave them in the sink for a few minutes.
Then put it in a small, preferably non-stick pan and fill it with purified water in the proportion 1:1.5, that is, we need 100 grams of cereal per 150 milliliters of water to get 240–260 grams of the finished product. The peculiarity of “Jasmine” is that it does not need excess liquid; in Thailand it is generally steamed, simply placed in special muslin bundles and hung in a steamer on a hook. Well, an ordinary saucepan will do for us, put it on medium heat and, as soon as the water starts to boil, reduce its level to a minimum.

Stir the cereal once with a wooden kitchen spatula, then cover and cook for 18–20 minutes until soft, but so that the grains retain their integrity. After this, remove the rice from the stove, very carefully fluff it with a fork and leave it covered for another 5 minutes or until use.

Step 2: prepare the shrimp.


Next, take the shrimp, without unpacking, place them in a bowl with cold running water and leave in this form for 10–15 minutes or until completely thawed. Then we thoroughly wash the seafood to remove sand, dry it with paper kitchen towels and remove their heads, shells, and tails.

Step 3: prepare vegetables, herbs and other ingredients.


Now, using a clean knife, we remove the garlic, a piece of ginger from the peel, green onions from the roots, and remove the stalk from the sweet pepper and gut it from the seeds. We rinse these products under running water, dry them with paper kitchen towels, place them one by one on a cutting board and chop them. The shape of the cutting is not important; both straws and cubes are suitable, the main thing is that the size of the pieces should not exceed 4–5 millimeters. We arrange the vegetables and herbs on separate plates and place fresh peas next to them.

Then, one by one, beat the chicken eggs and place the whites and yolks into one deep bowl. Beat them with a table fork until they have a homogeneous consistency, you don’t need to be too zealous, a slight fluffiness is enough. Then we lay out all the other ingredients that will be needed to prepare the dish on the countertop and proceed to the next step.

Step 4: Prepare shrimp fried rice.


Place a wide frying pan with a thick non-stick bottom over medium heat and pour a little sesame oil into it. After a few minutes, when the fat is hot, add the chopped carrots and fry them for 3–4 minutes until soft. Then add sweet salad peppers and peas to the vegetable and cook them for another 1 minute. Next, add the garlic and ginger to the frying pan, and then 30 seconds and shrimp.

We cook everything together, constantly loosening it with a wooden kitchen spatula about 1 minutes. Don't move too far from the stove, it might burn! Then add rice to the pan, stir and fry over medium heat 4–5 minutes.

After this, make a hole in the middle of all the ingredients and pour lightly beaten eggs into it. We keep them in this form until they set, only then mix with the rest of the products until they have a homogeneous consistency.

Now we season the dish with sugar, as well as three types of sauce: oyster, soy and fish. Again we loosen everything and keep it on the stove 2 minutes.

Next, remove the frying pan from the heat, cover with a lid and leave it alone for 4–5 minutes. Then we distribute the food in portions onto plates, crush each one with green onions and serve it to the table.

Step 5: Serve shrimp fried rice.


Fried rice with shrimp is served hot as a complete second course for breakfast, lunch or dinner. This miracle is served in portions on plates, first garnished with fresh herbs. This dish is considered completely independent, but if desired, it can be supplemented with salads from fresh vegetables or hot or spicy pastes, for example, curry, garlic.
