I first became acquainted with Chinese cabbage in the late 90s, when my family and I went on a tour to Prague; in those days we had no trace of such products. Standing in front of the vegetable counter in the supermarket, I couldn’t understand what it was, lettuce or cabbage, especially since the name was in Czech... Actually, until the end of the 70s, Chinese cabbage, or as it is also called , Chinese lettuce, was a rather scarce commodity not only here, but throughout Europe and even America, because it was mainly imported from its homeland - China, where it has been cultivated since about the 6th century. Only relatively recently has it ceased to be a rarity in stores. This is due, first of all, to the development of new varieties that make it possible to successfully grow it in the European climate. The results of the breeders' work are obvious - Chinese cabbage can now be bought in every supermarket at any time of the year.

WHAT AND WHO IS BEIJING USEFUL FOR?

Why is Chinese cabbage so useful, why is it valued, what is the reason for the dizzying success of Chinese cabbage around the world? First of all, it is worth noting that it contains several times more vitamin C than lettuce leaves. Lots of carotene and B vitamins, as well as potassium, calcium, phosphorus and magnesium. But there are very few calories (16 kcal per 100 g), so it can be safely recommended to supporters of a healthy diet. Peking is included in almost all weight loss diets.

Chinese cabbage is one of the leaders among green vegetables in terms of vitamin C content - 27 mg per 100 g! In addition, it is very important in the diet of heart patients and hypertensive patients due to the presence of large amounts of potassium.

Fry the salmon steaks in a frying pan with a small amount of vegetable oil until cooked, but without drying out, remove the bones and cut into small slices.

  • Chinese cabbage – 1 small fork
  • Fresh cucumber – 1 pc.
  • Egg – 3 pcs.
  • Rye crackers “With horseradish” – 1 bag
  • mayonnaise for dressing – 100 gr.

Remove the outer leaves from the cabbage fork. Finely chop the Chinese cabbage across the fork using a sharp knife.

Wash the cucumber and cut into thin strips.

Boil the eggs hard, cool under cold running water, remove the shells, separate the whites from the yolks. Cut the whites into strips or grate using a coarse grater.

Place cabbage, cucumber and egg in a deep salad bowl, mix with a tablespoon.

Crumble the yolks by hand and place on top along the edge of the salad. Insert the crackers at the top into the middle of the dish. You can use crackers with a different flavor, it will also be delicious, but we settled on this spicy “With Horseradish”.

In principle, you can simply mix all the ingredients, but it’s prettier and therefore more appetizing.

We use mayonnaise as a dressing for Chinese cabbage salad.

Again, for the beauty of the dish, squeeze it through the cut corner of the bag.

Add the crackers just before serving to avoid getting soggy from the mayonnaise.

Recipe 3: Delicious Chinese Cabbage Salad

In order for a salad to be dietary, it must contain only fresh ingredients. These are Chinese cabbage and tomatoes.

To make a salad with Chinese cabbage and mussels, a recipe with a photo of the preparation of which is offered, I put pickled mussels in it. Since the mussels are marinated and already salted, I don’t put salt in the salad itself. It is worth noting the high value of such a product as mussels. Their meat contains valuable protein, and there is no fat in them. Thus, having prepared and eaten a salad of mussels, Chinese cabbage and tomatoes, you will have a hearty lunch and will be able to do whatever you want until the evening: walk, work, relax. This salad does not weigh down the body and stomach, but at the same time fills you with strength and energy. This salad has few calories, so it can safely be called dietary. Low-calorie salads will help you watch your figure and be in great shape without starving yourself.

  • 1/3 head of Chinese cabbage;
  • 200 grams of tomato;
  • 150 grams of marinated mussels;
  • 30-40 grams of mayonnaise.

I cut tender, fresh cabbage thinly using a sharp knife. Peking cabbage is very easy to chop, because its leaves are very soft and not hard.

I cut fresh tomatoes into large slices. There is no point in cutting the tomatoes finely, otherwise they will release a lot of juice in the salad and a puddle may form at the bottom of the plate.

I add tomatoes to the cabbage and start assembling the salad.

I drain the marinade from the pickled mussels and put the shellfish in the salad.

I pour a small amount of mayonnaise over the salad and mix lightly using a couple of spoons or forks. I don’t crush the salad so that it retains its fluffy shape. The less mayonnaise you add, the better. But you shouldn’t completely exclude this sauce from the salad. The taste will not be the same. You always need to know when to stop. One or two spoons of mayonnaise for a large portion of salad will not harm you.

Immediately transfer the prepared salad onto a plate. I spread it in a heap.

Sprinkle with any herbs and lunch is ready!

I serve a salad with Chinese cabbage and mussels to the table so that everyone can try a tasty, dietary and unusual appetizer.

Recipe 4: Crab Salad with Chinese Cabbage (step by step)

  • Fresh cucumbers - 2-3 pcs;
  • Crab sticks - 200 gr;
  • Egg - 1-2 pcs;
  • Greens - 1 bunch;
  • Green onion - 1 bunch;
  • Chinese cabbage - 150-200 gr.

For the salad we will need boiled eggs, so before starting cooking, fill the eggs with water and put on the fire to cook for 6-7 minutes.

While the eggs are cooking, it's time to finely chop the fresh dill and parsley. Chop finely enough - take onion and parsley in approximately equal quantities.

We leave some greens to decorate the salad, and transfer the rest of the greens to the salad bowl. After the greens, we move on to the Chinese cabbage. Cut the cabbage into thin strips; if you have a special grater, you can use it.

Mix the cabbage with herbs, after which you can start cutting crab sticks.

Tip: if the crab sticks were frozen, then before preparing the salad you can put them in cold water for a few minutes, they will become juicier. One or two pieces can be left to decorate the salad. They can be cut arbitrarily, lengthwise or into strips.

Fresh cucumbers must be cut into thin rings. Some fresh cucumbers can also be left for decoration.

To make the salad with crab sticks and Chinese cabbage have a beautiful festive look, try to prepare the salad in layers.

There is no need to salt the salad - if necessary, salt can be added to the mayonnaise dressing.

While the salad was preparing, the eggs were boiled. Now they need to be cooled and cut into thin rings. Eggs serve not only as the main ingredient of the salad, but also as its decoration.
