    To prepare mackerel in mustard marinade, we will need the following ingredients: fresh mackerel or pre-thawed frozen mackerel, water, salt, sugar, black peppercorns, bay leaf, ready-made mustard.

    Pour salt into the pan that will be used to prepare the fish marinade.

    Following the salt, pour sugar into the pan.

    Add black peppercorns to salt and sugar.

    We also add bay leaves.

    Pour hot water into the pan with the combined spices, put it on the fire and bring to a boil. Let the marinade boil for about 3 minutes and remove the pan from the stove.

    When the marinade has cooled a little, add the prepared mustard to it and stir until the mustard is completely dissolved in the liquid. It is convenient to use a whisk for this purpose. Leave the marinade until it cools completely.

    While the mustard marinade is cooling, prepare the thawed mackerel carcass for marinating. To do this, we cut off the heads of the mackerel, gut the fish, and wash it.

    And now I’ll tell you how to make a container for pickling fish from a simple plastic bottle, because, you see, not every home has a container suitable for pickling fish. We simply cut out a “door” on the side of a clean two-liter bottle through which it will be convenient to place the fish inside the bottle, and screw the bottle tightly with a lid. In addition, in such a bottle the mackerel will fit compactly in the refrigerator and will be salted evenly! Through the hole in the bottle we place the mackerel inside the container.

    When the marinade has cooled, pour it into the bottle so that it covers the mackerel. Carefully, so that the marinade does not spill, we move the bottle with the fish into the refrigerator, for stability we fix it with something on both sides. The mackerel will marinate for 3 days. Shake the bottle periodically so that the marinade does not stagnate.

    In three days you will be able to eat pickled mackerel!

    Separate the mackerel fillet from the bones and skin, cut into slices, place on a dish, pour in oil, sprinkle with chopped onions and serve.

Preliminary preparation for home pickling

To get the best results, choose large, fatty fish when purchasing. The best specimens for pickling are 300 g or more.

Be sure to pay attention to the quality of the fish. Use fresh, not frozen. Its skin should be light gray, without yellow spots. The eyes should be shiny, not cloudy. Fresh mackerel is elastic to the touch, with a characteristic fresh smell.

For pickling, use glass, ceramic enamel or plastic dishes, the main thing is that they do not oxidize. Many people have adapted to salting fish in cut-off drinking water bottles. We will use glass jars.

Use regular, non-iodized salt, preferably coarsely ground.

It is better not to store the finished snack in the freezer, as after thawing, its taste and quality will deteriorate.

Homemade recipe in pieces

This recipe for mackerel pieces allows you to cook the fish very quickly, since it is not salted whole, but cut into small pieces. Already on the second day, the appetizer is ready to eat, while whole salted mackerel can be eaten only after 5 days. Well, we won’t be lazy and cut it up to be rewarded for our efforts.

Let's look at several ways to spicy salt this fish:

Recipe for spicy salting with filling

We need products: for one large carcass or two small ones - 2 tbsp. salt, 4 allspice peas and 5 black peppers, 3 bay leaves, 50 ml regular, 9% vinegar. Also prepare 4 tablespoons of any refined vegetable oil and a glass of cold water. If you want, you can add a couple of cloves.

Cooking:

Clean the fish from the insides. Cut off the head and large, tough fins. You can also cut off the tail. The ridge still needs to be removed. Although this is not necessary, do as you please.

Rinse the carcass thoroughly inside and out, cut into small pieces. You can cut the fish along the ridge, remove the bones and cut the halves of the carcass into pieces or simply salt the whole halves.

Place the pieces of fish in a jar, adding spices, and pour over the oil.
To fill, dissolve salt in a measured volume of cool water, pour in vinegar. Boil, then cool well.

Pour the resulting brine over the fish in the jar. You can put a slice of lemon on top (to reduce the characteristic fishy smell). Close the lid and shake lightly.

Keep at normal room temperature for the first 6-8 hours, and then refrigerate. Delicious spicy mackerel will be ready in a day. If you salted the cut halves without the backbone, then it will be possible the very next day.

Recipe for salting at home without pouring:

We will need: one large or two small fish, 1 tbsp salt, 1 tsp each sugar and ground black pepper. You can also add a pinch of dried garlic (you will find it in the store, on the seasoning shelf).

Cooking:

Wash the fish and process it as we did in the previous recipe. Place salt, sugar, spices in a bowl and mix. Roll each piece of mackerel in this aromatic mixture and put it in a jar. Cover tightly with a plastic lid, shake slightly and refrigerate.

By the way, instead of a can, you can use a strong plastic bag (or double). Place the pieces of fish there and tie them up. Place in a tray and put in the refrigerator. The snack without filling will be ready in two days.

Homemade mackerel recipe with mustard filling

This recipe requires ingredients: 1 large or two small mackerel, a glass of water, 2 tbsp salt, 1 tsp sugar, 1 tbsp mustard powder and a quarter cup of vegetable oil. For spices, take: a couple of bay leaves, a pinch of ground pepper (black) and 3 sweet peas.

Cooking:

Process the fish: cut off the head, fins, remove the entrails, wash thoroughly. Remove the backbone with large bones. Cut the fish in half and then into large pieces. Place in a jar, topping with spices.

Let's prepare the filling: pour water into a saucepan, dissolve salt, sugar, add mustard and stir. Boil everything, then let the pouring cool well. Now pour the fish into the jar, close the lid and shake slightly.

Keep at normal temperature for a couple of hours, then put in the refrigerator. Mackerel will not perish in cool conditions of 2-6 degrees, which means they will have time to take the salt and taste of the brine. On the second day, the spicy mackerel in mustard sauce will be ready.
