Bulgur salad with pomegranate, sweet bell pepper and cucumber. Today we will learn how to prepare a very quick, simple, nutritious and tasty salad from fresh vegetables and bulgur. 15 minutes of your time and you will have a vegan dish full of different flavors and colors on your table.

Compound:

Small bulgur 120 g (half a glass)
Water 250 ml (1 glass)
Sweet bell pepper 70 gr
Cucumber 50 gr
Pomegranate 80 gr
Unrefined vegetable oil 40 ml (2 tablespoons)
Juice of 1/4 part lemon
Ground cumin 3 g (1/2 teaspoon)
Ground coriander 3 g (1/2 teaspoon)
Salt 5 g (1 teaspoon)
Ground black pepper 3 g (1/2 teaspoon)

Step 1 Preparing the bulgur
IMPORTANT!!! For this salad you need to use small bulgur. If you have medium or large-sized bulgur, then you need to pre-boil it for 5-7 minutes

Pour the bulgur into a deep cup (perhaps the one in which you will make the salad). Add salt, ground black pepper, ground coriander, ground cumin, vegetable oil and lemon juice.


Pour boiling water over everything. Water must be added one to two. 1 volume of bulgur, 2 volumes of water. Mix well, cover with a board or plate and let sit for 10-12 minutes.


Step 2 Preparing vegetables

Rinse the cucumber and sweet bell pepper well. Remove the seeds from the pepper. Cut the cucumber and bell pepper into 0.3-0.5 cm cubes. Disassemble the pomegranate into grains.


Step 3 Finish cooking

After 10-12 minutes, the bulgur will absorb all the moisture, and with the moisture the aroma and taste of spices and lemon acid.

Add chopped vegetables and peeled pomegranate. Mix well.

  • 60 grams of red onions;
  • 30 g green salad leaves;
  • 10 grams of aromatic cilantro;
  • 50 ml or 4 tablespoons olive oil;
  • a quarter of a ripe lemon;
  • salt (to taste).

You will only get 2 servings of 200 grams each, but this is enough for a hearty snack between breakfast and lunch or lunch and dinner.

And you won’t need too much time to cook, which is a huge advantage.

Salad recipe for vegetarians


Vegetables and fruits must be thoroughly washed under running or filtered water. After this, you should cut these products into thin strips. As for cilantro, you only need to pinch off 1 standard size leaf.

Remove the seeds from the pomegranate.

The resulting ingredients must be mixed and placed on previously prepared green salad leaves. Drizzle olive oil on top.
