How to make strawberry layer cake

1. For this baking, it is convenient to use a frying pan or a special mold with wavy edges. The dough must be rolled out into a layer 2 - 3 mm thick and cut into strips. The width of each strip is 1.5-2 cm. If the dough was in the freezer, then the day before it is better to take it out and put it in the refrigerator; by the morning it will thaw. At room temperature, just leave the dough for about an hour, then it will become soft and elastic. Line the mold with strips, forming the edges, then use your hands to distribute the dough evenly over its entire surface.

2. Strawberries should be cleaned of green parts, washed and cut into pieces. If the berries are small, you can put them whole in the pie. Place all the strawberries in the mold on the dough, sprinkle sugar on top. The amount of sugar is also determined by your own preferences.

3. To form the upper mesh, the dough also needs to be rolled out into a layer whose thickness does not exceed 3 mm. Cut it into strips 1.5 cm wide. To cut these strips, I use a curly knife, but you can do it with a regular one. The strips should be laid on top of the strawberries, intertwining with each other.

4. Now you need to tuck the side inward to cover all the cuts of the braided strips.

5. When the braid is ready, you can also make decor from the remaining dough. It’s good if you have some kind of recess under your hands for cookies or mastic, for me it’s a small flower. I cut out shapes and decorated the wicker part of the pie with them. Bake the pie in an oven preheated to 190 C for 20 minutes.

6. Serve the pie with compote or fruit drink. You can also serve it with tea, but it is better with cool, light drinks.

Let's prepare the filling. You can use fresh or strawberries. If using frozen berries, be sure to drain off any excess juice.

Cut the puff pastry into rectangles and place a few strawberries on top. Mix potato starch and sugar in equal quantities and add 1 tsp. mixture for each puff pastry (on top of the berries). Starch is added to thicken the strawberry juice and “hold” it into the puff.

Fold the rectangle of dough in half. Flatten the edges of the puff pastry with the tines of a fork. We'll make a few punctures on top.

Both children and adults love sweet pastries equally, and a particularly tasty dish for tea is made if fresh berries are used as a filling.

How to make strawberry puff pastry puffs

Frozen dough must be thawed first. This usually takes about half an hour to an hour and a half at room temperature.

  1. Defrosting time depends on weight and release form. In any case, you should remove the dough from its packaging, place it on a floured surface, and cover it with something, for example, a bag. This is done to prevent part of the dough from drying out.
  2. When you notice that the puff pastry has become soft and pliable, roll it out a little and then cut into equal squares with a side of approximately 10 centimeters. Cover the pieces again with something.
  3. Now let's take care of the berries - rinse them thoroughly under running water, remove the tails, and also cut off the green or damaged areas. Dry the berries using paper napkins or towels. Finely chop the strawberries into cubes and place in a deep container.
  4. Add starch and sugar here and mix everything thoroughly. We try to act as carefully as possible - we must not deform the berries, otherwise they will release juice, and we are trying to preserve it. If you notice that all the pieces are coated with sugar and starch, then stop stirring and move on to the next step.
  5. Now we place our berries in the center of each piece of dough. The filling should occupy approximately half the area of ​​the square and lie in one layer.
  6. We take two opposite corners and fasten their tips to each other. We do the same with the other two corners.
  7. Then we pinch the places where we have holes left. As a result, you should have envelopes with the seams in the shape of a cross.
  8. During baking, some boiling juice will come out of the berries. To prevent pressure from tearing our puff pastries, we make small punctures in the upper part; this can be done with a toothpick, skewer or fork.
  9. We set the oven to warm up to 200 degrees, and in the meantime we cover the baking pan with parchment.
  10. Separate the yolk from the white and place it in a small bowl. Add just a little sugar and beat a little with a fork.
  11. Place the puff pastries on paper and grease them with the resulting yolk mixture on top.
  12. Place in the oven for a third of an hour. Of course, this is not an exact figure, because the puff pastries may turn out to be of a different size, so watch the dough - when it is noticeably baked, remove the puff pastries.

After waiting for the food to cool a little after the oven, serve it to the table. It’s better not to hesitate with this, since strawberry juice can saturate the dough and make it less crispy.

Curd and strawberry puffs

Who said that sweet pastries can’t be healthy at the same time? We increase the percentage of benefits from this delicacy by adding cottage cheese to the filling.

  • Cottage cheese – 200 g;
  • Fresh strawberries – 200 g;
  • Yeast-free puff pastry – 250 g;
  • White granulated sugar – 3 tbsp;
  • Starch – 1 tbsp;
  • Chicken egg – 1 piece;
  • Vanilla – ½ pod;
  • Milk – 1 tbsp;

How to make puff pastry with strawberries

  1. The dough needs to be defrosted by analogy with the previous recipe. Then roll it out and cut it into small rectangles. A width of 7 centimeters will be enough.
  2. Knead the cottage cheese with a fork, add sugar and starch to it in a container. We also remove the grains from the vanilla pod and also add them to the curd mass. Mix everything.
  3. Wash the strawberries, remove the stems and chop finely.
  4. We need to place a tablespoon of curd filling on one half of the dough rectangle (step back a little from the edge, because we will still need to pinch the puff pastry).
  5. Place a small amount of chopped berries on top of the cottage cheese.
  6. Make several small deep cuts on the clean half of the dough.
  7. Mix the egg with milk and coat the places that we will pinch with this mixture.
  8. Cover the filling with a clean half of the dough and pinch the edges.
  9. To make the puff pastries browner, brush them on top with the rest of the egg-milk mixture.
  10. Set the oven to warm up to 180 degrees. Cover a baking sheet or baking pan with parchment and place our puff pastries on top of it.
