Recipe for meatballs with rice in tomato sauce

Meatballs with tomato sauce can be cooked in the oven, in a pan, or using a slow cooker. The preparation of the meatballs themselves and the sauce is practically the same, so I will briefly describe each method of heat treatment of the dish at the end, and I will indicate all the possible nuances of the recipe along the way.

  1. So, to begin with, we will rinse the rice well and add the required amount of water to it, put it on the fire, bring it to a boil and cook until it is half cooked, then drain the excess water and leave to cool.

  2. While the rice is cooking, let's move on to the vegetables. Peel the onion and carrot, rinse, cut the onion into small cubes

  3. Grate carrots on a coarse grater.

  4. We spread the minced meat in a bowl or other deep dish convenient for you. To it we add the required amount of onions, carrots and slightly cooled rice, salt, pepper and mix thoroughly until smooth.

    Did you know?
Carrots added to minced meat will help to form meatballs easily.

  5. From the finished minced meat we form balls, like cutlets, and lay them out separately so that they do not stick together and do not interfere with further work.

  6. Now let's prepare the sauce. In a hot and oiled pan, pour the remaining chopped onion and fry a little

  7. Then add flour

  8. To absorb excess oil, stir constantly so that lumps do not form.

  9. Continuing to stir vigorously, add water or broth, then sour cream and tomato paste, season to taste and bring to a boil.

The process of further cooking depends on what kitchen appliances you use.
Multicooker:
Spread vegetable oil evenly over the multicooker bowl. We fix the bowl in the appliance, set the “Frying” or “Multi-cook” mode and lay out the meatballs.
Fry on all sides until a light crust, turn off the mode, pour the meatballs with sauce, add a little water in case the sauce is too thick, close the lid and simmer in the “Stew” mode for 50 minutes.

Oven:
Put the meatballs fried in a pan on a baking sheet, pour sauce on top and cook for 40 minutes at a temperature of 200 ºС.

Kitchen stove:
Put the pre-fried meatballs in a deep cauldron, pour over the sauce and simmer over low heat for about 50 minutes.

Rice for minced meat can be cooked faster using a microwave. To do this, rice with water (1: 1) is placed in the microwave in a special bowl with a lid for 2-3 minutes until the liquid is completely absorbed.

Delicious meatballs with rice in tomato and sour cream sauce - recipe with photo

Now let's move on to the recipe.

For minced meat, you can use meat: pork, beef, chicken, turkey. You can also mix pork and beef together or buy ready-made minced meat. We sell it in the market, in a store, in a supermarket.

The main thing is that the minced meat is fresh and of high quality, otherwise anything can happen, some sellers try to sell not fresh meat under the guise of minced meat.

I take round rice for meatballs, boil it in salted water and wash it. I let him cool down.

I peel the carrots, wash them under running water and rub them on a fine grater. I clean the onion and finely chop it, or you can chop it in a blender. This time I didn't roast the vegetables. I send it to minced meat in its raw form.

So, in the finished stuffing, I add rice. Many may have a question. Why so many? I love when rice is felt in meatballs, and I'm not alone in this. Our kids love these meatballs.

I add grated carrots and onions to the minced meat, as well as one small egg. Salt and pepper to taste. Our family loves when cutlets or meatballs are a little salty. But this is all for an amateur, you can always salt a ready-made dish in a plate, to taste.

At this stage, you can add additional spices to the minced meat to taste: red ground pepper, ground coriander, etc. Many people add a little chopped garlic to the minced meat, but I only add garlic to, but I prefer to cook meatballs without it.

I mix mince. I usually mix with a clean hand. You can mix with a spoon, and if you are afraid to get your hand dirty, then put on disposable cellophane gloves.

After mixing the minced meat well, we begin to form meatballs. Meatballs can be made large, small or medium. I form meatballs of medium size rounded shape (I like it better).

From the above indicated amount of ingredients, I got 14 meatballs. We place them on a sheet or put them in a glass or any other baking dish.

I don’t fry meatballs with rice, I will bake them in the oven beforehand with tomato-sour cream sauce.

To prepare the sauce, I fry diced onions and carrots (grated on a coarse grater) in vegetable oil.

Then I add to the fried vegetables. To pour this amount of meatballs, half a liter of juice is enough for me. If you don't have homemade tomatoes, you can use store-bought or dilute tomato paste with water.

If using pasta, you should also add salt and sugar to taste to the gravy. If the tomato paste is acidic, more sugar may be needed.

I always add sugar and salt to the tomato sauce. Since we love sweet and sour sauces, I add 1 tbsp. a spoonful of sugar, you can pour a little less. Taste the sauce, does everything suit you?

Now add sour cream. I have homemade sour cream (rustic). In the gravy, I spread 1 tablespoon with a huge slide (this is 2 tablespoons of sour cream, without fanaticism).

You can use store-bought sour cream, but not less than 15% fat. Better, of course, 20-25%.

If desired, add peppercorns and bay leaf to the gravy.

Mix everything and pour over the meatballs. Do this very carefully so as not to damage them, after all, the meatballs are not fried.

Turn on the oven and preheat to 180-200 degrees. We send the meatballs with rice in tomato-sour cream sauce to the oven for 30 minutes. This time, taking into account the fact that you are not placing the form in a cold oven, but a preheated one. I also cover the top with foil.

This is what the finished dish looks like. Since I have homemade sour cream, it simply dissolved, and did not come in white flakes.

Appetizing, tasty and fragrant meatballs cooked in the oven.

Meatballs can be attributed to the “relatives” of cutlets and meatballs and are most often cooked in sauce or gravy. The most common gravies are: sour cream, tomato, creamy, tomato-sour cream, vegetable.

Meatballs in tomato-sour cream sauce in the oven are tender, juicy, tasty, all this is achieved due to harmoniously selected ingredients and sweet and sour sauce, with a creamy note.

In such a delicious gravy, you can cook meatballs with or without rice. We like it better with rice. Our whole family appreciated these meatballs, and the children asked for a double portion.

If desired, you can sprinkle the meatballs with fresh herbs. Top the meatballs with gravy or sour cream.

And, of course, a natural question arises. What can meatballs be served with? They can be consumed as an independent dish or served with vegetables, vegetable salads. But the most common side dish is mashed potatoes or buckwheat.

Our favorite serving of meatballs is pouring sour cream over them.

Habitual meatballs can be diversified not only with various additives to minced meat. By changing the composition of the sauce, it is easy to achieve a new sound in your favorite dish. Saturated, harmonious taste meatballs with rice in tomato sauce are obtained. For the preparation of tomato sauce, the classic Krasnodar sauce is used, which is characterized by a sweetish and moderately spicy taste. Just a few spoons of aromatic ripe tomato sauce, and you are guaranteed a delicious dish.

However, tomato sauce can be prepared on the basis of other sauces and ketchups (at your discretion) or cooked independently from ripe tomatoes. The latter is convenient from the point of view of regulating the required sharpness and piquancy of the future meatball sauce. Burning or mild, sweetish or simply spicy - your own taste knows better about all this. As well as whether to add garlic to the gravy.

We will bake meatballs with rice in tomato sauce in the oven. This method keeps the meatballs whole and appetizing.
