Add a little salt, bay leaf and a mixture of peppers. Pour water to cover the meat and bring to the fire. Cook for 25-30 minutes over low heat. Then remove from the broth and cool.

In the meantime, let's prepare the rest of the products. Cut the red cabbage into thin strips. Place in a deep bowl. Add a pinch of salt and press lightly to soften the cabbage.
