Greetings to all lovers of simple cooking and delicious food! 😉 Recently, my son has practically refused to use dairy products (with rare exceptions in the form of yogurt), and therefore I decided to remember my youthful love for lazy dumplings. True, this time I set up an experiment and made them without eggs. It turned out quite well. Now, when it comes, I, of course, do not eat them myself. But on the other hand, the son and husband are happy to have breakfast on weekends lazy dumplings without eggs and every time they ask for more.

Let's take:

  • 500 gr of cottage cheese;
  • 3 table. spoons of starch;
  • 4-6 table. spoons of flour;
  • 3-4 table. spoons of sugar;
  • half a teaspoon of salt.

Cooking lazy dumplings without eggs is a pleasure. For breakfast - just right. No hassle at all. 😉

Pour cottage cheese into a deep bowl, add salt, starch, sugar and flour to it.

A small clarification: if you want more airy dumplings with a pronounced cottage cheese flavor, put 4 table flour. spoons, if you want a stronger dough, more dense - put 6 tables. spoons of flour.

But I pay attention - my cottage cheese is dry. If your cottage cheese is moist, you may need more flour.

So, pour all the ingredients into the cottage cheese and start mixing. I do it right away with my hands - it's easier and more convenient. At first, it does not mix well - after all, everything is almost dry, but after a while sugar and starch interfere with the curd, dissolve, and the mass becomes more plastic.

After about a couple of minutes, a rather dense ball of cottage cheese is obtained.

We put water on the fire and, while it boils, we form balls from the dough.

From half a kilogram of cottage cheese I got such a number of lazy dumplings without eggs.

When the water boils, salt it and you can add a little sugar (this is already to taste), I add about a tablespoon. Gently cook in small portions: I cooked about 20-30 pieces at a time. I don’t recommend it anymore - they can slip.

Having lowered the dumplings into boiling water, let them “grab” a little and only after a minute carefully, with smooth movements, mix. Cook without a lid. Often they do not need to interfere - literally a couple of times during the entire cooking time.

After surfacing, hold the curd balls for another three minutes and pull them out with a slotted spoon into a plate.

Transfer the cottage cheese to a bowl (preferably a deep one) in which you will knead the dough. Grind the cottage cheese through a sieve, thanks to this you will get a more homogeneous curd mass without grains. Add the required amount of sugar and salt to the bowl, mix everything with a spoon or silicone spatula. Cottage cheese can be used both medium fat and low fat.

On a note: If the cottage cheese is very dry, add some sour cream or homemade yogurt.

Add semolina to the cottage cheese, as well as starch (you can use corn or potato). Mix the curd mass until a homogeneous consistency is obtained.

Sift wheat flour through a strainer, then add portionwise to the curd mass. At the same time continue to stir everything with a spoon or spatula.

Then put the resulting mass on a board dusted with flour. Knead the dough with your hands to make it dense, not sticky to your hands. Sprinkle flour if needed.

Divide the curd dough into four parts, then roll oblong bundles from each.

With cottage cheese and semolina

Thanks to semolina and starch, which are part of the dough for these dumplings, the dish has a delicate airy texture and a rather interesting taste. Such lazy dumplings will be a great dessert if you cook them.

  • two hundred and fifty grams of cottage cheese;
  • semolina - forty grams;
  • sugar - 1-2 tablespoons;

We pinch off the dough from the common layer. We roll a ball with a diameter of one and a half centimeters from a piece and place the ball on a board sprinkled with flour. We continue the action until the entire norm of the dough turns into neat identical balls.
