While leisurely strolling through spring Bucharest, my wife and I stopped in for a cup of coffee at a very nice pizzeria. Leafing through the menu, we saw a tempting offer - Hawaiian pizza with pineapples: you take one, the second is half price. Shall we order something exotic? Come on! We ate a big pizza and since then the recipe for Hawaiian pizza has migrated to our kitchen. I make pizza according to the classic recipe with pineapples and ham, cheese and homemade ketchup. Sometimes I add chicken. I make the base from regular bread dough, fluffy so that there is something to chew, but you can stretch it thinner and get a thin crust pizza.

Ingredients:

Yeast pizza dough:

  • wheat flour - 2 cups;
  • warm water – 2/3 cup;
  • fresh yeast – 15 g;
  • olive oil – 3 tbsp. l;
  • fine salt – 1 tsp;
  • sugar – 0.5 tbsp. l.

Toppings for Hawaiian pizza with pineapple:

  • boiled ham – 200 g;
  • homemade ketchup or thick tomato sauce – 4-5 tbsp. l;
  • canned pineapple – 0.5 cans or 4 cups fresh;
  • hard cheese – 150-200 g;
  • ground black pepper, oregano - to taste.

We will knead the dough in a deep bowl. Pour in sugar and salt, crumble the yeast cube, making sure that the expiration date has not expired. Old yeast will not rise the dough, the cake will be flat and tasteless. Grind for half a minute until a brownish paste forms.

We heat the water so that it is not very hot, but noticeably warm. Pour into the yeast, stir.

Sift the flour. Pour in a little more than half, add the rest when kneading the dough. It is better to add flour to yeast pizza dough in portions, this will make it easier to knead and control the consistency.

Pour in olive oil or other vegetable oil that you usually add to the dough.

Mix the ingredients until a sticky flour mass forms. Place on the table, knead by hand, gradually adding the rest of the flour. When kneading, the dough will first be sticky and lumpy; as you knead, it will become smooth and soft, but will remain elastic and spring back when pressed. Roll into a bun and place in a deep proofing container.

Be sure to cover the dishes and place them close to the radiator or in a warm oven (heat it up and turn it off), or a pan of hot water. After an hour, the dough will rise and triple in size.

Lightly knead the fluffy dough, place it on paper and stretch it with your hands into a round cake about a centimeter thick. Or we make a large pizza on a thin crust, stretching the dough to a thickness of 3-4 mm. Lubricate with ketchup and tomato sauce (I made a mixture of ketchup and homemade adjika). Sprinkle with ground black pepper and oregano. Leave the base for 10-15 minutes to make it thicker. If you are cooking on a thin crust, add the filling right away.

Making the topping for Hawaiian pizza with pineapple. We cut the ham into strips and plates. Arrange on the base in random order. If desired, you can add boiled chicken fillet to the ham, take half as much as the ham.

Fill the empty spaces with pineapple pieces. You need to drain the juice from canned ones (hold in a colander), cut out the dense middle of fresh ones.

Place the Hawaiian pizza with pineapple and ham in the oven, preheated to 200 degrees at medium level. Bake for 20 minutes, a thin crust will take 15 minutes. We take it out, sprinkle it with grated cheese and let it sit for another 3-5 minutes until the cheese melts.

This dish is not always prepared the same way, but the most common version is Hawaiian. Its recipe is very popular in America, as well as in Canada, Sweden and Australia. Juicy sweet and sour pineapple and tender chicken meat combine perfectly and complement each other's flavors. Other ingredients are also used to prepare it, but first things first.

Where does pizza begin, or How to prepare the dough

And we will start with the base, that is, with pizza dough. To do this, you need to dilute a teaspoon of dry yeast with the same amount of sugar in warm water (half a glass). Stir for 10 minutes until foam appears on the surface. Then you can knead the dough by adding a third of a teaspoon of salt, a tablespoon of olive oil and 200 grams of sifted wheat flour. Now the dough should stand and rest for 30 minutes. And we'll do the filling.

Conjuring the filling

Different countries (and even different families) prepare their own Hawaiian pizza. Its recipe can vary significantly depending on the preferences of those who make it. We will use the following ingredients for the filling: chicken fillet (boiled and cut into thin pieces), fresh or canned pineapples (cut into small slices), mushrooms (champignons or others, to your taste), as well as Parmesan cheese and herbs.

Final stage: assembling the pizza

When the dough has risen, you can start preparing the pizza. Roll out a thin flatbread (if possible, you can stretch it with your hands) and place it on a round baking sheet greased with vegetable oil (or a special one). Grease the base with tomato paste, lay out pieces of chicken and pineapple, sprinkle with chopped herbs and salt, if necessary. Lightly press down the filling with your hands. Making this wonderful pizza at home is quite simple. Pineapples and chicken (ham) release quite a lot of liquid during baking - thereby the pizza turns out quite juicy and, at the correct temperature (200 degrees), almost never burns.


American chefs make Hawaiian pizza with yeast dough, but do not knead it for long and do not roll it too thin. In addition, they often use well-sifted premium flour (which is not entirely typical for Italian cuisine).


A little sugar is added to the yeast diluted in water, then salt and flour. Next, add a spoonful of vegetable oil to the dough and leave everything in the pan in a warm place for about an hour.


Many people have some difficulties with the sauce. Let's say right away - you shouldn't get too fancy, because ordinary grated tomatoes (or even tomato paste) are suitable for Hawaiian pizza. The only thing is that you need to add 2-3 cloves of garlic.


They can be squeezed directly into the sauce, or they can be fried in oil, which will then be used to lubricate the pizza base.


After frying, the garlic must be thrown into the trash - it has already given everything “necessary” to the oil.




A thin pizza will take only 10-20 minutes to cook in a hot oven.

Ham is precisely the ingredient that indicates that the dish has American roots, because it is not put on Italian pizza.

Apparently due to the presence of pineapples, this pizza was given the name “Hawaiian”, although it has nothing to do with the Hawaiian Islands. It’s unlikely you’ll meet her there. But this type of pizza is especially popular in the western part of America, as well as in Australia, Canada and Sweden.

First, we will need to prepare the dough for Hawaiian pizza. can be read here. When the dough is ready, roll out and stretch the circle (do not forget that real pizza is not rolled out with a rolling pin, but only by hand). Leave the base so that it rises a little and becomes fluffy.

Spread the dough base with tomato sauce. Before spreading the sauce, it is advisable to prick the dough with a fork in several places. Here's how to prepare Hawaiian pizza sauce:

Take one ripe tomato. We clean it of seeds and skin, grind it in a blender along with 1 clove of garlic and a pinch of salt. If you wish, you can add some herbs (oregano, basil or savory). Pour the resulting puree onto a heated bowl with 1 tbsp. olive oil in a frying pan and simmer until the sauce becomes thick enough.

Spread the prepared sauce on the base and arrange the pieces of pineapple and ham. You can use bacon instead of ham. Cut the ham into thin pieces. If the pineapple is in rings, then cut the ring into 4-6 pieces. Distribute evenly over the entire circumference of the pizza, leaving half a centimeter from the edge.

Sprinkle a pinch of dry oregano on top and drizzle olive oil over the pizza. Grate the mozzarella cheese and spread it evenly over the surface, so that pieces of ham and pineapple peek out from under the layer of cheese.

Place the finished pizza in an oven heated to 200 degrees. Hawaiian pizza takes about 20 minutes to bake. We monitor the readiness of the pizza by lifting the edge and looking at the bottom. As soon as it browns, the pizza is ready.

As you probably guessed from the name of the recipe, today we have Hawaiian pizza with chicken and fresh pineapple on the menu. I can only guess how pizza is prepared in the fiftieth state of the USA, and the Hawaiian Islands are still a quiet tourist dream of mine, but I tried to convey the whole atmosphere of this dish, and you know, it looks like I succeeded!

I can assure you that homemade Hawaiian pizza turns out much tastier than in a pizzeria, mostly thanks to perfectly selected ingredients, and, of course, thin dough. I prepared the pizza sauce according to a proven recipe to be sure and without surprises.

How does it taste?

Pizza with pieces of chicken fillet and fresh pineapple turned out exactly as I imagined it: sweet and sour pineapple goes perfectly with the neutral-tasting chicken fillet, and notes of garlic in tomato sauce in the company of mozzarella cheese complete the flavor palette of this dish.

Dough ingredients

(for 4 pizzas with a diameter of 22-25 cm):

  • 400 gr. flour
  • 200 ml. water warm water (36-40 degrees)
  • 4 tsp dry yeast
  • 2 tbsp. Sahara
  • 1 tsp salt
  • 2 tbsp. olive oil (or any vegetable oil)

Ingredients for the sauce:

  • 600 gr. tomatoes (or 500 grams of tomato juice)
  • 2 tbsp. olive oil
  • 2 tsp starch
  • 1 tsp Sahara
  • 1 pinch of salt
  • 0.5 tsp Mediterranean herbs

Filling ingredients

  • 350 gr. pineapple (fresh or canned)
  • 300 gr. boiled chicken fillet
  • 300 mozzarella cheese

Cooking steps

We start preparing pizza by preparing the ingredients for the filling. To make the filling juicy and not too wet, I recommend boiling the chicken fillet until tender in salted water with a bay leaf. The boiled chicken breast needs to be cooled and cut into thin slices, approximately as in my photo.

You can also use ready-made smoked chicken fillet, but if you are preparing Hawaiian pizza for children, I still recommend that you boil the chicken breast yourself.

Next, peel and cut the pineapple into thin slices. If you are using canned pineapple, try to slice it as thin as possible. For this recipe, choose canned pineapple in pieces - it will be easier to cut. Ideally, of course, it is best to use fresh pineapple - aromatic, with a tropical and unique sweet and sour taste.

Grate the mozzarella cheese using a large grater. We put all the ingredients for our pizza in the refrigerator.

Prepare thin pizza dough:

In a deep plate, mix all the dry ingredients: flour, yeast, salt and sugar.

Add warm water and olive oil.

Mix with a whisk or spoon.

Then we gather the dough into a ball with our hands and knead it thoroughly with our hands until the ball becomes even and smooth. Cover the dough with a cloth and put it in a warm place to proof for 40 minutes.

After the specified time, the dough will become softer and increase by about 1.5 times, no more. This is normal and you should not expect a strong increase in the volume of yeast dough, like apple pie, for example.

Preparing tomato sauce

For the recipe, I prepared a traditional pizza sauce, like in a pizzeria, which never lets me down. I wrote before how to prepare pizza sauce with step-by-step photos. And in short: grate the tomatoes on a fine grater, preserving the skin as much as possible. If you don’t have fresh tomatoes, don’t worry, use tomato juice without salt and sugar, then you won’t need to grate anything.

Add olive oil, salt, sugar and spices to the grated tomatoes. Mix and put on the stove. Bring the sauce to a boil, simmer for 2-3 minutes, and then add starch. Stir the starch so that it does not form a lump, add the garlic passed through a press and remove the sauce from the stove. We need to wait until the sauce cools to room temperature and acquires the consistency we need.

Roll out and add filling

We take one ball to work, and roll it out on the tabletop using a rolling pin into a circle of 22-25 cm, and cover the rest of the dough with a cloth so that it does not dry out.

Place the dough piece on a baking sheet with baking paper and brush with sauce.

Place pieces of chicken fillet on top.
