  • 0.5 tsp lemon juice

APPLE PIE FROM SHORT DOUGH “Dream” - STEP-BY-STEP RECIPE

First, let's prepare the dough.

Place soft butter in a bowl and lightly beat it with a mixer or thoroughly grind it with a whisk.

Add a pinch of salt, sugar and mix.

Then add the egg yolks in 2 additions, continuing to mix, no need to beat too much.

Mix dry products separately.

Since everyone’s flour is different, I took a little more than according to the recipe and will put it aside right away, it may not be needed.

Add to sifted flour baking powder, vanillin and mix dry products.

Add part of the resulting mixture to the bowl and knead the dough.

While the mass is soft, you can mix with a mixer, then add the remaining flour and quickly knead the shortbread dough with your hands.

Once the dough has come together, transfer it to a floured work surface and knead for about another minute.

The shortbread dough is ready, it is very tender, we try to carefully roll it out into a layer according to the size of your mold, taking into account the height of the sides.

Carefully roll the dough onto a rolling pin and transfer it to a mold, I have an oval one, 22x32 cm in size, if you have a round mold, take one with a diameter of 26 cm, which does not need to be greased with anything; in extreme cases, cover it with parchment.

The dough is very soft and crumbly, don't let that scare you.

Our task is to line the bottom and sides of the mold with dough, and this can be done without rolling it out, simply distributing it in an even layer over the entire inner surface, setting aside about 1/4 of the dough in advance, it will be useful to us a little later.

I still had this lump of dough left after I lined the edges of the pan.

We collect the remaining dough into a ball, put it in a bag and put it in the freezer, and the form itself with the dough in the refrigerator.

Let's prepare the filling.

Pour the egg whites into a bowl, keep them at room temperature, add vanillin and beat until fluffy.

Continuing to beat, add sugar in several additions, I added 150 grams, but if the apples are very sweet - 100 grams. will be enough.

Beat the whites with sugar until dense, stable peaks form.

Now let's prepare the apples.

We peel them and grate them on a coarse grater, discarding the core.

Sprinkle the grated apples with lemon juice to prevent them from darkening and mix well.

The filling ingredients are ready.

We take out the form with the dough from the refrigerator, put the grated apples in it, distribute it evenly throughout the entire form and compact it slightly.

Spread the egg whites whipped with sugar in an even layer on top of the apples.

We take the frozen lump of dough out of the freezer and grate it on a coarse grater.

Spread the resulting crumbs evenly over the top of the pie.

Place the prepared pan in a preheated oven at 160-170°C (320-338°F) and bake for 40-50 minutes.

You can prepare this pie not only with apple filling; any not very juicy fresh fruits and berries will do, and if you plan to use frozen ones, I recommend defrosting them first, otherwise the filling will leak.

To make it easier to remove the finished cake, it is better to use a springform pan.

My cake was baked for 50 minutes at 160°C (320°F), it is completely cooked, we take it out of the oven.

The pie turns out amazingly aromatic, tender and tasty.

How to make this pie

First, knead the shortbread dough for the apple pie. To do this, you need to beat an egg into a cup, add 100 grams of sugar, and melted butter there. Mix everything well. Ingredients:

  • Apples – 350 g.
  • Wheat flour – 320 g.
  • Chicken eggs – 2 pcs.
  • Sugar – 200-220 g.
  • Butter (margarine can be used) – 200 g.

Let's start cooking

First you need to separate the whites from the yolks. For now, the whites can be put away, for example, in the refrigerator, but the yolks should be ground with 100 grams of sugar.

Cut the butter into small cubes, mix with flour and baking powder. Then add the beaten yolks here, mix everything until you get a dense, fatty yellow dough.

It needs to be put in a bag and put in the refrigerator for 30-35 minutes. Even better in the freezer.

While you can grate the apples. To prevent them from darkening, you can sprinkle them with half a lemon. Well, or rub them later.

The dough is frozen - take it out, cut off 2/3 of the volume, and put the rest back in the refrigerator.

Line a baking pan with parchment or grease it with butter. Knead a piece of dough and place it in this form.

Beat the egg whites until foamy with the remaining sugar, then mix them with the grated apple mixture. This filling needs to be placed on the dough.

Ingredients:

  • Flour – 310 g.
  • Butter – 210 g.
  • Sugar – 5 tbsp. spoon;
  • Egg – 1 pc.
  • Baking powder – 1 teaspoon;
  • Cottage cheese – 260 g.
  • Apples – 2-3 pcs.
  • Starch – 1 tbsp. spoon;
  • Sugar – 4-6 tbsp. spoon;

Cooking the pie

Let's start with the test. Mix flour with baking powder. In a bowl, beat the egg, sugar and butter. Add flour and knead the dough. Divide it into two parts and put it in the freezer for 15-20 minutes.

Mash the cottage cheese to a soft consistency, add sugar, zest, and vanillin. If desired, you can also add a spoon or two of sour cream to the cottage cheese, which will make the filling more juicy. It’s better not to do anything with the apples for now so that they don’t darken while we wait for the dough.

We took out one piece of dough, kneaded it, rolled it out and put it in a baking tray, which must first be greased with any oil. The dough sides still need to be made, as there is a lot of filling.

Wash the apples, peel and grate them. Mix with cottage cheese, and add a spoonful of starch. That’s it – the cottage cheese and apple filling is ready! Place it on the base of the pie.

Combine flour with bulk products. In the bowl of a blender, mix the flour mixture with butter. Continue the process for several minutes, then add the yolk and mix again. The mixture looks like coarse wet crumbs. Cool it for half an hour in the refrigerator, covering the container with film so that the dough does not dry out.

Cover the pan with parchment, place half of the dough on it, and press lightly. Lay out the apples and cover with dough. Bake at 180 degrees. 45-50 minutes. Let cool for 15 minutes in the mold, then remove and sprinkle with powder.

Just a note. Butter can be replaced with margarine if necessary.

How to prepare a fluffy charlotte?

A fluffy charlotte is made from a batter that works well, creating a porous, delicate texture for the pie.

  • 4 eggs;
  • 3 sour apples;
  • ½ lemon;

  • 4 tbsp. l. apricot jam;
  • a portion of ready-made shortcrust pastry.

Squeeze the juice from the lemon. We peel the washed apples from the core, cut them into thin slices, sprinkle with cinnamon and sugar (to taste), pour in juice and mix by hand. The juice will prevent the apple pieces from darkening.

We distribute the dough along the bottom of the prepared form with a height of 4-7 cm, forming small sides by hand. Arrange apple slices evenly. Bake for 25-30 minutes at 180 degrees. Grease the finished pie with jam.

The cake turns out very tender and thin. This type of pie is sometimes also called Viennese pie.

Kefir pies turn out to be very fluffy and porous, since the dough made from fermented milk product rises very quickly.

  • 2 eggs;
  • stack Sahara;

Beat the sugar and apple mixture with salt. The mass will become much lighter.

Add kefir and spices and mix with the mixer for several minutes. Sift the flour and baking soda into the liquid mixture and mix thoroughly with a whisk/spatula. Add oil and mix.

Wash the apples, peel and cut into thin slices.

Lightly grease the pan with oil and sprinkle evenly with semolina - it will help you easily remove the finished pie. Lay out the apples and fill with dough. Bake the cake at 180 degrees. within 40 minutes.

Before serving, you can sprinkle with powdered sugar if desired.

How to cook from shortbread crumbs?

Shortbread dough can be prepared using flour or butter cookies. In this recipe we suggest trying a pie whose base is made with cookie crumbs.

Filling:

  • oil drain - 2 tbsp. l.;
  • apples - 3-4;
  • sugar - ¾ cup;
  • water - ¼ cup;
  • starch - 1 tbsp. l.;
  • mixture of 5 spices - 1 tsp;
  • lemon. juice - 2 tsp;
  • sea ​​salt — ⅛ s. l.

Topping:

  • sugar cane - ⅓ cup;
  • butter cookies - 4 units;
  • almonds/hazelnuts - ⅓ cup;
  • oil drain cold. - 3 table. l.;
  • salt - ⅛ tsp;
  • orange juice - table. l.

Dough:

  • flour - 1 cup;
  • chopped walnuts - 1 table. l.;
  • sugar - 1 table. l.;
  • oil drain and growth - 1 tbsp. l.;
  • sea ​​salt - a pinch;
  • water - 3-4 table. l.

Pour all the dry ingredients for the dough into the blender container and blend for a few minutes until the mixture becomes homogeneous. Then lay out the butter cut into pieces and pour in the vegetable oil. Use the blender for a few more minutes - as a result, the whole mass should become like crumbs. Then put it in a separate bowl and, gradually adding water, knead the ball of dough. Wrap it in film and put it in the refrigerator to cool a little.

Meanwhile, prepare the filling. Heat butter in a saucepan. Wash the apples, peel and cut into medium cubes. Add them and a quarter cup of sugar to the butter, simmer for about seven minutes over low heat, stirring.

Mix water with starch until the mixture becomes homogeneous. When the apples soften a little, pour starch into them, stir and cook for a minute. Next add all the filling ingredients. Boil for another five minutes - the mixture will thicken a little.

Prepare the topping: chop the almonds and hazelnuts very finely using a knife, crush the cookies with a rolling pin, mix with all the other ingredients and mix well.

Remove the chilled dough from the refrigerator, roll it into a round layer and place it in the mold. Preheat the oven to 180 degrees. Place a small sheet of parchment on a layer of dough, sprinkle a little cereal and bake for a few minutes - the dough will brown slightly. The cereal is needed so that the bottom of the base does not rise too high. Remove the paper and cereal, place the filling on the base, cover with topping and bake for a third of an hour.

With sour cream

A juicy, slightly moist pie is made using dough with sour cream.

  • 5 large apples;
  • cinnamon (optional);
  • 1 stack flour;
  • 1 stack Sahara;
  • 1 stack sour cream;
  • large egg;
  • ¼ tsp. soda;
  • tsp baking powder.

Rinse the apples under running water, remove the grains with membranes and, if desired, cut off the peel. Cut the fruits into thin slices, sprinkle with cinnamon if desired and spread evenly into the pie dish.

Beat the egg a little, then add sugar and beat again until the sugar is completely dissolved and the mass increases in volume. Next, add sour cream and go through the mixer again. Add the dry ingredients and run the mixer for a few minutes.

Pour the dough over the apples. Bake for half an hour at 180 degrees.

Just a note. Housewives arrange apples in different ways: some prefer the fruit to be at the bottom of the pie, others prefer it in the middle, and others like it on top. It is worth noting that when laying apples on top, it is recommended to cut them into thin slices - the pie will look neat, the fruit will act as a decoration.

In a slow cooker

  • 2 medium apple;
  • 4 eggs;
  • stack Sahara;
  • oil;
  • 1.5 stack. flour.

Separate the whites and beat with sugar into a fluffy foam. When the consistency becomes fluffy, more or less thick, add one yolk at a time, without stopping the process of working with the mixer. The result should be a moderately dense mass, reminiscent of thick sour cream.

Sift the flour into the sugar-egg mixture and mix with a spatula. The mass will become even thicker, but the dough will be liquid.

Wash the apples, cut out the core with seeds and cut into slices or cubes - according to personal preference.

Lightly grease the multicooker container with oil, pour the dough into it, and sprinkle apple slices on top. Select the “Baking” mode, close the lid, and set the time to 45 minutes.
