How to prepare dough for pies

Pour 0.5 kg of flour into a saucepan, add yeast to it, stir and pour in warm milk. Stir again, then sprinkle with flour (as if “sprinkling with snow”), cover with a towel and place in a warm place.

Dough

Grind 2 eggs with sugar. Melt the butter.

As soon as the dough has risen (the instructions usually say “double in size”), add eggs with sugar, melted butter and ½ tsp. salt.

Knead, gradually adding the second half of the flour (almost all of it will be gone). Knead thoroughly until smooth, then sprinkle with flour again, cover the dough with a towel and place in a warm place.

Secrets of successful yeast dough

  1. Be sure to sift the flour to remove impurities from it and saturate it with oxygen.
  2. Dishes and absolutely all products should be at comfortable room temperature.
  3. Dissolve yeast only in warm liquid. A cold or, on the contrary, too hot environment inhibits the development of yeast fungi.
  4. Fermentation should be carried out at a temperature of 25-30 degrees, that is, in a warm place, protected from drafts.
  5. Typically, 20-50 g of fresh yeast or 5-12 g of dry yeast are used per 1 kg of flour. The more eggs, butter and sugar the recipe calls for, the more yeast you will need.

How do you know when the dough is ready? I knead with my fist, and when the dough begins to completely move away from the fist and squeak (literally), I understand that it is ready.

How to prepare the filling

Finely chop and fry the onion in vegetable oil. Boil the rice; if it contains a lot of starchy mucus, rinse and dry in a colander. Hard boil and finely chop the eggs.

Combine all three ingredients, salt and pepper to taste.

  1. Once the dough has risen and doubled in size, dump it onto the board and cut off a piece with a knife. Roll this piece into a sausage and divide (cut) into pieces: 1 piece - 1 pie.

Sift the flour. Dissolve yeast in warm milk.

Pour half the flour into a deep bowl, pour in the yeast and milk, stir thoroughly and place in a warm place for 1 hour. When the dough has doubled in volume, beat in the yolks and season to taste with salt and sugar, mix thoroughly.
Soften the butter and add to the dough along with the remaining flour. Transfer the dough to a floured surface and knead until it comes off easily from your hands. Return to the pan, cover and place in a warm place for another 1.5–2 hours.

Rinse the rice in several waters and cook until done according to the instructions on the package.

Wash the onion and chop finely. Peel and chop the eggs. Mix rice with eggs and onions, salt and pepper to taste.

On a table sprinkled with flour, roll out the dough into a layer 0.5 cm thick and cut out circles from it.
