Spread it in a thin layer over the entire surface of the flatbread. You can add finely chopped herbs, lemon juice, or both at once into this cheese mass. Next, add the filling. The fish should be cut along the grain into thin long strips. We also spread it evenly over the entire surface of the pita bread. Now just roll up the bread flatbread into a tight roll. You can eat it right away, but it will be better if you wrap the snack in cling film or foil and put it in the refrigerator for an hour. This will allow all the sandwich ingredients to interact with each other.

Product requirements

Before moving on to individual recipes, let's decide what kind of fish you can use to make pita rolls with. With salmon, chum salmon, pink salmon, trout and any other representative of this family. These fish have few bones, and soft pink or red meat will give the appetizer a festive and very aesthetic look. But it should be lightly salted or slightly smoked. The recipes place the most demands on lavash. It must be Armenian, that is, very subtle. Typically, cakes are sold in sizes of 20 by 40 centimeters. We lay out the strips of fish and wrap the filling along the long side of this rectangle, trying to tighten it tightly. If you are going to serve rolls on a festive table, the roll should be cut into pieces five centimeters thick. They should be served surrounded by lemon slices. The dish can be decorated with dill sprigs, olives, and red caviar.

Mix, close the container and marinate in the refrigerator for an hour. Finely chop half a bunch of dill and parsley. Grate 150 grams of hard cheese into a separate container. In another bowl, mix one tablespoon each of lemon juice, mustard and olive oil. Let's add a little more honey. Spread one rectangle of Armenian flatbread. Lubricate it with olive oil and sprinkle with dry Provençal or cover with a second piece of pita bread. Let's step back three centimeters from one long edge of the rectangle. Lay out strips of fish over the rest of the space. Top with grated cheese and fresh herbs. Let's roll it up. The bare edge of the bread should be on the outside. Preheat the oven to 190 o C. Cut the roll into slices 3 cm thick. Place them on a baking sheet lined with baking paper. Pour in honey mustard dressing. Let's bake for twenty minutes.

Grease the bread flatbread with mayonnaise and squeeze a clove of garlic into it. On the surface of the pita bread, stepping back a little from the long edge, place a package of chopped crab sticks, 200 g of smoked red fish and half of the sweet pepper. All these ingredients must be thoroughly chopped to make it easier to roll the roll. You can also tear a leaf of Chinese cabbage or lettuce with your hands. The package must be kept in the refrigerator for two hours before serving.

Creative roll options

You can modify and supplement this recipe as follows:

Cottage cheese

Instead of cheese, you can use soft cottage cheese, just salt it and mix it with chopped herbs, and add a drop of mustard for spiciness.

Lemon juice and fresh zest

We use these ingredients to enhance the taste of red fish. Finely grate the zest from ½ lemon and add to 120-160 g of cream cheese. Sprinkle the juice over the surface of the pita bread on top of the fish laid out on it.

Cucumber

Pairs perfectly with salmon and salmon. We cut it into thin slices lengthwise, after removing the skin, and lay it out before placing the fish on the pita bread.

Salad

Arugula, lettuce, iceberg - juicy lettuce leaves will add summer freshness to the appetizer. If the leaves are thin and tender, lay them out without cutting them, just like that, on top of the fish. If they are more rigid, we cut out the most “wiry” places.

Important: you need to retreat at least 3 cm along the long edge so that the roll rolls neatly.

We roll the roll from the long side opposite the one where there is an indent. Now, using a sharp knife, cut it into portions 2-2.5 cm wide.

Place the resulting rolls on a baking sheet lined with baking paper, cut sides up. Pour them with the prepared butter mixture and set to bake. Keep in the oven preheated to 190°C for 15-20 minutes and remove.

  4. We also open the can of tuna and, if it is in large pieces, mash it with a fork into a homogeneous mass.

Now let's start assembling the roll.

  • Spread chopped cucumber, 3-4 tbsp. corn, chopped bell pepper and finally distribute the tuna evenly.

We twist the finished roll quite tightly, but so that the pita bread does not tear. We wrap it in plastic and put it in the refrigerator to cool and soak.

After an hour and a half, take it out, cut it on the bias into portions, place it on a plate, garnish everything with herbs, and serve.

Lavash roll with lightly salted salmon

Ingredients:

  • Armenian lavash - 1 sheet;
  • Lightly salted salmon - 400 gr.;
  • Processed cream cheese - 250 gr.;
  • Curd cheese - 140 gr.;
  • Parsley - 1 bunch;
  • Green onion - 1 bunch;

Cooking method:

  1. One of the ways to prepare a very famous cold snack is from pita bread and any red fish, be it salmon, trout, or pink salmon.
  2. As a “highlight” of this recipe, I took the idea of preparing my favorite “Kyoto” roll, which contains, in my opinion, a wonderful combination of cream cheese and green onions.
  3. Well, if you combine the usual recipe for making a pita roll with salmon and the roll indicated above, you get what I got below.
  4. This is how I prepared my cold appetizer for the holiday table.
  5. We cut off the white bases of the onion and chop the green feathers as finely as possible.
  6. Also finely chop the parsley sprigs, mix the green onions with parsley into a single green mass
  7. Gently and evenly spread a sheet of fresh Armenian lavash (if you don’t take fresh one, it will be difficult to wrap it, as it will break) with a thin layer of processed cheese, you must definitely coat the top part of the lavash, otherwise the rolls will unroll
  8. As soon as you have finished with the processed cheese, coat the base of the flatbread with a layer (the entire 140 gram package) of curd cheese, in a strip of about 1.5-2 cm.
  9. Sprinkle a strip of chopped onion and parsley on top of the curd cheese; sprinkle the remaining greens in the middle of the pita bread coated with processed cheese.
  10. Cut the skin off a piece of lightly salted salmon and cut the salmon into very thin slices.
  11. To prepare this appetizer, I highly recommend salting the salmon yourself, since in the store, vacuum-packed fish are usually over-salted
  12. Place the salmon pieces evenly over the entire surface of the pita bread in a checkerboard pattern.
  13. As you can see in the photo of the recipe, the base of the pita bread and its upper part remain not covered with fish,
  14. Now, starting from the very bottom, tightly tucking the pita bread over the entire width, we twist our roll,
  15. Constantly making sure that it is rolled up tightly.
  16. After the roll is completely rolled up, the cheese that was spread on the top of the pita bread will glue the roll together, and it will not unroll.
  17. Cut the roll in half (this will make it easier to place it on the cutting board), and cut several rolls from the extreme parts of the rolled pita bread.
  18. This is necessary so that “empty rolls”, which are precisely obtained by cutting the outer parts of pita bread, are not served on the festive table.
  19. Now all we have to do is cut two “selected” lavash rolls into rolls
  20. Place them on a dish, garnish with fresh herbs and lemon slices if desired, and serve immediately on the New Year's or any other holiday table!
  21. Well, this is what the resulting lavash rolls with salmon look like in the photo close-up.
  22. Please note that the core of my rolls is cream cheese and herbs, everything is as intended!
  23. Bon appetit everyone and good luck in preparing the recipe described above for this delicious cold appetizer.
