Lush, tender, incredibly juicy and aromatic cherry pie, which is originally prepared according to all the canons of vegan cuisine! Cherry pie does not contain yeast (there is soda and apple cider vinegar), and there are no milk or eggs among the ingredients.

Of course, it is best to prepare the pie in the summer, during the cherry ripening season. However, in winter, you can always replace fresh cherries with frozen ones or a mixture of other berries to taste: raspberries, currants, blueberries, strawberries, etc.


Lenten cherry pie will turn out very juicy, the dough will be a little “wet”, soaked. Since the ingredients include cocoa, the taste of the pie is reminiscent of the familiar “Winter Cherry” or “Black Forest” cake from childhood.

Ingredients

So, what you will need:

  • 500 gr. pitted cherries
  • 1 cup of strong coffee (can be brewed in a Turkish coffee pot)
  • 1.5 cups flour
  • 1/3 cup cocoa (no sugar)
  • 1 cup sugar
  • 0.5 cups of vegetable oil (tastes best with coconut or a mixture of olive and almond in equal proportions)
  • 1 tsp. soda
  • 1 tbsp. l. apple cider vinegar
  • 1 tsp. salt
  • 0.5 tsp. vanilla sugar
  • vegan chocolate and powdered sugar optional

Cooking Lenten cherry pie

Rinse the cherries and remove the pits.


Mix all dry ingredients in a deep bowl. Mix thoroughly.


Pour in brewed coffee (chilled), vinegar and vegetable oil.


Place the dough into the mold. Add the berries and mix very carefully so that the cherries remain intact.


Now you can put the cherry pie in the oven. Bake until done at 220C.


You can check readiness with a wooden toothpick or a match: pierce the dough in the thickest place (for example, in the center) - if the toothpick remains dry, then the pie is ready!


For those with a sweet tooth and chocolate lovers: the pie can be poured with melted chocolate, garnished with powdered sugar and ripe cherries.

Don't be afraid to experiment! You can add walnuts and almonds to the ingredients; cardamom, fennel, and cinnamon also go well with cherries. And the cherries themselves can always be replaced with sweet cherries, adding a little less sugar, or replaced with other favorite berries.

This cherry pie is a favorite in my family. I discovered it this summer, when I was pleased with the cherry harvest and needed to come up with options for using it, other than freezing, etc. As a result of the experiments, we got a simple and amazingly delicious pie with sour cream filling, which became our favorite!

Compound:

shape – Ø 25 cm

Dough:

  • 100 g butter
  • 100 ml sour cream
  • 50 g sugar
  • 200 g flour
  • 2/3 teaspoon baking powder
  • pinch of salt (optional)

Filling:

  • 600 g cherries (or 400-450 g frozen, pitted)
  • 150 ml sour cream
  • 100 g sugar
  • 1.5-2 tbsp. tablespoons potato starch (or 2 heaped tablespoons of premium wheat flour)
  • 1 packet vanilla sugar (optional)

Cherry pie - preparation:

  1. Leave the butter in a warm place until it becomes soft. Get the rest of the products we need.

  2. Wash the cherries and remove the pits (I do this with the back of a teaspoon).

  3. Make the dough. Add 100 ml of sour cream, 50 g of sugar to the soft butter, and maybe a pinch of salt to enhance the taste.

  4. Mix everything into a homogeneous mass. Add flour mixed with baking powder and knead into a soft dough.

  5. Grease a pie pan with a piece of butter and sprinkle with flour.

  6. Now you need to spread the dough over the bottom of the pan with your hands and form the sides.

  7. Mix all ingredients for filling except cherries. This will be the fill.

    Advice: If you prepare the filling with 1.5 tbsp. spoons of starch, after baking it will drain a little. Therefore, if you want to get a denser pie consistency (as in the photo), then you need to put 2 tbsp. spoons of starch. But we prefer the option when the filling is slightly liquid, it turns out like a cream. Lately I’ve been making it with flour (I add 2 tbsp), then it’s even more tender.

    You can also use half and half sour cream with cream, as in the recipe.

  8. Place the cherries on the dough, and it’s best to take them by hand, piece by piece, so that the juice remains in the plate (you can just drink it, we won’t need it).

  10. Place in a hot oven and bake for 20-25 minutes at 180-200 degrees. If you are using a glass pan, place it in a preheated oven but on a cool rack.

The finished cherry pie should be cut into pieces after it has cooled so that the filling can set better.

Before serving, you can sprinkle powdered sugar on top.

I also make this pie with homemade frozen cherries (before freezing, I take out the pits and drain the juice) without defrosting them. But if the cherries are juicy, then it is better to defrost them first and drain the juice (or you can roll them in starch).

I have always considered Special Agent Cooper to be an exemplary role model. You start acting like him, and then everything will work out correctly on its own. Today I urgently want to take an example from Cooper and try cherry pie. First, of course, we will have to bake it, but we can do it easily...

For Lenten cherry pie we will need:

Lenten Cherry Pie Dough Ingredients:

  • 300 grams of flour;
  • 1.5 tbsp. Sahara;
  • 1 tbsp. starch;
  • 1.5 tsp. baking powder;
  • 4.5 tbsp. vegetable oil;
  • 150 ml. hot water;
  • a pinch of vanillin.

Lenten cherry pie filling ingredients:

  • 450 grams of cherries;
  • 100 grams of sugar;
  • 1 tbsp. starch;
  • 1 tbsp. semolina.

Let's start... grind the flour, sugar, baking powder, starch and vanillin directly into crumbs with vegetable oil by hand.

Now, gradually adding hot water, knead the dough. It turns out pleasant to the touch, soft and not sticky - just a dream.

Wrap the dough in film and leave for an hour at room temperature.

If we are using frozen cherries (and where can you find anything else these days), it’s time to take them out of the freezer and leave them in the refrigerator for the same hour. So that it defrosts, but not very much :))

An hour later, grease the mold and divide the dough into two unequal parts.

We roll out the larger part and place it in the mold, not forgetting about the high sides.

Take the cherries out of the refrigerator and mix them with the rest of the filling ingredients for a Lenten cherry pie.

Spread the cherry filling onto the crust.

The rest of the test comes into play. As you may have guessed, we roll it out to cover the top of our pie.

We pinch the edges and fold them inward. For beauty, you can sprinkle brown sugar on top of the cake.

Place our Lenten cherry pie in the oven for 40 minutes (at 180°C) and wait. We take the finished pie out of the oven and wait again.

2-3 hours have passed... we are already tired of waiting and we pick up a knife, planning to finally cut off the coveted piece for ourselves...

Of course, no one forbids hoping that the cherry pie will not spread and we will get wonderful, even triangular pieces, but... this is exactly the situation in which the statement “Hope is a stupid feeling” more appropriate than ever.

And yet, Cooper was right (how could it be otherwise?), cherry pie is something extraordinary (you need to give a thumbs up here).

To make cherry pie you will need:

Vanilla - a pinch

Cherries, pitted - 1 kg

Sugar - 170 g

Semolina – 120 g

Cinnamon - 2 tsp.

Oil for greasing the mold

Prepare the dough as I described in, just add a little vanilla to it, this will give the dough a very tasty aroma when baking. Leave the dough to rest while you prepare the pie filling.

Mix cherries, sugar and semolina. Now let's start assembling the cherry pie.

Roll out the dough to the size of your mold, about 1-1.5 cm thick. From this amount you can get one large pie with a diameter of approximately 50 cm or 2 small ones in 25-30 cm molds. Place the dough on a greased baking sheet, folding the edges so that the cherry filling does not leak outside the pie during baking. Spread the prepared filling, sprinkle with cinnamon and place in a preheated oven. It is better to bake this pie at 180 degrees for about 30 minutes.

Cool and serve! If desired, you can decorate the top with whipped cream, but even without it it’s impossible to tear yourself away from the pie)))

The delicate taste of this cherry pie and the subtle aroma of cinnamon will not leave anyone indifferent! Now that the cherry season is in full swing, such a pie will come in handy. Having eaten plenty of fresh cherries, my husband and I decided to bake with cherries like charlotte.

This recipe does not use animal products (butter, eggs, milk), so even vegans or those who are on a diet or fasting can taste the cherry pie according to our recipe.

Vegan Cherry Pie Recipe

The secret to the success of this cherry pie is the number of cherries. We took 1 kg cherries! Of course, while the cherries were being separated from the pits, some berries fell into the mouth by themselves. In general, the conclusion was this - the more filling, the better! Therefore, it is better not to skimp on cherries. What is included in the pie besides cherries?

  • 1 cup flour;
  • half a cinnamon stick;
  • 1 tbsp. a spoonful of ground flax;
  • 1 tbsp. spoon of vegetable oil;
  • 1 tsp soda;
  • ¾ cup brown sugar;
  • 2 tbsp. spoons of apple cider vinegar or lemon juice;
  • ½ tsp. vanilla sugar or vanilla extract.

In this cherry pie you can use either regular wheat flour or make a mixture. We did this: half a glass of wheat flour mixed with half a glass raw green unroasted buckwheat flour. Green buckwheat flour has excellent stickiness even though it contains no starch. You can experiment - add amaranth or whole grain flour to wheat flour.


Grind cane sugar in a coffee grinder into powdered sugar, do the same with cinnamon and flaxseeds. So, first you need to mix all the dry ingredients of the dough in a bowl: sugar, sifted flour, ground cinnamon, vanilla, soda, flax seeds.

Then add pitted cherries and lemon juice or apple cider vinegar, pour in a spoonful of oil. Mix the dough for our cherry charlotte thoroughly. If you take a kilogram of cherries like we did, then you won’t have to add water to the dough; the juice from the cherries will moisten the dough enough.


Line a springform baking pan with paper and pour the dough into it. The consistency of the dough for our pie is the same as for it - like thick sour cream. Don't forget to preheat the oven well in advance. We put our cherry pie in the oven.

Bake on high for 15 minutes, then reduce the heat by half and bake for another 20 minutes. We determine readiness after 35 minutes using a wooden skewer. If it’s dry, the pie is ready! You can decorate the cherry charlotte with powdered sugar.


I highly recommend trying this recipe - the cherry pie is light, delicate in taste with a pleasant aroma of cinnamon and cherry moisture inside. It's impossible to tear yourself away! Don't forget to brew delicious tea for this pie. They say green tea is very beneficial for weight loss. The secret of green tea lies in a special substance - theine, which promotes fat burning.
