In a larger bowl, combine oatmeal, baking soda, salt and spices. Let me remind you that I add a teaspoon of ground flaxseed, I indicated the reasons in.

Make a small well in the center of the dry ingredients. Gradually pour liquid into it, stirring. There is no need to beat, just complete combination is enough. Leave the resulting mass for 10-15 minutes so that the oatmeal swells. As I wrote above, don’t be afraid to prepare it the night before.

Heat a nonstick skillet over medium-low heat. Lightly coat the surface with coconut oil, butter or cooking spray. For this recipe, I don't mind using 2 tablespoons of coconut oil for each round. It does not change its properties when heated. Excess, if any, can be wiped off with a paper towel at the end.

A little about temperature conditions. My gas stove has 6 temperature levels (numbers from 1 to 6). I fry these oatmeal pancakes with banana on number 2, heating the pan on three. Once the surface is hot enough that drops of water are bouncing off it, take a ¼ measuring cup and spread out the dough.

Pay attention to the kitchen clock - this is my assistant. I can’t help it, I’m an idealist, but sometimes this quality helps me find the best options. So in the case of the dough for banana pancakes, I tried to “catch” the moment when it was easier and best to turn them over.
